Smoked Sausage, Bean and Potato Stew image

I made this from a bunch of things i had on hand--came out great --real comfort food and easy to make. Its a one pot meal-- I like this with a crusty loaf.

1 lb smoked sausage
7 yukon gold potatoes
1 large red pepper
1 large sweet onion
1 (15 ounce) can pink beans
1 cup water

Steps:

  • Chop potatoes, pepper, and onion into large chunks.
  • Cut sausage into thick chunks.
  • Place everything into a pot and bring to a boil.
  • Turn down heat and simmer, covered, for at least an hour-more is better.
  • Serve with crusty bread.

I got this from an issue of Vegetarian Times when I was in college longer ago than I care to admit. It was from an article on 15 minute meals. As I recall, all of the recipes were pretty good, but I've since lost that issue and this is the only recipe I can remember. I made it for my mom and she loved it so much, it became the de rigueur Christmas Eve soup. It's stupendously easy and sooooo delicious--hearty and warming on a cold day. I only make it during the cold months because highly-flavored sweet potatoes (or yams, if that is your preference) are essential.

1 teaspoon Thai red curry paste (more if you are a chilihead like me)
2 -3 sweet potatoes, peeled and diced
2 (16 ounce) cans red beans, drained and rinsed
1 teaspoon dried lemongrass
water

Steps:

  • Put the sweet potatoes in a pot with enough water to cover and bring to a boil.
  • Boil until tender, about 8-10 minutes depending on the size of the chunks.
  • Add everything else, stir well, and heat through.
  • Eat.

I created this soup one night when I was craving something warm, healthy and comforting, but a little different. This is a simple, hearty soup flavored with cumin and saffron; the broth is made rich and nutritious by using the potato cooking water. It's excellent served with a little yogurt or sour cream on the side, or with some cheesy garlic bread.

4 medium yukon gold potatoes, peeled and cut into 1 inch cubes
5 cups water
1 (8 ounce) can tomato sauce
1 cup dried lentils
1 small onion, chopped
2 cloves garlic, minced
2 teaspoons cumin
1/2 teaspoon black pepper
1/8 teaspoon saffron
1 (8 ounce) can kidney beans

Steps:

  • Boil potatoes in 5 cups of liberally salted water until just tender, about 5 minutes.
  • Meanwhile, in a small saucepan, saute onion and garlic in a little olive oil until browned a bit.
  • Set aside.
  • Return to the potatoes: while still boiling, add tomato sauce, lentils, cumin, black pepper, and saffron.
  • Add browned onions and garlic; lower heat and simmer covered for 30 minutes or until lentils are tender but not mushy.
  • Stir in kidney beans, heat through, correct seasoning, and serve.
