BLUEBERRY OAT WAFFLES

- In a bowl, combine flour, oats, brown sugar, baking powder and salt. In another bowl, combine egg, milk, oil and lemon juice; stir into dry ingredients just until combined. Fold in ground pecans and blueberries. Let stand for 5 minutes. , Bake mixture in a preheated waffle iron according to manufacturer's directions until golden brown. If desired, top with additional blueberries and chopped pecans, and serve with maple syrup and butter.

Steps:
- Place the dry ingredients (flour, oats cinnamon and baking powder) into a large mixing bowl
- Mix the dry ingredients so they are evenly distributed
- Place the bananas, milk, and eggs in a blender or smoothie maker (I use a nutribullet)
- Blend
- Add the smoothie mix to the dry ingredients, mix with a wooden spoon
- Stir the blueberries into the waffle batter
- Prepare your waffle iron as per it's instructions. I find a medium heat best for this recipe
- I use spray oil on the waffle before adding the waffle batter
- Cook as per your waffle iron instructions

OATMEAL WITH BLUEBERRY SAUCE AND CRUMBLE TOPPING
Time saving tip! Switch it up and make overnight oats. Divide the toasted oats between 4 Mason jars. Heat the water-and-coconut-milk mixture until warm, then pour it evenly over the oats. Cover and refrigerate overnight. The next morning, open the jar and top with the blueberry sauce and sweet crumble!

- For the sweet crumble: Preheat the oven to 350 degrees F. Line a half sheet pan with parchment paper.
- Combine the all-purpose flour, almond flour, cashews, pecans, almonds, coconut flakes, brown sugar, cinnamon, ginger and salt in a large bowl. Using your fingers, add in the coconut oil and butter. Mix until a coarse crumb forms and the mixture holds together. Put the mixture on the prepared half sheet pan and bake until golden and crisp, 20 minutes. Remove from the oven and let cool.
- For the oatmeal: Bring 3 cups water, the coconut milk, brown sugar, cinnamon, nutmeg and salt to a boil in a medium saucepan over high heat.
- Meanwhile, heat the coconut oil in a second medium saucepan over medium-high heat. Once glistening, add the oats and cook until toasted, about 2 minutes. Slowly pour in the water-and-coconut-milk mixture and bring the mixture to a boil, then lower to a simmer over medium heat and cook until cooked through, about 20 minutes. Stir in the chia seeds 1 minute before serving.
- For the blueberry sauce: Put the blueberries, orange zest strip, orange juice, brown sugar, 2 tablespoons water, cinnamon and salt in a third medium saucepan over medium heat. Cover and cook until the blueberries breakdown, about 10 minutes.
- To serve: Place a ladleful of oatmeal into a bowl, top with warm blueberry sauce and sweet crumble.
BLUEBERRY OATMEAL
Oatmeal is a great way to start the day and this is a recipe I have developed over the years. It's delicious, light, and great with milk to help cool it down. You can replace the milk with soy milk, if desired. You can add the blueberries earlier in the cooking process if you like them hotter and plumper.

A whole grain waffle that is actually light and fluffy felt as likely as unicorns being real... until this recipe! These are a favorite in our house because they feel like a treat (which makes the boys happy) but are packed with whole grains and some fruit (which makes me happy). - Preheat and grease your waffle iron. Preheat oven to 200.
- Grind the oats in your food processor or blender until they are the consistency of whole-wheat flour.
- In a medium bowl, whisk together the oat flour, other flour, sugar, baking powder, salt, and baking soda.
- In another bowl, melt the butter and then whisk in the eggs. When well combined, whisk in the yogurt.
- Add the wet ingredients to the dry and stir until just combined. Gently mix in the blueberries.
- Ladle the recommended amount of waffle batter into the hot waffle iron, close the lid, and cook until the waffle is golden. Put cooked waffle in the oven to keep warm and repeat the process until all waffles are baked. Serve with extra blueberries and maple syrup.

I am fortunate to have four blueberry bushes in my back yard, and they supply me with fresh blueberries all summer long. This is one of the recipes that I use to help use up the massive amount of berries that I pick each summer.

- In a medium bowl, whisk together egg yolks and milk. Stir in flour, baking powder and salt. Stir in butter, and set mixture aside for about 30 minutes.
- Preheat a lightly greased waffle iron.
- Fold egg whites and 2/3 cup blueberries into the mixture. Scoop portions of the mixture into the prepared waffle iron, and cook until golden brown.
- To prepare the sauce, in a medium saucepan over medium heat, mix 1 1/2 cups blueberries, honey and 1/4 cup orange juice. Bring to a boil. Mix remaining orange juice and cornstarch in a small bowl, and stir into the blueberry mixture. Stir constantly until thickened. Serve warm over waffles.
