- Lobster. Shediac, New Brunswick claims to be the “Lobster Capital of the World” and even erected a 90-tonne lobster sculpture in 1989 to commemorate the title.

- Ployes. A ploye with smoked salmon. Ployes are buckwheat pancakes popular in the Madawaska region of New Brunswick and Maine. This is a French speaking region with Quebecois borders and Acadian heritage.
- Dulse. Dulse is a seaweed that is gathered from the rocks at low tide. Most Maritimers just eat it out of the bag, but it is also sold as flavouring powders and flakes.
- Lady Ashburnham Pickles. Lady Ashburnham was a telephone operator whose lovely voice captured the heart of a retired British soldier. He married her after many late night chats, when he would call for carriages to the local taverns.

- Ganong. Founded in 1873, Ganong is Canada’s oldest independently owned candy company. Based in St. Stephen, “Canada’s Chocolate Town”, Ganong is responsible for those uniquely Canadian chicken bones (hard pink cinnamon candies with semi-sweet chocolate centres) found at a grandmother’s house near you!

- Lobster, Lobster, And More Lobster. It’s impossible to talk about luxurious food in New Brunswick without mentioning lobster. However, the best way to enjoy this local staple is in the most unluxurious of settings: at a beachside cookout, at a lobster roll shack on a wharf, or served up with melted butter and cold salads at a community fundraiser or church hall.
- Ployes. The humble ploye may just be the coziest food in all of New Brunswick. This delicious cross between a pancake and a crepe is made with a blend of buckwheat and wheat flour, plus water and baking soda.
- Fiddleheads. New Brunswick’s tender green fiddleheads are a classic sign of spring that I look forward to each and every year. The province is one of the world’s leading producers of this vegetable, which is actually the tightly furled head of a young ostrich fern.
- Craft Beer. For a small province, New Brunswick has an oversized craft beer scene and boasts nearly 50 breweries. Ten of those are located in the capital, Fredericton, giving the city roughly one brewery for every 5,400 residents.
- Potato Chips. Potato chips certainly aren’t unique to New Brunswick but Canadians in the know will tell you that New Brunswick does them best. It’s not just because the province is a top potato producer.
- Chocolate. Chocolate, just like potato chips, can be found all around the world but New Brunswick has a special claim to fame when it comes to this foodie fav.
- Chicken Bones. Ganong doesn’t just make chocolate. Its line extends to jelly beans, mints, fruit snacks, and… chicken bones. Yes, the name is a little odd.
- Chicken Fricot. New Brunswickers are rightly proud of their Acadian culture, as well as their rich culinary heritage. The next four items all originate from Acadian cuisine.
- Crêpes Râpées. Crêpes râpées is another tasty option. These potato pancakes are crispy on the outside but soft and moist on the inside and I love to eat them just like ployes: covered in butter and brown sugar.
- Râpées. Foodies keen to try something new will want to dig into râpée. A mix of grated potatoes seasoned with onion, pork fat, salt and pepper, and baked in a casserole dish until the top is golden and crispy.
