KEYSHAWN'S MOM'S CANDIED YAMS
I was looking for a sweet potato dish that was quick and easy to do for Thanksgiving, as well as, a recipe that did not require oven space or time. Lucky for me, a colleague from work, gave me this recipe from www.foodtv.com. It was exactly what I was looking for.

Steps:
- Peel potatoes and cut into 2 inch cubes.
- Place potatoes in large pot, cover with sugar, brown sugar and butter cook over medium heat until potatoes are for tender (approx 20 mins) but not mushy.

EASY PAN FRIED SWEET POTATOES
These pan-fried sweet potatoes are so easy to make and taste amazing! Perfect for breakfast or as a side dish!

Steps:
- Peel the sweet potato and cut into thin slices.
- Heat the oil in a large non-stick frying pan over medium-high heat.
- Add the sweet potato slices to the frying pan. Cook, stirring every 2 minutes, for 10 minutes, or until sweet potatoes are browned and cooked through.
- Sprinkle sweet potato slices with chili powder and stir to coat. Cook for another minute, then remove from heat and serve.
FRIED SWEET POTATOES OR YAMS
A tasty side dish! Every year at my church's annual fish fry these potatoes are included on the menu. Everyone looks forward to this treat! Great with pork chops! Very easy to prepare. Cut potatoes into thick round "wheels".

Steps:
- Cut potatoes in round "wheels" about 1/2 inch thick and immediately immerse in water to not discolor.
- Drain and pat dry with paper towel. Fry on low heat until golden brown and stick tender in the middle.
- Place on paper towels and salt immediately.
- Serve and enjoy!

CRISPY YAM FRIES
Not to be confused with American sweet potatoes, West African yams are large, starchy root vegetables found at most West African, Caribbean or Latin American markets. Check the yams for freshness by pressing down on their skin before purchasing; the root should be firm with no soft spots. The brown skin peels off easily with a sharp knife or vegetable peeler to reveal a stark white flesh. These yams are larger, much starchier, denser and less fibrous than American yams or sweet potatoes. Crispy yam fries are a well-known Nigerian snack and side dish. They can be shallow-fried in oil or baked in the oven for a slightly healthier variation (see Tip). Serve fries warm with some obe ata or your favorite condiment on the side.

- Bring a large pot of water to a boil over high and season generously with salt.
- Fill a large bowl with water. Working quickly to avoid oxidation, slice off the ends of the yam and peel the brown skin. Cut the yam into 3/4-inch-thick rounds and transfer to the bowl. Once sliced and peeled, cut each piece into 1/2-inch-wide matchsticks, slicing a few rounds at a time and transferring matchsticks back to the water. (You should get about 5 to 8 sticks per piece.)
- Working in batches, drop the matchsticks into the simmering water and blanch for 2 to 3 minutes. Remove from the hot water and transfer to a rack set over a baking sheet to drain. Repeat the blanching and draining process for the remaining matchsticks.
- Fill a large skillet with 1 inch of canola oil. (You'll need about 4 cups for a 10-inch skillet.) Heat the oil over medium-high until it registers 350 degrees on an instant-read thermometer. Working in two or three batches to avoid crowding, and replenishing the oil as needed, fry the yam matchsticks, turning occasionally, until golden brown and crispy, about 10 to 12 minutes. Remove from oil and drain on a baking sheet set with paper towels or a rack. Season the fries with salt.
- Serve fries warm, with some obe ata or your preferred condiment for dipping.
SOUTHERN CANDIED YAMS
Candied yams is a old fashioned side dish that's slow cooked in a candied mixture on the stove-top with warm spices, sugar and butter.

- Scrub, peel and slice your yams into 1/2 inch rounds. In a medium pot over medium high heat, combine the sweet potatoes and the rest of the ingredients. Stir the sweet potatoes until coated in the sugar and butter mixture.
- Let it come to a boil. Cover then simmer for about 50 minutes or until the yams are nice and tender when slightly pierced with the tines of a fork or taste. If the yam is still a bit hard. Let it cook a bit longer.
- Remove the top then set stove to medium. Let the cooking liquid come to a boil. Stirring occasionally until the cooking liquid reduces about 10 minute or until the syrup coats the yams. Remove the pot with the candied yams from the stove and place them into the oven until you are ready to serve them. These taste best warm. Please share this recipe, so other people can enjoy it!
MOM'S EASY SWEET FRIED YAMS
This is easy since it uses the canned yams in syrup. My Mom would make this as a side dish for broiled fish when I was a kid. You drain the yams and heat the oil and fry them until the edges brown and crisp...very easy and good. I use Princella Cut Sweet Potatoes, cut yams in light syrup. Funny, it says sweet potatoes and yams on the can. Bruce's is another brand that I use too.

- Add the yams and let them brown on the edges and a surface.

My parents always check the discount rack at the grocery store. When there is Yams they make this. A great hot item to prepare in the summer when you are already barbecuing.

- Place in microwave and cover with wax paper.
- Microwave until cooked.
- Remove from microwave and coat with maple syrup.
- Preheat barbecue to medium and place yams on grill.
- Cook on both sides for 2 1/2 minutes occasionally brushing with more maple syrup.
- Remove and serve.

For years my mom made canned yams and baked them with marshmallows on top. This was my first experience with fresh yams and I became a convert (no more canned for me!!!) It of course is a great side dish to turkey on Thanksgiving.

MOM'S CANDIED YAMS
My mom never wrote this recipe down and I call my favorite every year for the recipe! Of course she never wrote it down either!!! This is one of those recipes that takes me back when I taste it. I'm going to do my best to write what my "Aunt Poddy" tells me every year, using the amounts as best as I can, but I will still call her every year just to have her walk me through it!!!! My brother got to taste them this year and he said it was just like mom's, so maybe I'm getting it right!!!

Steps:
- Place sweet potatoes in casserole dish, single layer.
- Using liquid from potatoes, mix in sugar, syrup, butter, cinnamon, orange juice and lemon.
- Stir over medium heat until it starts to thicken, about 15 minutes.
- Pour over potatoes, then sprinkle a bit more cinnamon over top.
- Cover and bake in 350 oven for about 25 to 30 minutes.
- Top with marshmellows and broil until brown. Watch constantly as this takes only a few minutes!
