AUTHENTIC ITALIAN PIZZA DOUGH RECIPE
This simple and quick authentic Italian pizza dough recipe will make you wish you would have discovered it earlier.

- To prepare the dough for the pizza, start pouring the flour in a large mixer bowl.
- In a small bowl add luke-warm water and then add the yeast, mixing gently until the yeast is dissolved.
- Turn the mixer on with the hook mounted on medium-to-low speed and start pouring the water little by little, making sure you wait for the previous dose to be absorbed by the flour.
- Keep kneading until the dough gets smooth and homogeneous. When it gets to that point, keep kneading for about 15/20 minutes.
- Add the salt and keep the mixer running until the salt is fully combined with the dough.
- When the salt is fully absorbed, remove the dough from the mixer and knead with your hands until you get a large ball.
- Place it in a large bowl, cover with foil or a clean humid cloth, then let it rise in the oven with the light on.
- Wait until the mixture has at least doubled in volume (after 1.5 h). Ideally, you should let it triple in size (at least 3 hours).
- Once the dough has risen, transfer it on a work surface.
- Divide it into 4 equal parts and shape them as balls using your hands. Once done, cover them with a clean cloth and let them stand for 30 minutes at room temperature, before using them to make your pizzas.

PIZZA FROM NAPLES: PIZZA ALLA NEAPOLETANA
Steps:
- Preheat oven 450 degrees F.
- Dissolve yeast in water. Pour flour into a mound onto the counter. Add dissolved yeast, salt, and olive oil to center. Work in flour from outside into liquid with fork until it resembles a dough. Work in rest of flour by hand. Leave 1 tablespoon flour unincorporated. Place dough in bowl. Sprinkle with leftover flour. Cover with dishtowel. Let rest for about 1 hour at room temperature, until double in size.
- Pass tomatoes through food mill using smallest holes into small bowl. Set aside.
- When dough is ready, place heavy aluminum foil on a pizza board. Oil it with 1 tablespoon olive oil. Spread dough on foil, using fingertips to about 16 inches by 14 inches. Spread on pureed tomatoes. Sprinkle on mozzarella. Distribute anchovies and capers. Add salt, pepper, and oregano. Drizzle on remaining 1 1/2 tablespoons olive oil.
- Bake on middle shelf for 35 minutes or until crisp. Remove. Slice and serve.

Steps:
- Combine sugar, olive oil, yeast, and 2 cups cold water in bowl of a stand mixer fitted with a dough hook.
- Let sit until foamy, about 8-10 minutes.
- Mix flour and salt in a bowl.
- With motor running, slowly add flour mixture.
- Mix until a smooth dough forms, about 8-10 minutes.
- Transfer dough to a greased baking sheet.
- Cover with plastic wrap.
- Let sit at room temperature 1 hour.
- Divide dough into 4 balls.
- Transfer to a greased 9 inch by 13 inch dish.
- Brush tops with olive oil.
- Cover with plastic wrap.
- Refrigerate for 48 hours. Makes four 12 oz balls.

- Sprinkle the yeast over the water (in a bowl); let stand 1 minute, or until the yeast is creamy; stir until the yeast dissolves.
- In a large bowl, combine the cake flour, 2 ½ cups all-purpose flour, and the salt.
- Add the yeast mixture to the flour; stir until a soft dough forms.
- Turn the dough out onto a lightly floured surface and knead, adding more flour if necessary, until smooth and elastic, about 10 minutes.
- Lightly coat a large bowl with oil; place the dough in the bowl, turning it to oil the top.
- Cover with plastic wrap; place in a warm, draft-free place and let rise until doubled in size, about 1 ½ hours.
- Flatten dough with your fist.
- Cut the dough into 2 to 4 pieces and shape the pieces into balls; dust the tops with flour.
- Place the balls on floured surface and cover each with plastic wrap, allowing room for the dough to expand; let rise 60-90 minutes, or until doubled.
- Shape and bake the pizzas as directed.

- Day 1: Make the starter. Mix everything together in the bowl of an electric mixer, crumbling in the yeast if it’s fresh or sprinkling the dry yeast over the water. Mix just long enough to make sure all the flour is wet. The starter will be wet and sticky. Cover tightly with plastic wrap and let the starter rest at room temperature (about 70ºF/21ºC) for 24 hours.
- Day 2: Make the dough. By this time, the starter should be bubbly and smell like sex. For the dough, pour the water into a small bowl, crumble in the yeast, and whisk them together until no lumps remain; or, if using dry yeast, you can just sprinkle the yeast over the starter.
- Mix and knead. Add the water (or water/yeast mixture) to the starter and then the flour, and then the salt. Attach the dough hook and mix on low speed for 8 minutes. Switch to medium-low speed and mix for another 4 minutes. The dough should be somewhat loose, since it has a fair amount of water in it. But if you’re mixer is less than 600 watts and the mixer is straining, remove half of the dough and mix the dough in 2 batches to avoid burning out your mixer motor. Recombine the dough at the end of mixing both batches.
- Ferment. Cover tightly and let the dough ferment in the refrigerator until it proofs, rises, and almost doubles in size, at least 2 hours or up to 24 hours for more flavor. You could also let the dough rise at room temperature for 5 to 6 hours if you’re pressed for time.
