2 teaspoons butter
1/4 cup flax seed meal
1/4 teaspoon baking powder
1 egg
1 g artificial sweetener (I prefer Splenda)

Steps:

  • In a teacup or 2 cup glass measuring cup, melt 1 or 2 tsp butter.
  • Mix in flax seed meal, baking powder, egg, and sweetener (or 1 tablespoons SF syrup such as caramel.).
  • Microwave on high for 1 minute. Turn out and let cool.
  • Suggestions: Put cinnamon in it or tweak it with other syrup flavors.

1/4 cup flax seed meal (i like golden)
1/2 teaspoon baking powder
2 -4 teaspoons Splenda sugar substitute
1/2 teaspoon cinnamon
1/2 teaspoon pumpkin pie spice
2 1/2 tablespoons pumpkin puree (canned)
1 egg
1 ounce cream cheese
1 teaspoon almond milk or 1 teaspoon cream
3 tablespoons Splenda sugar substitute (or more or less, depends on your taste)

Steps:

  • Mix all together in a mug and microwave for 1 min 40 sec! for frosting just mix together as well. spread muffin with with frosting. YUM!
  • tip: if you forget to get your cream cheese out to soften, microwave it for about 15 seconds and it wiil work fine.
  • There are approx 25 carbs in this.

I have finally perfected the healthy muffin in a cup recipe, I hope you agree. Less than 6 net carbs per muffin!

1/8 cup ground flax seeds
1/8 cup almond flour
1 teaspoon cinnamon
1 teaspoon cocoa powder
1 teaspoon baking powder
1 teaspoon Splenda sugar substitute (or to taste of your favorite sweetener)
1/4 cup chopped almonds or 1/4 cup your favorite nuts
1/2 tablespoon coconut oil, melted
1 egg, slightly beaten

Steps:

  • Put coconut oil in mug and microwave for about 15 seconds, just until it melts.
  • Add all dry ingredients and nuts and stir with a fork until combined.
  • Add egg and stir until completely incorporated.
  • Microwave on full power for one minute.
  • Invert onto plate and serve with butter or cream cheese, ENJOY!

  • Mix thoroughly all the ingredients in a Mug and microwave for 2 minutes.
  • And Viola you have a Delicious "Muffin in a Mug" in a few minutes.
  • Make this with the Kids and let their imaginations run wild.
  • Be careful to balance the dry and wet ingredients to the same volume as above.

Got this recipe from a message board for low carb'ers and wanted it here for my reference. Sadly, I don't know who the originator of this recipe is. This is quick easy, healthy, very low carb and high fiber. Works great as a sweet muffin as well as savory muffin (just omit the sweetener - goes well with soups). Original called for one packet of splenda as a sweetener. I only use stevia. Add in options; fruits, nuts, flavored sweeteners/syrups, cheese, bits of ham, vegetables or spices ... get creative and enjoy!

  • If using frozen berries, microwave for 1:30 on high.
  • Smooth on some butter and enjoy!
  • It will be moist at first, but as the muffin cools it goes away.
