I got this on a card at the Taste of Home Cooking School. It's from the American Egg Board and I'm putting it here for safekeeping. The card says that you can bake these and refrigerate and rewarm in the microwave to an internal temperature of 165F.

6 eggs
1/2 cup milk
1/4 teaspoon salt
1/8 teaspoon pepper
4 ounces shredded cheddar cheese
1 cup chopped zucchini
1/4 cup chopped sweet red pepper
2 tablespoons chopped red onions

Steps:

  • Heat oven to 350°F Beat eggs, milk, salt and pepper in a medium bowl until blended. Add cheese, zucchini, sweet pepper and onion; mix well. Spoon evenly into 12 greased muffin cups, about 1/4 cup each.
  • Bake in 350F oven until just set, about 20 to 22 minutes. Cool on rack 5 minutes. Remove from cups; serve warm.

1 cup chopped fresh asparagus
¼ cup chopped green bell pepper
2 tablespoons chopped red onion
6 eggs
½ cup milk
¼ teaspoon salt
⅛ teaspoon ground black pepper
1 cup shredded Cheddar cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Spray 12 muffin cups with cooking spray.
  • Heat olive oil in a skillet over medium heat; cook and stir asparagus, green bell pepper, and onion in the hot oil until softened, 5 to 10 minutes.
  • Whisk eggs, milk, salt, and black pepper together in a bowl. Mix cooked vegetables and Cheddar cheese into egg mixture. Spoon about 1/4 cup mixture into each muffin cup.
  • Bake in the preheated oven until frittatas are set in the middle and lightly browned, about 20 minutes.

Steps:

  • Preheat oven to 375°. Spray a 12-cup muffin tin with cooking spray and set aside.
  • Meanwhile, brown sausage in a large skillet over medium heat until golden, breaking up the meat with a wooden spoon. Drain meat on paper towels.
  • In a large bowl, whisk eggs, milk, cheeses, salt and pepper.
  • Divide egg mixture between the muffin tins. Top each serving with roasted red peppers, sausage, and basil. Bake until the eggs are set, 12 to 15 minutes. Let cool slightly before serving.

Steps:

  • Preheat the oven to 375 degrees F.
  • Spray 2 mini muffin tins (each with 24 cups) with nonstick spray. Whisk the eggs, milk, pepper, and salt in a large bowl to blend well. Stir in the ham, cheese, and parsley. Fill prepared muffin cups almost to the top with the egg mixture. Bake until the egg mixture puffs and is just set in the center, about 8 to 10 minutes. Steps:

  • Preheat the oven to 350 degrees F.
  • Add a drizzle of olive oil in a pan over high heat. Once hot, add the sausage and cook, breaking it up as it browns, 5 to 7 minutes. Add the chopped peppers and cook until soft, about 5 minutes more. Remove from heat and let cool.

1/2 cup grated parmesan cheese

1 teaspoon ground cumin
1/4 teaspoon fresh ground black pepper
1/2 teaspoon lemon pepper

Steps:

  • Preheat oven to oven to 375 degrees F; lightly grease a 12-cup muffin tin.
  • In a bowl, combine the thawed and drained spinach, ricotta, sour cream, Parmesan, and cheddar cheese.
  • In a separate bowl, beat the eggs, then add in the milk, hot sauce, cumin, black pepper, lemon pepper, and parsley and whisk together well.
  • Stir the egg mixture into the spinach and cheese mixture and combine thoroughly.
  • Pour or spoon the batter into each cup of the buttered muffin tin, then bake in 375 degrees F oven for 20 to 25 minutes.

1 tsp olive oil
100g diced pancetta or rindless streaky bacon
8 eggs
350ml double cream
2 tbsp each finely chopped fresh parsley and chives
100g parmesan , grated
butter , for the tin

Steps:

  • On the day, reheat the oven to 180C/Gas 4/fan oven 160C. Heat the olive oil in a frying pan over a medium heat. Tip in the pancetta and fry for 4 minutes until crisp. Drain and cool on kitchen paper.
  • Whisk the eggs with the cream and plenty of salt and pepper. Add the herbs, parmesan and cooled pancetta; mix again.
  • Butter a 12-hole muffin tin. Ladle in the mixture to two-thirds fill each hole (you'll have leftovers for another batch). Bake for 20-25 minutes until firm. Transfer to a rack. Cool while cooking the remaining frittatas. Make up to 4 hours ahead.
  • To serve, heat through, loosely wrapped in foil, in a preheated oven at 180C/Gas 4/fan oven 160C, for 10-15 minutes. Serve hot, warm or cold.
