Steps:
- Do NOT stress over this. There are many variations. As long as you stick to the basic directions, it will turn out.
- Depending on how fine you want the final product, and the kind of tomatoes you are using (Beefsteak, Roma, etc), you can slice them, cut them into cubes, or chop the tomatoes.
- Peel and slice the onions. Don't worry about fancy - a food processor does a perfectly fine job.
- In a large pot or bowl (I used a 42 cup bowl with a lid), sprinkle the tomatoes and onions well with salt, and let sit overnight covered. They do not have to be refrigerated.
- In the morning, rinse the tomatoes and onions to remove the salt and drain the liquid off. Discard the brining liquid. The vegetables will have reduced considerably in volume.
- Tie the spices in a cloth (cotton or cheesecloth) bag. This amount of spice will make a pickle with plenty of bite, and you can use much less and still have a good chow. One variation is to use 2 Tablespoons each celery seed and mustard seed, and put them directly in the pickle without a cloth bag.
- Not everyone likes a strong vinegar taste. Replacing up to 1/3 of the vinegar with water will still work. Do not go less than that.
- In a large pot, combine vegetables, vinegar (and water, if using), sugar, and spices.
- Cook on medium heat for ABOUT 2 hours, stirring often.
- The mixture will cook down and thicken.
- Follow SAFE, up to date canning methods (defer to official recommendations over this recipe). Fill 6 pint jars with hot pickle, add canning lids and rings, and process in a boiling water bath for 15 minutes.
- If any is left after filling the jars, place it in a container in the refrigerator and use within a week or so.
- Let cool completely and test the lids. Any that do not seal should be refrigerated.

Steps:
- In a large pot, sprinkle the tomatoes and onions well with pickling salt, and let sit overnight covered. In the morning, rinse the tomatoes and onions to remove the salt and drain the liquid off. Add them to a large pot, add the vinegar, the sugar, and the pickling spices in a cheesecloth bag. Put the large pot on the stove and turn to medium. Cook the tomato mixture until it is soft and somewhat thickened, about two hours. Stir often, don't let it burn to the bottom of the pan. Seal in hot sterile mason jars. Makes about 6 pints.
MOM'S NOVA SCOTIA SEAFOOD CHOWDER
Being from the Easy Coast, I've tried a lot of different chowders; however, my Mom's takes the cake. She makes a huge pot of this chowder every Christmas Eve and all of it is gone by Christmas night. Although it is not very healthy, it is an awesome treat once in awhile for any of us that love seafood! I normally throw in a dash of garlic and onion powder. Enjoy!

- Fill a large pot halfway with lightly salted water; bring to a boil. Add onions and carrots; cook until slightly tender, 10 minutes. Add potatoes; cook until tender, 15 to 20 minutes.
- Stir in salmon, cod, scallops, shrimp, lobster, and crab; cook over medium heat until salmon and cod are firm but chunks are still slightly translucent in the center, about 10 minutes. Drain half the water from the pot and add clams, heavy cream, and half-and-half. Place butter chunks atop the soup; season with salt and black pepper. Cover and simmer, stirring occasionally, until salmon and cod are fully cooked and flake easily with a fork, about 30 minutes.

