NO SODIUM OVEN FRIES
These fries will satisfy the low sodium requirement some people are having to face as we age. If you slice these for steak fries, allow a few more minutes cooking time.

Steps:
- Preheat oven to 400° F, 200° C or Gas Mark 6.
- Place minced garlic into microwave safe bowl and add oil. Microwave for 1 to 2 minutes, depending on power of microwave, you are only heating the oil and garlic to blend and intensify, not cooking anything.
- When oil is cool enough to touch, add potatoes to bowl and toss to coat well.
- Spread out on small sheet pan or in small roaster that has been well greased or sprayed with no stick spray.
- Place on top rack of oven and cook for 20-25 minutes.
- Begin checking for browness at 20 minutes. When brown, turn potatoes and cook for same length of time on other side or until brown.
- Remove from oven and serve as is, or sprinkle with your favorite no sodium seasoning mix.

- Preheat oven to 450 degrees F (230 degrees C). Line a baking sheet with foil, and coat well with vegetable cooking spray. Scrub potatoes well and cut into 1/2 inch thick fries.
- In a large mixing bowl, toss potatoes with oil, sugar, salt and red pepper. Spread on baking sheet in one layer.
- Bake for 30 minutes in the preheated oven, until potatoes are tender and browned. Serve immediately.

- Adjust oven rack to lowest position; heat oven to 475 degrees. Place potatoes in a large bowl and cover with hot tap water; soak 10 minutes. Meanwhile, coat 18 by 12 inch heavy duty rimmed baking sheet (non stick works well) with 4 tablespoons oil and sprinkle evenly with 3/4 teaspoon salt and 1/4 teaspoon pepper; set aside.
- Drain potatoes. Spread potatoes out on triple layer of paper towels and thoroughly pat dry with additional paper towles. Rinse and wipe out the empty bowl; return potatoes to the bowl and toss with remaining 1 tablespoon oil. Arrange potatoes in a single layer on prepared baking sheet; cover tightly with foil and bake 5 minutes. Remove foil and continue to bake until bottoms of potatoes are spotty golden brown, 15-20 minutes, rotating baking shet after 10 minutes. Using metal spatula and tongs, scrape to loosen potatoes from pan, then flip each wedge, keeping potatoes in a single layer. Continue baking until fries are golden and crisp, 5-15 minutes longer, ratating pan as needed if fries are browning unevenly.
- Transfer fries to second baking sheet lined with paper towels to drain. Season with additional salt and pepper to taste and serve.

I like this recipe because it uses NO OIL, making it the most guilt-free french fries recipe that I know of. It has been scaled down for 1-2 people. Try adding ground red pepper if you like your fries spicy.

- Combine the beaten egg white, paprika, garlic powder, salt & pepper in a small bowl and mix well.
- Cut the potato into 1/2" spears.
- Toss the potatoes with the coating mixture.
- Line a cookie sheet with non-stick foil and coat with cooking spray.

I adapted this recipe on allrecipes posted by Barbara Harris. I like it because it's easy and takes approx. 30 mins. to bake. I don't like alot of seasonings on my fries, so I omit the cayenne. No fuss, no muss. They do not, however, turn out really golden and crispy if you are looking for this result.

- Adjust oven rack to lowest position and heat oven to 450 degrees.
- Place potatoes in bowl, wrap tightly with plastic, and microwave until translucent around edges, 3 to 5 minutes, shaking bowl to redistribute potatoes halfway through cooking. Transfer potatoes to cooling rack and thoroughly blot fry with paper towels.
- Coat rimmed baking sheet with 5 tablespoons oil. Transfer to oven and heat until just smoking, 5 to 7 minutes. Meanwhile, whisk remaining oil, cornstarch, and salt in large bowl. Add potatoes to bowl and toss to coat.
