This is a great salad recipe that is great for large gatherings, dish to pass and bbqs. This is so flavorful whether you use the napa or the green leaf cabbage. In Florida I have found it difficult to find a good head if any at all of red leaf lettuce so I will substitute with 2 heads of Romaine Lettuce if I have no other...

Steps:
- 1. Combine dressing ingredients together in a shaker bottle and chill.
- 2. Clean and chop lettuce and cabbage, chill.
- 3. In a sautee pan, melt 5 Tbsp of butter, break Ramen noodles into the pan and add sunflower seeds and slivered almonds. Cook until golden brown and set aside to cool.
- 4. Just before serving and when mix in pan has cooled, toss together leaf mixture with seed mixture, add dressing and serve promptly. YUMMMmmmmmm!
- 5. ***Note: If you are taking the salad elsewhere other than your own kitchen and diningroom table, Be sure that you dont mix everything together until its ready to be served.
NAPA CABBAGE SALAD
This is a yummy, crunchy cabbage salad with toasted ramen noodles and almond slivers. The bowl is always licked clean at potlucks!

Steps:
- Finely shred the head of cabbage; do not chop. Combine the green onions and cabbage in a large bowl, cover and refrigerate until ready to serve.
- Preheat oven to 350 degrees F (175 degrees C).
- Make the crunchies: Melt the butter in a pot. Mix the ramen noodles, sesame seeds and almonds into the pot with the melted butter. Spoon the mixture onto a baking sheet and bake the crunchies in the preheated 350 degrees F (175 degrees C) oven, turning often to make sure they do not burn. When they are browned remove them from the oven.
- Make the dressing: In a small saucepan, heat vinegar, oil, sugar, and soy sauce. Bring the mixture to a boil, let boil for 1 minute. Remove the pan from heat and let cool.
- Combine dressing, crunchies, and cabbage immediately before serving. Serve right away or the crunchies will get soggy.

NAPA SALAD (CHINESE CABBAGE) -- NO RAMEN NOODLES
Napa was on sale this week so I ended up with more than I could readily include in a stir-fry. I decided to search here to see if it could be used in a cole-slaw or salad but all I came with was a dozen variations of the same recipe that called for ramen noodle. I've had that at pot luck dinners and can't stand it. So here is what I came up with. DS#1 added the pecans -- he's got good taste for a 15yo, hasn't he?

- Wash all produce as necessary.
- Divide your half-head of napa lengthwise into 3 or 4 sections and knife-shred crosswise to yield strips about 1.5 inches long by 1/4 inch wide.
- Divide your bok choy stalks lengthwise into 1in sections if necessary and slice thinly. Knife shred the green leaves to match the napa.
- Mix dressing ingredients and let rest for 5 minutes to blend the flavors.
- Toss together all salad ingredients with the dressing.
- Garnish with pecan halves and thin rings of apple if desired.
- Note -- Other artificial sweeteners, honey, sugar, etc. may be substituted for the Splenda if you prefer.
- Note -- Can add chunks of cooked ham or other cooked meat to make into a main-dish salad.

- Put the garlic in a large salad bowl and mix in all the remaining ingredients except the cabbage.
- Trim the cabbage, removing and discarding damaged or wilted leaves, and cut the head crosswise into 1-inch slices. You should have about 8 cups. Wash well and spin dry in a salad dryer (moisture would dilute the dressing). Ten or 15 minutes before serving, add the cabbage to the dressing, toss well and set aside, so the dressing can penetrate the cabbage and soften it slightly.

- In small bowl, mix noodles, nuts and seeds.
- Set aside.
- In quart jar add vinegar and sugar, shake to dissolve sugar.
- Add soy sauce and oil.
- Put cabbage in bowl.
- top with nut mixture and pour dressing on top.
- Best when nut mixture stays.
- separate until ready to eat so noodles don't get soggy.

This recipe has been handed down through my whole family, my mother-in-law gave it to me, she got it from her sister, who got it from another sister and so on. - Topping--melt butter in large skillet, brown sesame seeds, almonds, sunflower seeds and ramen noodles until golden brown.
- Drain on paper towels and cool.
- Dressing-- mix sugar, oil, vinegar and soy sauce in small saucepan.

- Cool.

A nice refreshing salad for the summer. I do not care for coleslaw but this salad is wonderful. It does not have the heavy mayo base. The dressing also works wonderfully on a tossed green salad or steamed veggies.

- In a small saucepan, combine the soy sauce, cider vinegar, sugar, canola oil, pepper and ground ginger and simmer for 1 minute.
- Remove from heat and refrigerate.
- In a small saute pan, heat oil over low heat and add noodles, sesame seeds and garlic; stirring frequently, cook until golden brown.