CHOW CHOW PENNSYLVANIA DUTCH
The Pennsylvania Dutch are famous for their pickles, relishes and condiments, often served as part of the traditional 'sweets and sours' with a large meal. Chow-Chow, in my recollection, has always been one of the favorites. It is made up of a variety of vegetables that are in season near the end of the summer. I remember a church in Dryville, PA, used to make batches of chow-chow to sell for a fund-raiser. This is my grandmother's recipe. It is, without a doubt, the best chow-chow I have ever eaten. I have only tasted one store-bought variety that came close, and it was purchased at a farmers' market in Asheville, NC. The difference is primarily in the combination and size of the vegetables. In this recipe, the vegetables are cut into small pieces whereas, in most other varieties, they are processed or shredded. It takes some effort, but will reap the rewards for months. ................................................................................................................. From Wikipedia, the free encyclopedia, this article is about the relish. Chow-chow (chowchow, chow chow) is a Nova Scotian and American pickled relish made from a combination of vegetables. Mainly green tomato, cabbage, chayote, red tomatoes, onions, carrots, beans, asparagus, cauliflower and peas are used. These ingredients are pickled in a canning jar and served cold. Chow-chow is regionally associated with the Southern United States, Pennsylvania, New Mexico, the Appalachian Mountains, and soul food. The recipes vary greatly; some varieties are sweeter than others. Chow-chow found its way to the Southern United States during the expulsion of the Acadian people from Nova Scotia and their settlement in Louisiana. It is eaten by itself or as a condiment on fish cakes, mashed potatoes, biscuits and gravy, pinto beans, hot dogs, hamburgers and other foods. The term "chow-chow" is reportedly based on the French word chou for cabbage. Food historian Luis W. Fernandez claims a connection with Chinese cuisine as an origin. A further possible source of the name is the ingredient chayote, which is itself known as chow chow in India.

Steps:
- Combine vinegar, sugar and salt in large stockpot or kettle large enough to hold all ingredients. Bring to a boil, being certain sugar and salt are completely dissolved. Add the cooked beans, vegetables, canned onions and gherkins. Bring back to boil, then reduce heat and keep at a simmer. Place in hot sterilized jars, leaving 1/2-inch head space, and process in a boiling water canner for 10 minutes at an altitude up to 1,000 feet, 15 minutes at 1,000 to 6,000 feet. (Processing times are based on guidelines provided by the USDA National Food Safety Database.).
- Notes: Recipe can be made in smaller amounts and, rather than processing, kept in the refrigerator for up to two months.
- RATATOUILLE VERSION; diced eggplant, diced zucchini, tomatoes, tomato paste, onion, garlic, peppers, oregano, basil, wine, prepare, add to large pot and simmer until veggies done (fork test). Recipe ingredients from a shopper at Monroe Street Farmers Market. Fall 2017.

- Donair. Donair served open-faced at Revana Pizza. When Greek immigrants tried to introduce the gyro to Halifax in the early 70’s, the Nova Scotian palate was not receptive to the “exotic” flavours of lamb and tzatziki.
- Scallops. Scallops at the Red Shoe Pub in Mabou. Digby is often touted as the “Scallop Capital of the World” because it has the largest inshore scallop fleet.
- Oatcakes. Chocolate dipped oatcake from the Gingerbread Haus Bakery. Oats were the staple grain of northern Scotland, and early settlers to Nova Scotia brought their love for the humble oatcake with them.
- Fish Cakes. Fish cakes at Cuisine Robicheau in Saulnierville. Fish cakes are a common item in all of Atlantic Canada. They are simple patties of salt cod and mashed potato, amplified by fresh herbs, onion or bacon fat.
- Blueberries. The giant blueberry in Oxford, Nova Scotia! Nova Scotia was one of the world’s first commercial blueberry growing regions. It is the largest fruit crop and the official berry of the province.
- Haddock. Pan-fried haddock at The Knot Pub in Lunenburg. While Newfoundlanders are cod people, Nova Scotians are haddock people (arguing is futile). Haddock is a sweeter, flakier fish that prefers deeper colder waters.
- Pepperoni. Deep fried pepperoni at Maxwell’s Plum in Halifax. Max and Chris Kielbratowski immigrated to Nova Scotia from Poland and opened up delicatessans in the 50’s and 60’s specializing in naturally smoked meats.
- Rappie Pie. Rappie Pie from Cuisine Robicheau in Saulnierville. Also called “râpure”, this Acadian dish is “pie” only by the loosest definition. Grated potato is pressed to remove most of the moisture, reconstituted with broth, and baked to give it crispy edges.
