MARTIAN COOKIES (ZUCCHINI & LOTS OF OTHER STUFF!)

I found these online many years ago. I think they are called martian cookies because of the green zucchini flecks. My husband loves them and has asked for them repeatedly, but I had lost the recipe. I haven't made them in awhile and therefore the serving size is approximate.

1/2 cup butter
3/4 cup sugar
1 egg
1/2 teaspoon vanilla
1 1/2 cups flour
1 teaspoon cinnamon
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup quick-cooking oatmeal
1 cup chopped nuts
1 cup coarsely shredded unpeeled zucchini
1/2 cup chocolate chips
1/2 cup butterscotch chips

Steps:

  • Preheat the oven to 350.
  • Beat the butter until soft.
  • Add the sugar and beat until fluffy.
  • Add the eggs& vanilla and beat it all well.
  • In another bowl mix the flour, cinnamon, baking soda and salt.
  • Using a mixer on low add the flour mixture to the butter mixture.
  • Beat until blended.
  • Use a spoon to add the rest of the ingredients.
  • Drop onto an ungreased cookie sheet and bake for 10-12 minutes or until they are brown.

I love my Recipe #78009 as does my husband, but it has a lot more butter then really I want to use on a regular basis. A gift of some zucchinis prompted me to try and reduce the fat a little. This has not become a health cookie, but they tasted quite good and I didn't want to lose my proportions. You might also notice that this batch is double the original. It's because I usually double it plus I noticed in reviews that some others do too. I made these really big and so only got about 55 cookies. If you make them smaller you will, of course, get more cookies!

5 tablespoons butter
1/2 cup unsweetened applesauce
1/8 cup unsweetened applesauce
1/2 cup Splenda sugar substitute
1/2 cup unrefined unbleached cane sugar
1/2 cup white sugar
1 teaspoon vanilla
2 cups whole wheat pastry flour
1 cup white bean flour
4 egg whites
2 teaspoons cinnamon
1 teaspoon baking soda
1 teaspoon salt
2 cups quick-cooking oatmeal
2 cups coarsely shredded unpeeled zucchini
1 cup chocolate chips
1 cup butterscotch chips

Steps:

  • Preheat the oven to 350°F.
  • With a mixer blend the butter and applesauce. Add the sugars and the Splenda and beat well. It will never get fluffy and it might have little specks of butter in with the applesauce. This is just fine.
  • Add the egg whites and the vanilla and mix well.
  • Add the 2 flours, the cinnamon, the baking soda, and the salt. Using the low setting on the mixer blend in the flour.
  • Using a spoon add the oatmeal, zucchini, and chips. (I ran out of chocolate and used more butterscotch. Use what you would like to end up with 2 cups of chips).
  • Drop onto an ungreased cookie sheet and bake for 12-14 minutes or until they are starting to brown.

Recently in the mood to make oatmeal cookies and was pleasantly surprised to find a recipe that used reduced fat margarine or butter. Adapted to suit my tastes, this cookie is soft and moist. For a crisper cookie bake at 325 degrees. Just know they won't stay crispy for more than a day, if they last that long.

6 tablespoons reduced fat margarine or 6 tablespoons light butter
3/4 cup brown sugar (I used 1/4 cup brown sugar Splenda and 1/4 cup brown sugar with very good results)
1 egg white
1 teaspoon vanilla extract
1 cup whole wheat flour
1 cup quick-cooking oats
1/2 teaspoon baking soda
3/4 teaspoon cinnamon
1/4 teaspoon ground ginger
1/4 cup raisins or 1/4 cup currants
1/4 cup dried cranberries, chopped (or use more raisins)
1/4 cup chopped walnuts (optional)
cooking spray

Steps:

  • Preheat oven to 300 degrees. Prepare cooking sheet with a light coat of cooking spray or parchment paper.
  • Using a mixer, blend together the margarine/butter, sugar, extract and egg white in a medium sized bowl.
  • Combine oatmeal, flour, baking soda, cinnamon, and ginger. Mix into the wet ingredients.
  • Stir in by hand the cranberries, raisins and nuts (if using).
  • Drop mounded tablespoons of dough onto the prepared cookie sheets. Bake for 16-18 minutes. Lightly flaten the dough with the back of a spoon.
  • Remove from the oven and allow the cookies to rest for 2 minutes. Cookies should be lightly browned on the edges. Transfer to wire racks and allow the cookies to cool.
  • Serve or store in an air tight container.

