A super simple salad made with a tasty blend of peppery arugula, sharp parmesan, flavor concentrated dried cranberries, nutty almonds and a bright dressing.

- Make the dressing: In a small mixing bowl whisk together olive oil, lemon juice, honey and season with salt and pepper to taste. Chill for 15 minutes if time allows.
- To assemble salad: Toss the arugula with about 2/3 of the dressing then on a serving platter or individual salad plates layer half the arugula, half the almonds, half the cranberries and half the parmesan.
- Repeat layering then drizzle with remaining 1/3 of the dressing. Serve right away.

PUMPKIN SEED OIL DRESSING
The use of pumpkin seed oil gives this salad dressing a unique nutty flavour. A mild honey (e.g. glover honey) in addition with the aceto balsamico will give the dressing a fruity sweetness. Dijon mustard will top it off with slight pepperiness. This dressing works fine with any kind of lettuce.

- Whisk together with a fork or small whisker until emulgated.
- Dressing is enough for about 16-20 cups lettuce. Use some toasted pumpkin seeds for topping.
- NOTE: Instead of pumpkin seed oil you can try other specialty oils like toasted sesame seed oil or walnut oil. But you should start then with less than 1 teaspoon to evaluate the flavour.

- Honey & mustard. Sweet with a little bit of heat, this is another popular combination. Just five storecupboard ingredients stand between you and salad perfection.

- Preheat the oven to 200°C/400°F. Peel the garlic and pluck thyme leaves. In a large bowl, add the chicken legs, whole garlic cloves, thyme leaves, half the honey, some olive oil, salt, and pepper and stir to combine. Let the chicken legs marinate for approx. 10 min.
- Peel the red onion and cut them into eighths. Heat a pan over medium heat. Add some olive oil and red onions to the pan and sauté until soft, approx. 3 min. Add sugar and a pinch of salt. Continue sautéing until onions caramelize, approx. 10 min.
- Transfer chicken legs and marinade into a baking dish. Bake in the oven for 20 min. Tear bread into small pieces and place on a parchment-lined baking sheet. Add the sliced almonds, some olive oil, and salt. After the chicken legs have been in the oven for 20 min., add the baking sheet with the bread to the oven. Bake both for a further 5 min.
- Juice the lemon. Prepare the dressing by blending the roasted garlic, lemon juice, remaining honey, remaining olive oil, salt, and pepper in a food processor. If desired, add the roasting juice to the dressing. Let the chicken legs cool slightly, remove the chicken meat from the bones, and shred into bite-sized pieces. In a large bowl, combine the dressing with the chicken pieces, croutons, caramelized onions, and arugula. Serve immediately. Enjoy!
