SMOKED SAUSAGE, BEAN AND POTATO STEW
I made this from a bunch of things i had on hand--came out great --real comfort food and easy to make. Its a one pot meal-- I like this with a crusty loaf.

Steps:
- Chop potatoes, pepper, and onion into large chunks.
- Cut sausage into thick chunks.
- Place everything into a pot and bring to a boil.
- Turn down heat and simmer, covered, for at least an hour-more is better.
- Serve with crusty bread.

THAI RED BEAN AND SWEET POTATO STEW
I got this from an issue of Vegetarian Times when I was in college longer ago than I care to admit. It was from an article on 15 minute meals. As I recall, all of the recipes were pretty good, but I've since lost that issue and this is the only recipe I can remember. I made it for my mom and she loved it so much, it became the de rigueur Christmas Eve soup. It's stupendously easy and sooooo delicious--hearty and warming on a cold day. I only make it during the cold months because highly-flavored sweet potatoes (or yams, if that is your preference) are essential.

Steps:
- Put the sweet potatoes in a pot with enough water to cover and bring to a boil.
- Boil until tender, about 8-10 minutes depending on the size of the chunks.
- Add everything else, stir well, and heat through.
- Eat.

MONDAY NIGHT BEAN AND POTATO STEW
I created this soup one night when I was craving something warm, healthy and comforting, but a little different. This is a simple, hearty soup flavored with cumin and saffron; the broth is made rich and nutritious by using the potato cooking water. It's excellent served with a little yogurt or sour cream on the side, or with some cheesy garlic bread.

Steps:
- Boil potatoes in 5 cups of liberally salted water until just tender, about 5 minutes.
- Meanwhile, in a small saucepan, saute onion and garlic in a little olive oil until browned a bit.
- Set aside.
- Return to the potatoes: while still boiling, add tomato sauce, lentils, cumin, black pepper, and saffron.
- Add browned onions and garlic; lower heat and simmer covered for 30 minutes or until lentils are tender but not mushy.
- Stir in kidney beans, heat through, correct seasoning, and serve.

- Drain one 15 oz can of white beans into a sieve and rinse under cold running water, cut 1 large potato into pieces that are between 1/4 to 1/2 inch thick, roughly dice 1/2 of a red bell pepper, slice 1 carrot into rounds that are a 1/4 inch thick, finely dice 1/2 onion and finely mince 3 cloves of garlic
- Heat a large pan or stock pot with a medium heat and add in 2 tablespoons of extra virgin olive oil, after 2 minutes add in the diced onions, minced garlic and diced bell peppers, mix with the olive oil, after 3 minutes add in the carrots, the potatoes and the white beans, season with 1 teaspoon of sweet smoked paprika, sea salt & black pepper, gently mix together until well combined, then add in 3 cups of cold water, give it a quick mix and raise the heat to a medium-high, once it comes to a boil place a lid on the pan and lower the heat to a low-medium
- After simmering for 25 minutes, remove the lid from the pan, add in 2 cups of fresh spinach, give it a quick mix and simmer for 2 more minutes, then remove from the heat, transfer into shallows bowls, serve next to a crusty baguette, enjoy!
