Incredible Oat Bran Muffins, Plain, Blueberry or Banana image

I looked and I can't believe no one has posted this recipe here yet!! This is different from all the other recipes here, is not very dense and is not too sweet, allowing the wonderful bran flavor through. This came off the back of a quaker oat bran hot cereal box. Only 120 calories per muffin!

2 cups oat bran hot cereal, uncooked (I use Quaker)
1/4 cup firmly packed brown sugar
2 teaspoons baking powder
1/2 teaspoon salt
1 cup milk
1 egg
1/4 cup honey (I haven't tried molasses yet) or 1/4 cup molasses (I haven't tried molasses yet)
2 tablespoons vegetable oil

Steps:

  • *Blueberry or banana variations are at bottom.
  • Pre-heat oven to 425 degrees F. Line 12 medium muffin cups with paper baking cups.
  • Combine dry ingredients. Add milk, egg, honey, and oil; mix just until ingredients are moistened.
  • Fill muffin cups 3/4 full. Bake 14-17 minutes or until golden brown.
  • *NOTE: You can stir in 1/2 cup frozen blueberries or 1 medium ripe mashed banana for a fruity variation.
  • These are also great the next day cold if you seal them in a baggy or stick em in a container to keep em fresh.

1 ½ cups all-purpose flour
½ cup packed brown sugar
2 teaspoons baking soda

1 teaspoon ground cinnamon

1 ⅛ cups applesauce
½ cup egg substitute
2 tablespoons canola oil
1 teaspoon vanilla extract
1 ½ cups blueberries
¼ cup chopped pecans
½ cup low fat granola

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Line a 12 cup muffin pan with paper muffin liners, and spray liners with cooking spray.
  • In a large bowl, mix the oat bran, flour, brown sugar, baking soda, baking powder, cinnamon, and salt. In a separate bowl, blend the applesauce, egg substitute, canola oil, and vanilla extract. Thoroughly mix the applesauce mixture into the flour mixture. Fold in the blueberries and pecans. Spoon the batter into the prepared muffin cups. Sprinkle batter with granola, and press granola lightly to make it stick.
  • Bake 18 minutes in the preheated oven, or until a toothpick inserted into a muffin comes out clean. Cool on a wire rack.

2 tablespoons brown sugar or coconut sugar
2 teaspoon baking powder
½ teaspoon salt
1 cup unsweetened dairy-free milk beverage (your choice of type)
2 egg whites, slightly beaten
¼ cup honey or molasses
2 tablespoons non-GMO canola oil (or your baking oil of choice)
½ cup fresh or frozen blueberries

Steps:

  • Preheat your oven to 425ºF.
  • Grease 12 muffin cups or line them with paper baking cups.
  • In a mixing bowl, stir together the oat bran, sugar, baking powder, and salt.
  • Add the milk beverage, egg whites, honey or molasses, oil, and blueberries. Mix with a spoon just until the dry ingredients are moistened. Do not over-mix.
  • Fill the prepared muffin cups about three-quarters full.
  • Bake for 15 to 17 minutes, or until golden brown.

1 cup All Purpose Flour
1 cup Oat Bran
2 teaspoons Baking Soda
1 and 1/4 teaspoon Baking Powder
1/2 teaspoon Salt
1 teaspoon Ground Cardamom
1 cup Brown Sugar, packed (light brown)
1 cup Grated Carrots
1 cup Grated Apple
1 cup Grated Zucchini
1/2 cup Raisins
1 cup Chopped Pecans
1/4 cup Oil (I used Canola)
1/2 cup Unsweetened Applesauce
1/4 cup Water
1 teaspoon Vanilla Extract

Steps:

  • Preheat oven to 375F/190C for 15 minutes. Line required muffin tins with paper liners or grease it with a non stick cooking spray.
  • In a large bowl, stir together the dry ingredients and make a well in the center.
  • Similarly combine together the wet ingredients in a separate bowl. Just stir it well with a whisk.
  • Pour the wet mixture of the dry ingredients and stir until just combined. Do not over-mix.
  • Spoon the batter into prepared muffin tins.
  • Bake in the preheated oven for 10 minutes for the mini muffins and around 16 minutes for the regular size muffins. The time mentioned in the original recipe was about 20 minutes, but when I did the toothpick test around 15 minutes I saw that the muffins were almost done, so just left it for one more minute.
  • Leave the pan on the wire rack for just 5 minutes and transfer the muffins directly to the cooling rack. If the muffins are left in the pan for more than 5 minutes the muffins will start to condense.

2 tbsp unsulphured molasses

  • Preheat oven to 425 °F.

1/2 cup mixed dried fruit (if you can't find pre-mixed dried fruit, make your own combination or use raisins)

1/2 teaspoon baking soda
1/4 teaspoon salt
2 egg whites
1 cup unsweetened applesauce

Steps:

  • Preheat oven to 190°C (375°F/Gas 5). Line 2 x 12-hole patty pan trays with paper cases.
  • Sift together the flour, baking powder and cinnamon into a large mixing bowl. Stir in the oat bran. Make a well in the centre and set aside.
  • Use a fork to mash the banana in a medium sized bowl. Core and coarsely grate the apple and add to the banana. Add the berries, honey, eggs, buttermilk and oil and stir well to combine. Add the fruit to the flour mixture and fold together with a large metal spoon until just combined.

