Everyone will love this delicious recipe for no-bake pumpkin oatmeal cookies. You'll love that it only takes 30 min! It's a tasty and easy recipe for both experienced and novice cookie-makers. They don't require any baking, refrigeration, or cookie shaping, just heat the sugar, cream and butter mixture, add to the dry ingredients and drop the dough onto a cookie sheet. In addition to the peanut butter and pumpkin flavor, we also included a delicious toffee surprise for an extra kick of flavor.

4 cups old-fashioned oats
1 cup creamy peanut butter
1/4 cup canned pumpkin (not pumpkin pie mix)
1 cup toffee bits
2 cups sugar
1/2 cup heavy whipping cream
1/2 cup unsalted butter
1/2 teaspoon vanilla
1/2 teaspoon pumpkin pie spice
1/4 teaspoon kosher salt

Steps:

  • Line cookie sheets with waxed paper. In large bowl, mix oats, peanut butter, pumpkin and toffee bits; set aside.
  • In 1-quart saucepan, heat sugar, cream and butter to a vigorous boil. Boil 1 minute 30 seconds, stirring frequently. Remove from heat; stir in vanilla, pumpkin pie spice and salt.
  • Pour over oat mixture in bowl; quickly mix well.
  • Immediately drop by heaping tablespoonfuls onto cookie sheets; cool completely. Carefully remove from waxed paper to serve.

1 (3.4 ounce) package instant pumpkin-spice pudding mix
3 ½ cups quick-cooking oats
½ teaspoon vanilla extract

Steps:

  • Mix sugar, butter, and milk together in a large pan and bring to a boil; continue to boil for 2 minutes. Turn off heat and add pudding mix. Stir very well; add oats and vanilla extract. Let mixture stand for 5 minutes.
  • Drop mixture onto waxed paper by the teaspoon. Allow to cool completely, about 30 minutes. Store in an airtight container.

No Bake Pumpkin Cookies are full of oats and pumpkin flavor and come together in minutes without ever turning the oven on. This easy no bake cookie recipe is quick, delicious and perfect for fall!

1 1/2 cups sugar
1/2 cups brown sugar
3/4 cup butter
2/3 cup milk
3.4 oz box instant Pumpkin Spice Pudding Mix
1 tsp pumpkin pie spice
1 tsp vanilla extract
3 1/2 cups quick oats

Steps:

  • In a medium saucepan, combine sugars, butter and milk. Over medium heat, stirring occasionally, bring the mixture to a boil and boil for 2 minutes.
  • Remove the mixture from heat and add the pudding mix, stirring until well combined.
  • Add the pumpkin pie spice and vanilla and mix well. Mix in the oats and then let the mixture sit for about 5 minutes.
  • Use a cookie scoop to drop the mixture by tablespoonfuls onto a cookie sheet lined with wax paper. Allow them to cool completely in order to fully set. Store at room temperature or in the refrigerator.

1/2 cup light brown sugar (packed)
1 cup pumpkin (or squash puree)
1/2 teaspoon vanilla extract
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/4 teaspoon ground ginger
2 1/2 cups frozen whipped topping (thawed, regular or lite; most of an 8-ounce tub)
9-inch graham cracker crust (purchased or homemade)
Garnish: whipped topping (or sweetened whipped cream, for topping)
Optional: cinnamon sugar for sprinkling

Steps:

  • Gather the ingredients.
  • In a mixing bowl with an electric mixer , beat the cream cheese with the pumpkin or squash puree, brown sugar, pure vanilla extract , cinnamon, nutmeg, and ginger, until well blended and fluffy.
  • Fold in the 2 1/2 cups whipped topping.
  • Spread the mixture in the graham cracker crust.
  • Cover and chill the pie for 2 to 3 hours before serving.
  • Serve with whipped topping or sweetened whipped cream and sprinkle with cinnamon sugar, if desired.

This is an interesting recipe I found in an ad for Keebler products. I put it here for safekeeping. It's nice to have a no-bake recipe for a favorite pie. (Cook time is refrigerator time).

1/2 cup cold milk
1 (4 5/8 ounce) package vanilla flavor instant pudding and pie filling mix (6-serving size)
1 teaspoon pumpkin pie spice (see note *)
1 cup Libby's canned pumpkin
2 1/2 cups frozen non-dairy topping, thawed
9 inches keebler graham cracker crust

Steps:

  • In large bowl beat milk, pudding mix and spice with wire whisk for 1 minute. (Mixture will be very thick).
  • Whisk in Libby's 100% pure pumpkin.
  • Stir in whipped topping. Spread in crust.
  • Refrigerate at least 2 hours or until set. Garnish as desired.
  • *Note: May substitute 1/2 teaspoon ground cinnamon, 1/4 teaspoon ground ginger and 1/8 teaspoon ground cloves in place of the pumpkin pie spice.

1 (9 inch) prepared graham cracker crust
1 (.25 ounce) package unflavored gelatin
1 teaspoon ground cinnamon
½ teaspoon ground ginger
½ teaspoon ground nutmeg
½ teaspoon salt
1 (14 ounce) can sweetened condensed milk
2 eggs, beaten
1 (15 ounce) can pumpkin puree

Steps:

  • In a heavy saucepan combine gelatin, cinnamon, ginger, nutmeg, and salt. Stir in condensed milk and beaten eggs, mixing well. Let stand one minute, then place on burner over low heat, stirring constantly for about 10 minutes, or until gelatin dissolves and mixture thickens. Remove from heat.
  • Stir in pumpkin, mixing thoroughly, and pour mixture into graham cracker crust. Chill for at least 3 hours before serving.
