This easy homemade salad is both nutritious and versatile, with protein-rich canned chicken, flavorful pineapple and water chestnuts delivering delicious flavor and perfect texture.

Ingredients

2 tablespoons mayonnaise
2 tablespoons sour cream
1 tablespoon whole grain mustard
½ teaspoon paprika
1 (9.75-ounce) can premium chicken breast, drained
1 (8-ounce) can crushed pineapple, thoroughly drained
½ cup canned whole water chestnuts, drained and chopped
¼ cup chopped celery
2 tablespoons red onion, finely chopped
½ cup pecans, toasted and chopped
1 tablespoon chopped fresh parsley
kosher salt and cracked black pepper

Steps:

In a small bowl, mix together the mayonnaise, sour cream, and paprika until combined. In a separate mixing bowl, combine the chicken, pineapple, water chestnuts, celery, red onion, pecans, and parsley. Fold in the dressing, tossing to fully coat. Season to taste with salt and pepper. Chill completely before serving.

1 cup mayonnaise
1/2 teaspoon ground ginger (optional add 1/4 tsp. curry powder)
3 cups cubed cooked chicken
1 1/2 cups halved red seedless grapes
2 cups canned pineapple chunks, well drained
1 cup sliced celery (or chopped water chestnuts)
1/3 cup sliced green onion
1 tablespoon fresh parsley, finely chopped (optional)
3 tablespoons red bell peppers, finely chopped (optional)
2 tablespoons honey mustard (optional)
1/2 cup broken walnuts

Steps:

Combine first 3 ingredients.
Stir in remaining ingredients.
Cover and chill until serving time.
To Serve:.
Sprinkle with additional walnuts and serve with a crisp green salad, baguette, and a nice glass of iced tea or lemonade, sparkling mineral water, chenin blanc or California chardonnay.

1 can (20 ounces) pineapple tidbits, drained
1 cup halved seedless grapes
1/2 cup mayonnaise
1/2 teaspoon curry powder
Fresh cilantro leaves, optional
Bibb lettuce leaves, optional

Steps:

In a large bowl, combine the chicken, pineapple and grapes. In a small bowl, combine mayonnaise and curry; pour over chicken mixture; toss to coat. Cover and refrigerate until serving. If desired, top with cilantro and serve in lettuce leaves.
