SAUSAGE STUFFED BELL PEPPERS

Sausage Stuffed Bell Peppers image

Provided by Emeril Lagasse

Categories     main-dish

Time 1h

Yield 4 servings

Number Of Ingredients 22

4 medium green bell peppers
8 ounces ground pork sausage
1 1/2 cups chopped onions
1/2 cup chopped celery
2 teaspoons minced garlic
1 1/2 cups cooked long-grain rice
1/2 teaspoon salt, plus more for seasoning
1/4 teaspoon freshly ground black pepper, plus more for seasoning
1/2 teaspoon Essence, plus more for seasoning, recipe follows
1/4 cup chopped green onions, green part only
1 tablespoon chopped parsley leaves
2 tablespoons fine dry bread crumbs
2 tablespoons grated Parmesan
4 teaspoons unsalted butter
2 1/2 tablespoons paprika
2 tablespoons salt
2 tablespoons garlic powder
1 tablespoon black pepper
1 tablespoon onion powder
1 tablespoon cayenne pepper
1 tablespoon dried oregano
1 tablespoon dried thyme

Steps:

  • Preheat the oven to 400 degrees F.
  • Cut off the top quarter of each bell pepper and reserve. Scoop the seeds and veins out from the inside of each pepper and discard. Set bell pepper shells aside. Remove and discard the stems from each bell pepper top. Dice enough of the bell pepper tops to make 1/2 cup. Set aside.
  • In a large skillet, over medium-high heat, crumble and brown the sausage until cooked through, about 4 minutes. Add the onions, 1/2 cup diced bell pepper, and the celery. Saute for 4 minutes, or until the vegetables are soft. Add the garlic and cook, stirring, for 1 minute. Add the rice and mix well. Season with salt, pepper and Essence. Cook for about 1 minute. Remove from the heat and stir in the green onions and parsley. Season the insides of the bell pepper shells with salt and pepper, to taste. Spoon the rice mixture into the bell peppers.
  • In a small bowl, combine the bread crumbs and cheese. Season with a pinch of Essence and mix well. Sprinkle the crust over each pepper. Top each crust with 1 teaspoon of butter and place the peppers into an 8-inch baking dish or pan. Add just enough water to cover the bottom, about 1/3 cup. Bake for 25 to 30 minutes, or until the tops are crusty and brown and warmed through. Serve hot.
  • Combine all ingredients thoroughly.

NEW ORLEANS STYLE STUFFED PEPPERS

New Orleans Style Stuffed Peppers image

They say necessity is the mother of invention. I can go with that, since this recipe came about to appease my hubby's cravings for stuffed peppers and his deep, abiding love of red beans and rice. The man loves the red beans and rice, possible more than me. :) There are a lot of steps listed in the recipe, but it is really quick getting the peppers to the oven. Cooking time is for the longest range of bake time.

Provided by Amanda Beth

Categories     Poultry

Time 55m

Yield 4 serving(s)

Number Of Ingredients 10

4 large green peppers
1 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon ground pepper
1 lb ground turkey
1 (6 1/2 ounce) package red beans and rice mix (I use Knorr's)
2 cups water
1 (8 ounce) can tomato sauce
1 cup shredded cheddar cheese
1/2 teaspoon salt (to taste)

Steps:

  • Remove tops from green pepper and clean insides. Try to level bottoms of peppers if needed, so they will stand flat. Chop tops of peppers and set aside. Preheat oven to 350°F.
  • In large skillet, brown ground turkey, garlic powder, onion powder and pepper for about 5 minutes.
  • When turkey is almost done, add rice and beans mix, green pepper tops, and water. Cover, and cook for about 7 minutes, stirring occasionally.
  • When rice is tender, turn off heat. Stir in tomato sauce, and taste the mixture for seasoning. You may need to add more garlic and/or pepper to suit your family's taste.
  • Spray an 8x13 glass pan with cooking spray. Carefully stuff peppers with turkey mixture. (It's hot!) and set peppers in greased pan. They will be slippy, but it makes for an easier clean up.
  • Bake peppers for 20-40 minutes, depending on how soft you like your peppers.
  • When peppers reach desired tenderness, top with shredded cheese. Remove peppers from oven when cheese reaches a nice, melty state.
  • Be careful. Remember, you greased the pan, so the peppers may slide.
  • Let rest 5 minutes, and enjoy!

Stuffed Peppers with Creole Sauce image

The freshly-made Creole sauce puts a different twist on stuffed peppers, and really makes this dish!

Provided by DiamondLil

Categories     Main Dish Recipes     Stuffed Main Dish Recipes     Stuffed Bell Pepper Recipes

Time 1h30m

Yield 4

Number Of Ingredients 19

1 tablespoon olive oil
½ cup finely chopped onion
2 cloves garlic, minced
½ cup finely chopped green bell pepper
1 (8 ounce) can tomato sauce
1 (15 ounce) can crushed tomatoes
1 teaspoon salt
1 teaspoon chili powder
1 teaspoon white sugar
¼ teaspoon ground black pepper
⅛ teaspoon ground clove
1 bay leaf
4 large green bell peppers, tops removed, seeded
1 pound ground beef
¼ cup minced onion
⅓ cup finely chopped celery
1 ½ cups cold, cooked white rice
¼ cup grated Parmesan cheese
salt and pepper to taste

Steps:

  • Heat olive oil in a saucepan over medium heat. Stir in 1/2 cup onion and garlic, and cook until the onion softens and turns translucent, about 5 minutes. Stir in the chopped bell pepper, tomato sauce, crushed tomatoes, then season with salt, chili powder, sugar, black pepper, glove, and a bay leaf. Bring to a simmer, then reduce heat to medium-low, cover, and simmer 20 minutes, stirring occasionally.
  • While the sauce is simmering, microwave the peppers until tender, about 45 seconds. Preheat a skillet over medium-high heat, and add ground beef. Cook and stir until browned and crumbly, then stir in 1/4 cup onion, and celery. Drain off grease. Cook another 5 minutes, then fold in the rice and Parmesan cheese. Season to taste with salt and pepper.
  • Preheat oven to 375 degrees F (190 degrees C).
  • To assemble, stir about 1/2 cup of the Creole sauce into the beef mixture to moisten it. Stuff the peppers with the beef mixture, and place onto a 9x9 inch baking pan. Pour the remaining Creole sauce over the peppers.
  • Bake peppers, uncovered, until hot and beginning to brown, about 25 minutes.
