NO-FLOUR CORNBREAD

No-Flour Cornbread image

This recipe was the one my mother used, and her mother before her. Beyond that I can't go! It spoiled me for anything calling itself "cornbread" that has flour or sweeteners in it -- I call those "corn cake." This is great with chili, stew, and other hearty dishes. My dad used to crumble it up into buttermilk and eat it with a spoon. It's a requirement for our family's New Years Day dinner, along with the roast pork and black-eyed peas. It's also the main ingredient in Thanksgiving/Christmas/anytime turkey stuffing.

Categories     Breads

Time 26m

Yield 8-12 serving(s)

Number Of Ingredients 7

2 eggs
2 cups white cornmeal
2 cups buttermilk
1 teaspoon baking powder
1 teaspoon baking soda
1/4 cup bacon grease
salt (most bacon grease provides plenty of saltiness)

Steps:

  • Preheat oven to 425°F.
  • Put first 5 ingredients in mixing bowl. (If it makes you feel better, go ahead and mix the dry ingredients, whisk the eggs into the buttermilk, then combine dry/wet ingredients).
  • Mix with large spoon or whisk.
  • Put bacon grease in well-seasoned 10-inch cast iron skillet over medium to high heat.
  • Just as the bacon grease is about to start smoking, pour it into the other ingredients, stirring as you pour (if you can manage it). Leave enough in the skillet to coat the bottom and sides.
  • Pour entire mixture into the skillet.
  • Place skillet on middle rack of oven; bake until cornbread is springy in the middle, browned and pulling away from the skillet on the sides (about 15-20 minutes).
  • Remove from oven and invert skillet over serving plate. If cornbread does not drop easily, you may need to run an icing spatula or even a flexible metal egg-turner around/under it so it comes loose.
  • Recipe halves well, just remember you can't cut the bacon grease by half because you still need to coat the skillet.
  • Serve hot, with plenty of butter. Or margarine, if you insist.

NO CORNMEAL CORNBREAD

No Cornmeal Cornbread image

Think you can't make cornbread without cornmeal? No problem! We use sweet in-season corn and blend it up with milk and sour cream to deliver all that good corn flavor, even without cornmeal. Don't hold back if you get the craving to stir a little Cheddar, scallions and crispy bacon in there, as well.

Provided by Food Network Kitchen

Time 1h5m

Yield 6 to 8 servings

Number Of Ingredients 10

2 1/2 cups all-purpose flour (see Cook's Note)
3 tablespoons sugar
2 teaspoons baking powder
1 teaspoon kosher salt
1/2 teaspoon baking soda
3/4 cup sour cream
3/4 cup whole milk
1 stick unsalted butter, melted, plus more for the baking dish
2 ears corn, kernels cut off (about 2 cups)
2 large eggs

Steps:

  • Preheat the oven to 400 degrees F.
  • Whisk the flour, sugar, baking powder, salt and baking soda together in a large bowl.
  • Combine the sour cream, milk, butter, corn and eggs in a blender and blend until smooth. Add to the dry ingredients and whisk until smooth. Butter a 9-by 13-inch baking dish and pour in the batter.
  • Bake until the cornbread springs back when pressed and is golden around the edges, 30 to 35 minutes. Let cool 15 minutes in the baking dish before slicing.

REAL CORNBREAD

Real Cornbread image

This traditional cornbread is made without flour, isn't sweet and has a crumbly texture. You can change the adaptable recipe to suit your cornbread preference. For a variation, substitute 1/2 teaspoon baking soda for the baking powder and use buttermilk instead of milk. If you're looking for a more muffinlike texture, substitute flour for half the cornmeal.

OLD FASHIONED GLUTEN FREE CORNBREAD | THE ORIGINAL BEST RECIPE

Old Fashioned Gluten Free Cornbread | the original best recipe image

This easy gluten free cornbread recipe can be made naturally gluten free with all cornmeal and no other flours. Use it to make muffins, too!

