MUM'S HALF HOUR PUDDING

This was so good :) The sauce is like warm caramel.

Number Of Ingredients 11

CAKE
1/3 c brown sugar, firmly packed
1 c raisins (just regular sunmaid raisins)
1 c all purpose flour
1 tsp baking powder
pinch salt
1/2 c sour milk (buttermilk substitute) * to make sour milk, add 1 tbsp vinegar to ½ cup milk and let stand until it thickens, then add to your dry ingredients.
SAUCE
1 1/3 c boiling water
1 c brown sugar, firmly packed
1 tsp vanilla extract

Steps:

  • 1. CAKE: Mix dry ingredients and raisins in a bowl. Put this mix into a greased pudding baking dish. (small round casserole dish).
  • 2. SAUCE: Pour 1 1/3 cups boiling water into a heat-safe bowl, add 1 cup brown sugar and 1 tsp vanilla. Mix this together and pour over batter.
  • 3. Bake in moderate oven for 30 minutes or so. (Mum says moderate oven is about 350F)

2 cups boiling water

1 tablespoon butter or 1 tablespoon margarine

Steps:

  • Mix the first 8 ingredients well and put in a greased baking dish.
  • Mix the last 3 ingredients and pour over batter.
  • Bake 25-30 minutes at 350°F in a 2 1/2 quart casserole dish that has been sprayed with vegetable oil spray.
  • Serve hot with ice cream.

This was my Great Grandmother's recipe and has been handed down 3 generations, it is a quick and easy way to have something nice after dinner when there isn't alot of time. Also a huge comfort food for me.

This is another old recipe that has been revived....simple , delicious and my favorite thing....easy!!!

2 c flour
1/4 c butter
2 tsp baking powder
1/2 tsp salt
1/2 c sugar
1 c milk
1/2 c raisins (optional)

Steps:

  • 1. Mix a ll dry ingredients, rubbing butter into flour, add milk. Mix well. Drop in spoonfuls into a greased cake pan. Mix together: 1 cup brown sugar 1/2 cup butter 1 1/2 cup boiling water 1 tsp vanilla Pour the sauce gently over the batter . Bake at 375 degrees till brown/ the pudding rises to the top and leaves a taffy sauce base. Delicious warm with ice cream or whipping cream.

Yield Makes 1 x 2l/3.5 pint and 1 x 1l/1.75 pint pudding

Number Of Ingredients 15

450g white breadcrumbs
350g golden caster sugar
225g vegetarian suet
100g self-raising flour
50g almonds , roughly chopped
225g currants
225g sultanas
225g raisins
175g mixed peel
1 tsp each mixed spice , ground ginger and grated nutmeg
2 tsp bicarbonate of soda
2 eggs
2 tbsp treacle
zest and juice 1 lemon
zest and juice 1 orange

Steps:

  • Place all the ingredients, except the eggs, treacle and lemon and orange juice, into your largest bowl with 1 tsp salt, then mix. Add the remaining ingredients along with 700ml water, then mix to a consistency that drops off your spoon. Cover and leave in a cool place overnight. The mixture will become firm.
  • The next day, add enough water to bring the mix back to a dropping consistency, then spoon into greased pudding basins - we used a 2 litre and a 1 litre. Cover with pleated greaseproof paper and foil, and secure with string.
  • Lower the puddings into a saucepan with upturned saucers or scrunched-up bits of foil in the bottom (so the puds don't touch the bottom), then fill with boiling water from the kettle until it comes halfway up the sides of the bowl. Simmer the smaller pudding for 2-2½ hrs and the larger one for 3-3½ hrs. Cool, wrap well in foil and chill for up to 3 days.

My Mom used to make this and I still make this pudding-like cake. During the baking the batter rises to the top and a pudding like sauce forms underneath the crust. There is also a lemon version.

1 cup all-purpose flour
⅓ cup white sugar
1 teaspoon baking powder
½ cup raisins
½ cup milk
1 cup packed brown sugar
2 cups boiling water
1 tablespoon butter
1 teaspoon vanilla extract

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Butter one 2 quart casserole dish.
  • Sift the flour, white sugar and baking powder together. Add the raisins and stir in the milk. Spoon batter into the prepared dish.
  • Combine the brown sugar, boiling water, butter and vanilla. Gently pour over the batter. Do not stir.
  • Bake at 350 degrees F (175 degrees C) for 30 minutes. Serve warm.

Steps:

  • soak the bread in the milk for 30mins/1 hr.
  • squeeze out the bread
  • mix all the other ingredients with the sloppy bread leaving the flour til last, add just enough to help bind it all
  • lightly butter a roasting tin. Put the mixture in and smooth it down, then run a fork over it and sprinkle it with a little sugar
  • bake in the oven fan 140 for an hour or so till browning on top. Don't overcook it or it'll dry it out. Enjoy hot or cold.
