GRANDMA'S EASY POTATO ROLLS
These fluffy rolls (King Arthur Baking) are easy to mix up in a jiffy, since they take potato flour instead of mashed potatoes (potato flakes can be substituted). I mix them in my bread machine and the dough is silky and easy to shape. They turn out "picture perfect." They work out perfectly if you shape into 16 balls and put in 2 round pans (8 each).

Steps:
- Mix and knead together all ingredients in bread machine (or in mixer).
- If mixing by hand, let dough rise about 90 minutes (or follow your bread machine's dough cycle).
- Your dough might not have risen exactly double.
- Transfer the dough to a lightly greased work surface and divide it into 16 pieces.
- Round each piece into a smooth ball.
- Place the balls in a 9x 13 pan, or 2 9 inch round pans, or separately on cookie sheet.
- Cover the pan and let the rolls rise for about 1 hour or until doubled in bulk.
- Preheat the oven to 325.
- Bake the rolls for 30 minutes (tenting lightly with aluminum foil after 20 minutes to prevent overbrowning).
- Rolls should be golden brown when done. Brush with additional melted butter.
- Let cool slightly and turn out on a rack to cool.
MY GRANDMA'S POTATO ROLLS OR POTATO BREAD (FOR BREAD MACHINE)
This is my Grandma's recipe and it is DELISH! I am not sure where she got it from, but these rolls have been a tradition in our family for as long as I can remember. This recipe uses REAL mashed potatoes (not instant flakes). So, when you plan to make this be sure to reserve 1/2 to 1 c. of the mashed potatoes you served at dinner the night before!! Today I was hungry for these rolls but didn't feel like rolling out dough, so I attempted to make the recipe (cut in half) in my bread machine to make a loaf of bread instead....PERFECT results! I have listed the ingredients the way my bread machine lists them, but do be sure to check manufacturer's instructions on the correct order of ingredients for your specific machine. I hope everyone enjoys this as much as our family does. Below are both the rolls and the bread machine versions of this recipe.

Steps:
- If making POTATO ROLLS: Preheat oven to 350°F.
- In a large mixing bowl, dissolve yeast in 1 cup warm water. Allow the yeast to activate and then mix in sugar or honey.
- Add mashed potatoes, vegetable oil, eggs and salt. Use mixer or bread hooks.
- Add flour one cup at a time stopping at 5 1/2 cups. Slowly add remaining flour until the dough is only slightly sticky to the touch. The dough should be workable but not dry.
- Place in a greased bowl and cover with a towel. Allow to rise in a warm place until doubled in size, or it can sit overnight at room temperature.
- Punch down and then roll dough out on floured surface to 1/2" thickness.
- Use a canning jar ring to cut rolls - should make 30-36 rolls.
- Place on a greased pan and allow to rise till almost doubled.
- Bake in a preheated 350°F oven 12-15 minutes or until lightly browned.
- If desired, slather outside tops with butter while still warm.
- Enjoy!
- NOTE: Prep time does not include rise times as they will vary.
- If making POTATO BREAD: Place into bread pan in order as listed above OR as per manufacturer's guidelines.
- Set for 1 1/2 lb. bread loaf and start bread machine.
- Walk away until you hear the "ding" of the bread machine - approximately 3 hours later.
- Remove from pan and slather outside of the loaf with butter while still warm from machine.
- Enjoy!
SPIRAL HERB POTATO BREAD (BREAD MACHINE)
This bread is wonderful! The potato water makes the loaf soft and tall, and the herb spiral is very pretty! Potato water is water that is used to boil potatoes in .. You can use letover mashed potatoes for this, just make sure they are at room temperature .. This is my own recipe and I love it!

- Cool potato water to 80°F, if using water then heat in the microwave for 30 seconds.
- Add bread ingredients to the bread machine in the order recommended by the manufacturer.
- Set Cycle: Dough, Size: 2 lb.
- After about 5 minutes, check the consistency of the dough; if the dough is too dry add a tablespoon of water at a time, if too wet add a tablespoon of flour at a time, until the dough is smooth and slightly sticky when you press it.
- Prepare the herb mixture: melt the butter in a saucepan, add the garlic, green onions and parsley, and cook for 2 or 3 minutes; cool completely.
- Spray two 9x5 inch pans with cooking spray, preheat oven to 350°F.
- When the cycle is finished, take the dough out and knead to remove large air pockets.
- On a lightly floured surface, roll dough into an 11x24 inch rectangle, spread with herb mixture, leaving about 2 inches at one of the 11 inch ends.
- Roll bread dough from the other end, pinch closed.
- Cut dough in half, place in prepared pans seam side down; leave to rise in a warm place until doubled, about 45 minutes.
- Bake until browned, about 30 minutes.

OLD FASHIONED MASHED POTATO ROLLS
These rolls are perfection! They are light and fluffy and has that wonderful yeasty aroma of bread baking. There are instructions for both the traditional kneading and using the bread machine technique. The cloverleaf pattern looks so elegant and yet is so easy to shape that even your small kids could help. To get a tender soft top, brush tops of bread with butter as soon as it comes out of the oven. Note that bread coming out of the oven has a harder crust that when it cools. To soften the crust even more, cover bread lightly with a clean tea towel as it cools.

- In a small saucepan, heat together milk, potato and shortening until the ingredients have melted. In a large bowl, stir together 3-1/2 cups of the flour, sugar, yeast and salt; stir in the milk mixture and egg. With a wooden spoon, gradually stir in enough of the remaining flour to make soft dough, mixing with hands if necessary.
- Turn out dough onto lightly floured surface; knead for 8 - 10 minutes or until smooth and elastic. Cover with a tea towel; let rest for 10 minutes.
- To make cloverleaf buns, pinch enough dough and shape into a small ball. Arrange 3 balls in one muffin cups that have been sprayed with Pam. Continue until you have shaped 18 muffin cups. Cover and let rise in warm place until doubled in bulk, 30 - 60 minutes. (Note: I sometimes cut the dough in half and will do half in muffin cups and half in a 8" x 8" square pan).
- Brush with butter. Bake in centre of 400 oven for 10 - 12 minutes or until golden brown.
- Bread Machine Method: Use 4-1/2 cups flour. Into pan of machine, add in order potatoes, milk, egg, shortening, sugar, salt, flour and yeast. Choose dough setting. Remove from machine; shape and bake as directed.
- Butter Mashed Potato Rolls: To get that rich buttery taste, drizzle each bun with melted butter then cover with clean tea towel. These buns come out rich and decadent.
