Number Of Ingredients 9

1 cup canola oil
2 tablespoons cider vinegar or 2 tablespoons lemon juice
2 teaspoons honey
1/4 cup spinach leaves, packed
1/4 cup basil leaves, loosely packed
2 teaspoons Dijon mustard
1/4 teaspoon salt, to taste
black pepper
1 cup milk or 1 cup buttermilk

Steps:

  • Puree all ingredients in blender, except milk.
  • While the blender is still running, slowly add the milk in a stream until dressing thickens.
  • Stop the blender when the dressing thickens or the oil may seperate and the dressing will become thin.
  • This will store for about a week in the frige; shake before use if it looks like it is seperating.

There's no need to limit this dressing to Caesar salad--- It is also wonderful for any steamed or raw vegetables, particularly asparagus,articokes, and new potatoes. Transform it into a dip for crudites by adding 1cup of low fat yogurt. This recipe comes from the Moosewood Restaurtant Cooks at Home cookbook. This cookbook has recipes of a healthier version. You may find this recipe somewhat different than the Ceasar salad that you may be accustomed to.

2 hard-boiled eggs
1/3 cup olive oil (preferably extra-virgin)
3 tablespoons fresh lemon juice
1/2 teaspoon salt
1 teaspoon Dijon mustard
1 garlic clove, minced or pressed
ground black pepper, to taste

Steps:

  • Peel and chop the hard boiled eggs.
  • Place all of the ingredients in a blender and puree until smooth.
  • Covered and refrigerated this dressing will keep for about 5 days.

2 sun-dried tomatoes, softened (not packed in oil)
3 tablespoons olive oil
2 tablespoons low-fat mayonnaise
1 tablespoon Dijon mustard
3 tablespoons fresh lemon juice
1 garlic clove, minced
1 teaspoon capers
1 teaspoon capers brine
1/2 teaspoon salt
2 -3 kalamata olives, pitted and chopped

Steps:

  • In a small bowl or ramekin, cover the sun-dried tomatoes with 1/4 cup boiling water and set aside to soak for 10 minutes. Drain and roughly chop the softened sun-dried tomatoes.
  • Place all ingredients in a blender and whirl until smooth.
  • Drizzle dressing on romaine lettuce and toss with optional croutons and Parmesan.
  • Note: I didn't have a lemon so used 3 tablespoons of the tomato water and a couple additional capers.

BALINESE RICE SALAD

One of my favorite salads in the Moosewood Daily Special cookbook. It can be made quickly with leftover rice and served as a main course or side dish that is perfect for last minute picnic or easy summer supper.

1/2 cup prepared mango chutney
2 tablespoons cider vinegar
2 tablespoons vegetable oil
2 tablespoons unsweetened pineapple or 2 tablespoons orange juice
1 clove garlic, minced
1 tablespoon soy sauce
1 teaspoon salt
1 pinch cayenne
4 cups cooked brown rice
1 cup unsweetened pineapple chunks
2 scallions, sliced on the diagonal
2 stalks celery, thinly sliced on the diagonal
1 yellow bell peppers or 1 green bell pepper, seeded and chopped
1/2 cup raisins
2 cups bean sprouts (about 1/2 lb)
1 cup drained baby corn
1/2 cup toasted peanuts or 1/2 cup cashews

Steps:

  • In a blender, puree all the dressing ingredients until smooth.
  • In a large serving bowl, combine the rice, pineapple, scallions, celery, peppers, and raisins.
  • Add the dressing and toss well.
  • Gently mix the sprouts and baby corn or scatter them on tap if you prefer.
  • Garnish with nuts.
  • Serve at room temperature or chill for about 30 minutes.
  • Toast nuts in a single layer on an un-oiled baking tray at 350F for about 5 minutes, until golden.

2 large garlic cloves, chopped
2 anchovy fillets, chopped (include 1-2 teaspoons oil from the can)
2 tablespoons red wine vinegar
1 tablespoon fresh lemon juice
1 teaspoon Worcestershire sauce
1 -2 dash Tabasco sauce (or to taste)
6 tablespoons olive oil
1 egg yolk
1 pinch salt (or to taste)
1/4 cup grated parmesan cheese
coarsley ground black pepper (to taste)

Steps:

  • In a food processor process the garlic with anchovies until minced (if you have a small 4-cup processor then use it for this).
  • Add in all remaining ingredients (except the Parmesan cheese and black pepper) and process until smooth and blended (about 10 seconds).
  • Add in parmesan cheese; pulse a few times.
  • Season with fresh ground pepper to taste.
  • Cover and refrigerate until ready to use.
  • Mix well before using.

2 tablespoons canola oil
1 1/2 cups onions, chopped
1 tablespoon fresh chili pepper, seeded and minced
1 tablespoon fresh grated gingerroot
1 dash salt
1 teaspoon turmeric
1 teaspoon ground cumin
1 teaspoon ground coriander
1/2 teaspoon ground cinnamon
2 cups cubed potatoes
4 cups cauliflower florets
4 cups vegetable stock or 4 cups water
1 teaspoon salt
1/4 cup basmati rice, uncooked
1 tablespoon lemon juice
1 teaspoon sugar
3 tablespoons shopped cilantro

Steps:

  • Heat the oil in a soup pot over low heat. Add the onions, chiles and ginger and sprinkle with a dash of salt. Cook until the onions are translucent, about 10 mins or so.
  • Add the turmeric, cumin, corriander and cinnamon.
  • Add potatoes, cauliflower, stock and salt. Cover and bring to a boil.
  • Add rice (rinsed), cover and simmer 20 mins.
  • Puree soup with an immersion blender.
  • Add lemon juice, sugar and cilantro.
  • Season with salt and pepper to taste.