These were advertised as the best tasting low fat chocolate chip cookies ever. Certainly caught my eye. While these are not really lowfat for me, the are certainly lower than your usually cookie.

16 tablespoons light butter, such as Smart Balance or Land O'Lakes Light
1 egg
2 egg whites
1 1/4 teaspoons vanilla extract
1/3 cup sugar
1/2 cup brown sugar, packed
1 1/2 cups unbleached flour
1/2 cup ground oatmeal (measure after grounding the oats to a coarse flour consistency)
1 teaspoon baking soda
10 ounces semi-sweet chocolate chips, good quality (I plan to chop up dark Dove bars)
1/4 cup chopped walnuts (optional)
1/4 teaspoon salt, to bring out a bit more flavor

Steps:

  • Preheat oven to 350 degrees Fahrenheit.
  • Cream the butter and both sugars in a large bowl. Beat with electric mixer until smooth. Add the egg, egg whites, salt and the vanilla. Beat well.
  • In a smaller bowl, combine the dry ingredients (flour, ground oatmeal and baking soda). Slowly add the dry items into the larger bowl and beat with electric mixer until batter is smooth and creamy. Fold in entire bag of chocolate chips, and if you like add the walnuts.
  • Drop dough by large teaspoons (or scant Tablespoons) onto cookie sheet and bake for 11 minutes (the time REALLY depends on your oven so watch that first batch!).

We had a cooking class at Children's Hospital in Orange, CA. These were a favorite for the patients and adults. You should have been there to smell the wonderful scent of cookies right out of the oven and see the children's faces!!! I think these are called martian cookies because of the green flecks, and they are out of this world!!

½ cup butter
¾ cup white sugar
1 egg
½ teaspoon vanilla extract
1 ½ cups all-purpose flour
1 teaspoon ground cinnamon
½ teaspoon baking soda
½ teaspoon salt
1 cup quick cooking oats
1 cup grated zucchini
1 cup chopped walnuts
½ cup semisweet chocolate chips
½ cup butterscotch chips

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a large mixing bowl beat butter until soft, add sugar, and beat until fluffy. Add egg and vanilla, beat well.
  • In a medium bowl stir together flour, cinnamon, baking soda, and salt. With mixer on low speed, gradually add four mixture to butter mixture, beat until well mixed. With a wooden spoon, stir in oats, zucchini, walnuts or pecans, chocolate and butterscotch pieces.
  • Drop by rounded teaspoons about 2 inches apart onto ungreased cookie sheets. Bake for 10-12 minutes or until golden brown. Cool sheets and then cookies on a cooling rack. ENJOY!

Also, they have some omega 3 from the walnuts and some folic acid from the wheat germ.

1/4 cup butter, softened
1/2 cup brown sugar
1/4 cup granulated sugar
1 teaspoon baking powder
1/4 teaspoon baking soda

2 eggs
1 3/4 cups flour
2 cups rolled oats
1 cup unsweetened applesauce
2 tablespoons wheat germ
1/4 cup shredded wheat cereal, crushed
2 tablespoons walnuts
1/4 cup raisins

Steps:

  • Mix softened butter and applesauce together with mixer. Add egg, baking powder, baking soda, cinnamon, cloves, brown sugar, and granulated white sugar, mix on low-medium for a couple minutes.
  • In separate bowl mix up dry ingredients: rolled oats, flour, wheat germ, and crushed Shredded Wheat Cereal, (set walnuts and raisins to the side).
  • Add the dry ingredients to the wet ingredients using the mixer until they cannot be mixed with mixer and then stir in with spoon.
  • Fold in nuts and raisins last.
  • Bake at 375°F on an ungreased cookie sheet for 8-10 minutes.
  • Makes 24 cookies (medium sized cookies).
