The first time I made this I ate the whole pan. The second time I made this I ate the whole pan. The third time I made this I told my friends to keep me away from the darn pan and they ate the whole thing. Now we are all really fat and I need 3 new baking pans... =)

1 cup flour
1 teaspoon baking soda
1/2 teaspoon salt
3/4 teaspoon cinnamon
1 cup butter, softened (plus a little more to grease the pan)
3/4 cup white sugar
2 eggs
1 teaspoon vanilla (or a bit more)
3 cups regular oatmeal, uncooked
1 (12 ounce) package butterscotch chips

Steps:

  • Preheat oven to 350°F.
  • Grease a 9x13 pan with butter.
  • Combine flour, soda, salt and cinnamon.
  • In a large mixing bowl cream butter, then add sugar and mix until fluffy.
  • Add eggs and vanilla and beat well.
  • Gradually add flour mixture.
  • Stir in oatmeal and the butterscotch chips.
  • Spread in prepared pan and bake for 22 to 28 minutes.
  • If they seem to be getting to brown on the edges, and are still quite gooey in the center lower the oven temp to 325°F for the last 10 minutes or so.

1 cup butter, softened
½ cup granulated sugar
1 cup brown sugar
2 eggs
1 teaspoon vanilla
1 (3.4) ounce package instant vanilla pudding mix
1 1/2 cups all purpose flour
1 teaspoon salt
1 teaspoon baking soda
½ teaspoon baking powder
1 cup oatmeal
3/4 cup coconut
1 pkg. butterscotch chips

Steps:

  • Using a mixer, cream the butter and sugars. Add eggs one at a time until well incorporated. Add vanilla and pudding mix. Beat until light and fluffy.
  • Slowly add the flour, baking soda, salt, and baking powder. Stir in oatmeal and mix until well combined. Stir in butterscotch chips and coconut.
  • Place a generous piece of tin foil with enough to hang over the sides of a 9X13 inch pan. (So you can pull it out of the pan after it has been baked.) Spray the tin foil and pour the batter into the pan. Pat down so it is even along all sides.
  • Bake at 350 degrees for 20-25 minutes. You don't want to over bake this. Bake just until center is set, but still gooey. Cool in pan and then take it out of the pan with the tin foil. Cut into bars.

½ cup brown rice flour
¼ cup potato starch (not flour)
¼ cup tapioca starch
1 teaspoon ground flaxseed meal
1 teaspoon xanthan gum
1 teaspoon baking powder
1 teaspoon salt
⅔ cup butter, room temperature
1 cup white sugar
1 cup dark brown sugar
2 eggs
2 teaspoons vanilla
2 tablespoons milk
1½ cup oats
¾ cup butterscotch morsels
½ cup semi-sweet mini chocolate chips

Steps:

  • Preheat oven to 350 degrees. Grease a 9X13 pan and set aside.
  • In a medium mixing bowl whisk together oat flour, brown rice flour, potato starch, tapioca starch, flaxseed, xanthan gum, baking powder and salt.
  • In a larger mixing bowl cream butter and both sugars together until light and fluffy, 3-5 minutes. And eggs one at a time beating one minute after each addition. Add vanilla and milk and mix until combined.
  • Add dry ingredients to wet mixture and mix until combined. Beat an additional 2 minutes.
  • Add oats, butterscotch chips and chocolate chips to mixture and stir until evenly distributed.
  • Pat mixture into baking pan, spreading to all ends. Bake at 350 degrees for 28-30 minutes or until golden brown and toothpick inserted into center comes out with a few moist crumbs.

1 cup packed brown sugar
1 teaspoon vanilla
2 tablespoons milk
1 large egg

Steps:

  • Heat oven to 350³F.
  • Grease bottom and sides of square pan, 8x8x2 inches, with shortening.
  • Melt butter in 1 1/2 quart saucepan over low heat; remove from heat.
  • Stir in brown sugar, vanilla, milk and egg.
  • Stir in remaining ingredients.
  • Spread in pan.

2 cups packed light brown sugar
3 eggs
2 teaspoons vanilla extract

2 tablespoons water
½ cup butter, softened
3 cups sifted confectioners' sugar

Steps:

  • Preheat oven to 350 degrees F (180 degrees C). Grease an 11x7x2-inch pan.
  • Melt 1 cup butter in a large saucepan. Add 2 cups light brown sugar and beat well to mix. Cool the mixture slightly, then beat in eggs and vanilla.
