HEALTHY BLUEBERRY SAUCE



Healthy Blueberry Sauce image

This simple blueberry sauce recipe is low in added sugar and made without cornstarch. Very easy to make. Ready in 10 minutes.

3 cups blueberries (fresh or frozen)
1/2 cup + 2 Tbsp water
1 Tbsp maple syrup
1/8 tsp cinnamon
1 Tbsp lemon juice
1/2 tsp vanilla extract
pinch of salt
2 1/2 tsp arrowroot powder

Steps:

  • Place 1 1/2 cup blueberries into a small saucepan. Add 1/2 cup of water, maple syrup, cinnamon, lemon juice, vanilla extract, and a pinch of salt. Mix and start heating the blueberries over medium heat.
  • In the meantime, dissolve the arrowroot powder in 2 tablespoons of water.
  • When the blueberries start to simmer, cook them for 1 minute stirring occasionally.
  • To add the dissolved arrowroot powder, pour it slowly into the saucepan making sure to constantly stir the blueberries.
  • Add the rest of the blueberries (1 1/2 cup). Mix and bring the sauce to a simmer. Cook for 10 more seconds and take off the heat.

All purpose sugar free blueberry sauce with a hint of cinnamon! Add to pancakes, waffles, yogurt, ice cream or use it as a filling for pie!

13 ounce fresh blueberries (about 3 cups)
1/4 cup water
2 tablespoons Truvia (or another sugar alternative)
1 teaspoon cinnamon
1 tablespoon lemon juice, fresh
1/2 teaspoon almond extract
1-2 Tablespoons cornstarch (optional)
1-2 Tablespoons juice from blueberries

Steps:

  • Place clean blueberries in a medium saucepan with 1/4 cup of water over medium heat. Fold in Truvia, cinnamon and lemon juice. Bring to a boil. In a separate small dish whisk together until smooth the berry juice and cornstarch (optional). Add the slurry to the berry mixture and cook until the sauce thickens up (3-4 minutes). Remove from heat and stir in almond extract.

No Added Sugar Blueberry Sauce image

Number Of Ingredients 7

2 cups fresh or frozen blueberries
1/2 cup water
2 tablespoons stevia or monk fruit (can use coconut sugar )
1 teaspoon cinnamon
1/2 teaspoon vanilla or almond extract
2 teaspoons arrowroot powder
1-2 tablespoons cold water

Steps:

  • In a medium saucepan over medium heat, add blueberries, 1/2 cup of water, and sweetener. Stir frequently, cook for 5-10 minutes until bubbling.
  • Smash some of the blueberries with a fork if desired
  • In a small bowl, whisk the arrowroot with 2 tablespoons of cold water.
  • Remove the saucepan from heat and slowly stir the arrowroot mixture into the blueberries.
  • If needed, simmer the sauce for about 5 minutes to thicken.
  • Remove from heat and gently stir in extract and serve.

1 (12 ounce) can 100% apple juice concentrate, thawed
1 tablespoon flour
1/2 cup walnuts, chopped (optional)
1 teaspoon orange zest (optional)

Steps:

  • Combine cranberries, juice concentrate, and flour in a pot.
  • Cover and simmer 5-10 minutes on medium heat until most of the berries have burst and sauce thickens.
  • Stir in zest and/or walnuts and serve.

  • The liquid will increase significantly when the berries begin to break down. Continue simmering, stirring regularly, until liquid is reduced by at about half.
  • Add another tablespoon of sweetener and stir. As the berries reduce, the liquid will thicken slightly and become a deep purple. It will thicken even more as it cools.
  • Total cooking time is 15-20 minutes, depending on desired thickness and the pan you use. To test, allow a spoonful of liquid to cool and then pour it out of the spoon. If it has thickened, the sauce is reduced enough. In the end, you will have roughly 1 1/4 cup of sauce. Reduce further (to about 3/4 cup) to use as a spread.
