Steps:
- Preheat the oven to 325°F. Line a 9x13-inch baking dish with two crisscrossed pieces of parchment paper, leaving an overhang on all sides. Coat the parchment with nonstick cooking spray.
- Pulse cookies in a food processor until finely ground, about 20 seconds (you should have about 2 cups packed crumbs). Add butter and a pinch of salt and pulse until just combined. Using a flat-bottomed measuring cup, press the mixture into the bottom of the prepared pan. Place in freezer and chill until firm, about 10 minutes.
- Beat cream cheese and sugar with an electric mixer on medium-high until creamy, about 2 minutes. Add the eggs and beat to combine. Reduce speed to low and beat in flour and ½ teaspoon salt. Transfer 1½ cups of filling to a small bowl and set aside.
- To the remaining filling, add the pumpkin, allspice, ginger, and cinnamon and beat until combined.
- Pour the pumpkin filling over the crust. Dollop the reserved plain filling onto the pumpkin and swirl with a toothpick or skewer to create a marble effect.
- Bake until just set (the center will still be slightly wobbly), 30 to 35 minutes. Let cool at room temperature for 30 minutes, then refrigerate until set, about 2 hours.

Steps:
- Line a 9 x 13 inch sheet pan with parchment paper. Set aside.
- Mix rolled oats, cereal, craisins, coconut and almonds in a large bowl. Set aside. (I cut the coconut with two knives so it will not be stringy.)
- In a saucepan, mix corn syrup and brown sugar. Bring to a boil while stirring. Add peanut butter and vanilla. Stir just to blend well.
- Pour over oats and fruit mixture. Stir and mix well. Press mixture firmly onto pan. (I place a piece of wax paper on top while pressing hard.) Let cool and cut into bars. Store in air-tight container. Freezes well, if securely wrapped.
- Enjoy!

- Add the cookie dough ingredients to a food processor and mix until it forms a thick, sticky dough. You should easily be able to press the dough together between your fingers. If not, add 1 tsp warm water and process again. That should do the trick but if your dates were too dry, you may need to repeat with another 1-2 tsp of water.
- Line a 7-8 inch square baking pan with parchment paper so the paper sticks out over the edges of the pan. This is an optional step but it will help you lift the bars out once they’re finished.
- Use your hands to firmly press the dough into the pan. Take a few minutes to really work it into the pan, especially into the corners.
- To make the chocolate ganache, gently whisk together the melted coconut, maple syrup and cocoa powder until you have smooth, uniform mixture that resembles melted chocolate.

- Classic Sugar-Free No-Bake Cookies. Let’s start this list off with a classic-looking super low-carb cookie that brings together the tastes of three fan favorites: coconut, almond, and sugar-free chocolate.
- Low Carb Turmeric Keto Cookies. Due to the turmeric, these cookies are almost bright yellow and are more on the savory side (for a cookie). The recipe uses tahini, bone broth protein powder, turmeric, coconut oil, and coconut flakes for the base.
- Easy No-Bake Coconut Cookies. I don’t know about you, but the taste of coconut always reminds me of the summer holidays. So, there is no wonder coconut is the star ingredient of this recipe.
- Snickerdoodle Edible Cookie Dough. Do not judge these cookies by their appearance. They may look a little grey, bumpy and misshapen, but the flavor of these snickerdoodle cookies make up for any lack of aesthetics.

- No-Bake Vegan Cookies With Oats. These vegan-friendly cookies remind me of the crunchy cornflake easter desserts I made as a kid. If you don’t know what I’m about, they look like little nests.
- Low Carb Mint Thins. Thin mints are the perfect end to a dinner party as the mint flavor acts as a palate cleanser. They always go down a treat with guests as a satisfying and refreshing finish to a successful feast.
- No-Bake Cookie Dough Bars. These cookie dough bars look like a millionaire’s shortbread, so they certainly have that ‘wow’ factor in their appearance.