Provided by Nicole Hunn

Categories     Quick bread

Time 30m

Number Of Ingredients 8

2 cups coarsely ground yellow cornmeal ( (See Recipe Notes))
2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon kosher salt
1 1/2 cups plain yogurt (at room temperature (can substitute an equal amount of buttermilk or half sour cream/half whole milk))
4 tablespoons unsalted butter (melted and cooled)
1 egg (at room temperature, beaten)
4 tablespoons honey

Steps:

  • Preheat your oven to 400°F. Grease a 12-inch cast iron skillet or an 8-inch square or round pan, and set it aside.
  • In a large bowl, place the cornmeal (See Recipe Notes), baking powder, baking soda, and salt, and whisk to combine well. In a separate bowl, place the yogurt (or buttermilk or sour cream and milk mixture), butter, and egg, and whisk to combine well.
  • Create a well in the dry ingredients and pour in the wet ingredients and the honey. Mix until just combined. The mixture will be relatively thin (thinner if you used buttermilk). Pour the mixture into the prepared pan.
  • Bake for 20-30 minutes (closer to 20 minutes if using a cast iron skillet, closer to 25 minutes if you made the all purpose gluten free flour variation), or until lightly golden brown on top, golden brown around the edges, and firm to the touch in the center. Slice and serve immediately.

SOUTHERN CORNBREAD

Southern Cornbread image

Many debate what makes a Southern cornbread. Generally it is all or mostly cornmeal¿no flour¿making it crumbly and the perfect side dish to a meal with lots of sauce and flavor. The sugar content is hotly contested too: many feel true Southern cornbread should not contain any, while others think a little bit of sugar brings out the corn flavor. We opted for just a little sugar, for that crumbly texture with the sweetness of fresh corn.

Provided by Food Network Kitchen

Categories     side-dish

Time 30m

Yield 8 servings

Number Of Ingredients 8

2 cups stone-ground cornmeal
3 tablespoons sugar
1 1/2 teaspoons baking powder
1 teaspoon kosher salt
1/2 teaspoon baking soda
1 cup buttermilk
2 large eggs
9 tablespoons unsalted butter

Steps:

  • Preheat the oven to 375 degrees F.
  • Whisk the cornmeal, sugar, baking powder, salt and baking soda together in a large bowl and set aside. Whisk the buttermilk and eggs together in a medium bowl, then fold it into the cornmeal mixture and set aside.
  • Heat a 10-inch cast-iron skillet over high heat. Once smoking-hot, turn off the heat, add the butter and swirl it around to coat the pan as it melts. Pour the melted butter into the cornmeal mixture and stir to combine. Pour the cornmeal mixture into the hot skillet (you will hear a sizzling sound when pouring it into the pan) and bake until the edge is golden brown and the center bounces back when pressed with a finger, about 20 minutes. Serve warm or at room temperature.

From food.onehowto.com
  • Firstly, to make this flourless cornbread recipe you will have to place the corn in a container to blend them. Remember to wash them and place them individually into the blender. It may be easier to do this by buying corn in a can, as it is already separated. All you would have to do is rinse them with a strainer before placing them into the blender. Before continuing, we preheat the oven to 180º.
  • Once you have all the grains in the container, melt the stick of butter in a saucepan over medium heat. After this step, add the butter to the container where the grains are located and add the 5 eggs, a pinch of salt and the condensed milk, as well as the baking powder. This last ingredient will not be necessary if you make corn bread without an oven. You can make cornbread in a double boiler or in a pressure cooker, as we will show you below.Once you have everything together, mix them again with your blender until they become an homogeneous paste.
  • You can also blend the corn kernels into a paste and then empty it into a bowl and then add the rest of the ingredients there and stir them manually. If you don't have a blender be sure to mash the corn kernels well and properly stir the ingredients to form a paste.
  • Now that the dough is ready, it's time to prepare the mold to bake your cornbread. Remember to grease your pan so the dough doesn't stick.