1 cup uncooked old fashioned oats
3/4 cup uncooked oat bran
1/2 cup all-purpose flour
3 tablespoons packed brown sugar
5 teaspoons baking powder
1 teaspoon ground cinnamon
1 cup skim milk
1/4 cup fresh orange juice
2 large egg whites
2 tablespoons vegetable oil
1 medium banana, mashed
2 teaspoons orange zest

Steps:

  • Spray a 12-cup muffin pan with non-stick cooking spray.
  • Preheat oven to 400°F.
  • Combine the fruit, oats, oat bran, flour, banana, brown sugar, baking powder and cinnamon in a food processor.
  • Pulse until mixture is just blended, then transfer to a bowl.
  • Combine milk, orange juice, egg whites, oil and orange zest in another bowl.
  • Add the milk mixture to the dried fruit mixture; stir just until blended.

2 Tablespoons melted coconut oil
1/4 cup pure maple syrup or honey

Steps:

  • Preheat oven to 375°F.
  • Line muffin tin with paper or silicone liners or coat well with cooking spray.
  • Make flaxseed egg by whisking flaxseed with 3 Tablespoons in a small bowl. Set aside.
  • Combine flour, oat bran, cinnamon, baking soda and salt in a large bowl.
  • Mash bananas in a bowl and add flaxseed egg, coconut oil, maple syrup, vanilla, carrots and raisins.

No-Flour No-Sugar Oat Walnut Fruit Muffins image

This recipe is adapted from a friend's--it makes hearty, moist muffins that are good for South Beach Phase 2 because they have no refined carbs or sugar--just oats, oat bran, flax seed, and walnuts. I make them for my partner who has high cholesterol. The flax seed substitutes for oil/butter and also makes them really fluffy; for SB you can substitute fresh/frozen blueberries or cranberries for the craisins. Note: These are NOT SWEET--they are more like a walnut-fruit bread than a sweet muffin, we prefer this. You can make them sweeter by using vanilla soy milk, but that adds sugar to this no-sugar delight. The fruit is also optional--I've made them with just walnuts and they are still delicious. Enjoy!

1 banana, mashed (can substitute 1/2 c. unsweetened applesauce)
3 eggs, lightly beaten (or egg whites equal to 3 eggs)
1 cup soya milk
1/4 teaspoon vanilla extract
1 cup old-fashioned oatmeal
1 cup oat bran
2 tablespoons ground flax seeds
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon cinnamon
3/4 cup chopped walnuts
3/4 cup dried cranberries (or blueberries, or use fresh or frozen)

Steps:

  • Preheat oven to 350 degrees.
  • Grease a 12 cup muffin tin.
  • Mix the wet ingredients together in a small bowl.
  • Mix all the dry ingredients (except the fruit) together in a larger bowl.
  • Add the wet ingredients to the dry ingredients, mix well.
  • Add the dried or fresh/frozen berries, if desired.
  • Spoon into the muffin tin--fill each cup about 3/4 of the way up.
  • Bake 18-20 minutes.
  • Let cool 2 minutes in the pan, then cool completely on rack.
  • Muffins can be frozen and thawed if you aren't going to eat them right away.

1 cup(s) Uncooked old fashioned oats
0.75 cup(s) Uncooked oat bran
0.5 cup(s) All-purpose flour
1 tbsp(s) All-purpose flour
3 tbsp(s) Packed light brown sugar
5 tsp(s) Baking powder
1 tsp(s) Ground cinnamon
1 cup(s) Fat free skim milk
0.25 cup(s) Unsweetened orange juice fresh
2 egg white(s), large Egg white(s)
2 tbsp(s) Vegetable oil
0.75 large Banana(s) or 1 medium, mashed
2 tsp(s) Orange zest

Steps:

  • Preheat the oven to 400°F. Spray a 12-cup muffin pan with nonstick spray or line with foil or paper liners.
  • Combine the dried fruit, rolled oats, oat bran, flour, banana, brown sugar, baking powder, and cinnamon in a food processor. Pulse until the mixture is just blended, then transfer to a bowl.
  • Combine the milk, orange juice, egg whites, oil, and orange zest in another bowl. Add the milk mixture to the dried fruit mixture; stir just until blended.
  • Spoon the batter into cups, filling each about two-thirds full. Bake until surface of the muffins are golden brown and spring back when lightly pressed, or until a toothpick inserted in a muffin comes out clean, about 15 minutes. Remove from the pan and cool on a rack 10 minutes before serving. Store in an airtight container at room temperature for up to 3 days.

1 cup whole wheat pastry flour
1 cup oat bran
2 tsp. baking powder
1 large egg
½ cup honey ((for sweet muffins - OR ¼ cup for not-so-sweet muffins))
¾ cup unsweetened almond milk
¼ cup unsweetened apple sauce ((use ½ cup if you used ¼ cup honey))
1 cup dried cranberries ((fruit juice sweetened - I get mine at Whole Foods. Amazon has them too))

Steps:

  • In a medium mixing bowl, whisk together the flour, oat bran, baking powder and cranberries.
  • In a large mixing bowl, whisk together the egg, honey, almond milk and apple sauce.
  • Whisk the flour mixture in to the wet mixture and blend well.
  • Spoon batter in to standard sized cupcake papers until the batter is approximately 1/4 inch from the top of the papers.
  • Bake at 350F. for approximately 20-30 minutes or until they just start to turn golden brown.
  • Cool and serve.
