Pumpkin Black Bean Turkey Chili is a great fall chili recipe with tons of flavor!

1 tablespoon olive oil
1 large yellow onion, diced
1 poblano pepper, diced
1 large red bell pepper, diced
4 cloves minced garlic
2 tablespoons chili powder
1 tablespoon ancho chili powder
1 1/4 teaspoons cumin
1/4 teaspoon chipotle powder
1/2 teaspoon smoked paprika
1 1/2 lbs ground turkey
1/4 teaspoon dried oregano
1/4 teaspoon dried thyme
salt and pepper, to taste
2 cups beef broth
1 - 15 ounce can pumpkin puree
1 - 14.5 ounce can fire roasted diced tomatoes
1 - 6 ounce can tomato paste
2 - 15 ounce cans Bush's Black Chili Beans, undrained
1 - 15 ounce can Bush's Black Beans, drained
1 tablespoon finely minced fresh cilantro

Steps:

  • Add the oil to a large cast iron pot, such as a Le Creuset Round French Oven, and heat over medium heat.
  • Add the onions to the pan and sauté for approximately 5-7 minutes, until they are translucent.
  • Add the poblano, red bell pepper, and garlic and sauté an additional 2-3 minutes.
  • Add all of the seasonings (chili powder through smoked paprika) to the onion mixture. Cook and stir for 3 minutes.
  • Add the ground turkey, oregano, thyme, salt and pepper, and cook, breaking the meat using a spoon or spatula into small pieces.
  • Cook until the meat is completely cooked through.
  • Deglaze the pan with the beef broth, stir in the pumpkin puree, tomatoes, tomato paste, and all of the beans.
  • Bring to a boil and reduce the head to low.
  • Simmer for at least an hour, stirring periodically so it doesn't stick to the bottom.
  • Season with additional salt and pepper, if desired. Stir in cilantro. Serve.

A rich, savory pumpkin chili recipe chock full of all the best traditional chili flavors but with the added nutrition and flavor of pumpkins.

2 large yellow onions, diced
2 cups diced peppers (we used a mix of fresh red and green peppers from our garden, some sweet, some hot)
6 cloves garlic, diced
4 cups chicken broth
2 cans diced roasted tomatoes (two 15 ounce cans/jars)
4 cans organic black beans (rinsed)
2 lbs ground turkey
2 1/4 lbs frozen pumpkin puree
6 ounce tomato paste (1 small can)
3 tbsp chili powder
1 tbsp garlic powder (because it's hard to over-garlic chili)
1 tbsp onion powder (because it's hard to over-onion chili)
1 tbsp sea salt (or to taste)
4 tsp oregano
5 tsp cumin
1 tsp cayenne (or spice up to taste)
4 tbsp extra virgin olive oil (for sautéing veggies)
2 tsp cinnamon
1 tbsp cacao powder (this might sound strange, but it adds a very subtle and delicious depth to any chili recipe)

Steps:

  • Dice onions, peppers, garlic. Add onions and peppers (not garlic) to large soup pan with olive oil over medium heat. Cook until onions begin to turn translucent.
  • Add ground turkey and garlic. Cook until turkey is fully done.
  • Add all other ingredients, bring to boil for 5 minutes stirring to make sure no sticking. Then turn down to medium low heat (3.5 on our stove) and cook uncovered for 1.5-2 hours. Much of the water will evaporate providing a thicker, more flavorful chili. Tweak spices and salt as-needed to suit your tastes before serving.
  • Optional: we love garnishing our chili with the following ingredients: organic cheddar and/or pepper jack cheese, a dollop of organic sour cream, and fresh green onion or shallot leaves.

1 tablespoon olive oil
1 pound extra lean ground turkey (99%)
1 medium white onion, chopped
1 jalapeno, seeded and finely diced
3 garlic cloves, minced
2 1/2 tablespoons chili powder
1 1/2 teaspoons cumin
1/4 teaspoon red cayenne pepper
1/4 teaspoon ground cinnamon
1/8 teaspoon ground cloves
1 teaspoon salt, plus more to taste
Freshly ground black pepper
2 tablespoons pure maple syrup (or brown sugar)
1 28oz can diced tomatoes (preferably no salt added)
3/4 cup low sodium chicken broth
1 15oz can pumpkin puree (or 1 3/4 cup fresh pumpkin puree)
1 15oz can black beans, rinsed and drained
To garnish: cilantro, sour cream (or greek yogurt), guacamole and cheddar cheese

Steps:

  • Place olive oil in a large pot over medium high heat. Once oil is hot, add in onion, jalapenos and garlic. Stir and cook 2 minutes, then add in turkey, gently breaking up the meat and cooking until brown (about 5 minutes).
  • Add all of the spices to meat: chili powder, cumin, cayenne pepper, cinnamon, cloves, salt and pepper. Stir to combine and cook 30 seconds longer then transfer to a slow cooker.
  • Add the remaining ingredients to the slow cooker: maple syrup, diced tomatoes, chicken broth, pumpkin puree and black beans. Stir until well combined. Cover and cook for 6-7 hours on low or 2-3 hours on high.
  • Once chili is done, distribute into bowls (or do a meal preand top with fixin's such as cilantro, greek yogurt and cheddar cheese. (It's really, really good with a sharp cheddar!). Makes 4 servings. Double the recipe for a crowd!

I used Mom's chili recipe and added a few things of my own over the years. I put it together in the crock pot the night before, throw it in the fridge (just the crock), then before leaving for work the next morning I put the crock in the base, plug it in and it's yummy when I get home.
