No Weep, No Shrink Meringue image

Works everytime to cure meringue on pies that weep and ruin the looks of your pies..found this in an old cookbook...

Number Of Ingredients 6

1 tablespoon cornstarch
2 tablespoons granulated sugar
1/2 cup water
3 egg whites
1 dash salt
6 tablespoons granulated sugar

Steps:

  • Mix cornstarch, 2 tbls sugar and water and cook over low heat till mixture is clear -- remove from heat -- in a bowl, whip egg whites until peaked and then slowly add the heated cornstarch-sugar-water mixture.
  • Beat until creamy.add salt and 6 tbls sugar and beat again till fluffy -- Pile on your pie and bake in a 350* oven till meringue is gold tinged, usually 20-30 minutes.

1 tablespoon cornstarch
2 tablespoons cold water
½ cup boiling water
1 teaspoon vanilla extract
3 egg whites
6 tablespoons white sugar
1 pinch salt

Steps:

  • Blend cornstarch and cold water in a saucepan. Add boiling water, and cook until thick and clear. Cool completely.
  • Beat egg whites till foamy. Gradually beat in sugar, beating until stiff and glossy. Add salt and vanilla, and slowly beat in cold cornstarch mixture. Beat quickly for several minutes. Spread meringue on filled, cooled 9-inch pie.
  • Bake pie at 350 degrees F (175 degrees C) for 10 minutes until tips of meringue begin to brown.

1/2 cup boiling water
3 egg whites
6 tablespoons sugar
1 pinch baking soda
1 teaspoon vanilla

Steps:

  • Blend cornstarch and cold water in saucepan. Add boiling water.
  • Cook, stirring until clear and thickened. Let stand until cold. With electric beater on high speed, beat egg whites until foamy.
  • Gradually, add sugar; beat until stiff but not dry. Turn mixer to low speed; add soda and vanilla.
  • Gradually, beat in cold cornstarch mixture. Raise mixer again to high speed; beat well. Spread meringue over cooled pie filling.
  • Bake at 350 degrees for at least 10 minutes

1/2 cup butter, softened
3 cups sugar
5 eggs
3 cups cake flour
1 cup milk
2 teaspoons lemon extract
vanilla ice cream
berries, for garnish

Steps:

  • Special equipment: a 10-inch bundt pan, greased and floured
  • In a large bowl, using a mixer, combine the butter and sugar until creamy.
  • Add the eggs, 1 at a time, beating well after each addition.
  • Add the flour and milk alternately, beginning and ending with the flour.
  • Stir in the lemon extract.
  • Spoon the batter into the prepared pan.
  • Place pan in a cold oven and heat oven to 325 degrees F. Bake cake for 1 hour. Increase the temperature to 350 degrees F and bake for 30 minutes more.
  • *Cook's Note: Do not open the oven door while baking.
  • Cool the cake in the pan for 10 minutes, and then turn out onto a wire rack to cool.

1/2 teaspoon salt
1 teaspoon vanilla extract
1 cup chopped pecans

Steps:

  • Pour marshmallow cream into large bowl.
  • In a large saucepan cook sugar, salt and water to soft ball stage.
  • Pour hot mixture over marshmallow cream.
  • Stir until slightly stiff and peaks start to form.
  • Add vanilla and pecans.
  • Mix well.
  • Pour into a 8x8 greased pan or drop by spoonfuls onto wax paper.

2 1/2 cups sugar
1/2 cup light corn syrup
1/2 cup water
1/4 teaspoon salt
2 egg whites
1 teaspoon vanilla
1/2 cup chopped pecans (optional) or 1/2 cup cherries (optional)

Steps:

  • In a 2 quart saucepan combine sugar, corn syrup, water, and salt.
  • Cook to hardball stage, (260 degrees), stirring only until sugar dissolves.
  • Meanwhile, as temperature of syrup reaches 250 degrees, beat egg white till stiff peaks form.
  • When syrup reaches 260 degrees, very gradually add the syrup to egg whites, beating at high speed with electric mixer.
  • Add vanilla and beat until candy holds its shape, 4-5 minutes.
  • Stir in the chopped nuts or cherries, if desired.
  • Quickly drop candy from a teaspoon onto waxed paper, swirling the top of each piece.
  • Let cool.

1 pinch salt
1 teaspoon lemon juice

  • In a small saucepan, combine the cornstarch, 3 tablespoons sugar, salt, lemon juice and water.
  • Bring to a slow boil over medium heat and stir until clear and thick.
  • Set aside and cool completely.
  • In a large bowl, beat the egg whites until soft peaks form.
  • Gradually add cooled cornstarch mixture, beating until mixture thickens.

2 cups butter, softened
1 package (8 ounces) cream cheese, softened
2 cups sugar
2 large egg yolks, room temperature
2 teaspoons vanilla extract
5 cups all-purpose flour
FROSTING:
3-1/2 cups confectioners' sugar
3 tablespoons butter, softened
1 tablespoon shortening
1 teaspoon vanilla extract
4 to 5 tablespoons 2% milk
Food coloring of choice, optional
Assorted sprinkles or candies, optional

Steps:

  • Beat butter, cream cheese and sugar until light and fluffy. Beat in egg yolks and vanilla. Gradually beat in flour. Divide dough into 4 portions; shape each into a disk. Cover; refrigerate until firm enough to roll, about 30 minutes., Preheat oven to 350°. On a lightly floured surface, roll each portion of dough to 1/4-in. thickness. Cut with floured 3-in. holiday cookie cutters. Place 1 in. apart on ungreased baking sheets., Bake until edges are light golden, 12-14 minutes. Cool on pans 5 minutes. Remove to wire racks to cool completely., For frosting, beat confectioners' sugar, butter, shortening, vanilla and enough milk to reach desired consistency. If desired, tint with food coloring. Spread or pipe over cookies. Decorate as desired.

This is an extremely awesome recipe!! the divinity comes out light and fluffy!! It never fails! Also, I've made this on a rainy day and unlike most divinity recipes, this one works! I will only make this when my daughter helps me. You have to work fast when it firms up. Drop the candy fast on to wax paper.

FIRST SUGAR MIXTURE
1 c water
1 c sugar
SECOND SUGAR MIXTURE
1/2 c water
3 c sugar
1 c corn syrup, light
OTHER INGREDIENTS
3 egg whites, stiffly beaten
1/2 tsp vanilla extract
1 c pecans, chopped

Steps:

  • 1. Cook first mixture until it spins a thread. (Just above softball stage)
  • 2. Pour hot mixture over stiffly beaten egg whites, beating constantly
  • 3. Cook second mixture to hard ball stage; slowly add to egg mixture, beating constantly.
  • 4. Continue beating until it holds a shape. Add nuts and vanilla. If too thick, add 1 Tablespoon of boiling water. Drop by teaspoon onto wax paper; swirl top. Work fast!
  • 5. Note: I find this a lot easier to make when you have help. My daughter helps me when I make this candy.

NEVER FAIL SWEET RYE BREAD

This is a very good bread and its really not that hard to make. I got this recipe from an old cook book called Favorite Recipes of Home Economic Teachers dated back from 1965. This recipe was submitted by a teacher named Sylvia Quie of Rosemount Jr. High in Rosemount , Minnesota. This is a net picture.

1/3 c molasses
1/3 c white corn syrup
1/2 c brown sugar
2 c milk
2 Tbsp shortening
1 Tbsp salt
2 pkg yeast
1/2 c warm water
2 c rye flour
2 c white flour
cream

Steps:

  • 1. Scald and cool molasses , corn syrup , brown sugar , milk and shortening ; Add salt.
  • 2. Dissolve yeast in warm water and add molasses mixture.
  • 3. Stir in flour to make a stiff dough. Let rise until double in bulk.
  • 4. Knead well using as little flour as possible.
  • 5. Shape into 2 loaves and place in greased loaf pans.
  • 6. Cover and let rise until doubled in bulk.
  • 7. Bake @ 425° for 30 minutes.
  • 8. Reduce heat to 325° for 35 minutes.
  • 9. Place on rack to cool , brush with cream while still warm.

2 1/2 cups sugar
1/4 cup butter or 1/4 cup margarine
1 (5 1/3 ounce) can evaporated milk
1 (7 1/2 ounce) jar marshmallow cream
3/4 teaspoon salt
9 ounces peanut butter

Steps:

  • Grease a 9 inch square pan & set it aside. (I use an 8x8 tin & don't grease & it works fine).
  • In a large sauce pan combine the first 5 ingredients. Stir over low heat until blended.
  • Over medium heat, bring to a full rolling boil being careful not to mistake escaping air bubbles for boiling. Boil slowly, stirring constantly for 5 minutes. (once it starts to boil I turn the timer on for 5 minutes & turn the heat to about 6 or 7 on the burner.).
  • Remove from heat, stir in peanut butter untill blended.
  • Turn into greased pan & cool.
