Time 20m

Yield 6

Number Of Ingredients 5

½ cup vegetable oil
¾ cup all-purpose flour
1 teaspoon salt
1 teaspoon ground black pepper
4 cups milk

Steps:

  • Heat the oil in a large skillet over medium heat. Whisk in the flour, salt and pepper until smooth. Cook and stir over medium heat until browned, about 10 minutes. Gradually stir in milk so that no lumps form, and continue cooking and stirring until thickened. If the gravy becomes too thick, you may thin it with a little more milk.

COUNTRY GRAVY

Country Gravy image

Country gravy, also called sawmill gravy or white gravy, is a staple of hearty Southern cooking. It can be used as a creamy blanket for chicken fried steak or to accompany a plate of freshly baked biscuits at breakfast time. This recipe is a down-home classic that takes just 15 minutes to pull together.

Provided by Betty Crocker Kitchens

Categories     Condiment

Time 15m

Yield 16

Number Of Ingredients 5

1 tablespoon vegetable oil
2 tablespoons Gold Medal™ all-purpose flour
1 cup milk
1/4 teaspoon salt
1/4 teaspoon pepper

Steps:

  • After removing cooked meat from skillet or pan, add oil to drippings in skillet. Stir in flour, scraping up brown particles. Cook over medium-high heat 2 to 3 minutes, stirring constantly, until mixture is light golden brown.
  • Stir in milk. Heat over medium-high heat, stirring constantly, until mixture is boiling and thickened. If gravy is too thick, stir in more milk, 1 tablespoon at a time, until desired consistency. Stir in salt and pepper.

MOM'S CHOCOLATE GRAVY

Mom's Chocolate Gravy image

When Mom and Pop got married, Pop had to call Mamaw to get this recipe. When he was growing up, they were really poor (Papaw was a Baptist preacher and worked at various jobs. Back then life was hard for a preacher with 4 kids). This was one of their "desserts". Mom also made this when we were growing up and to this day, I still love a big hot heapin helpin. One might ask how do you eat "chocolate gravy"? With homemade "cat-head" biscuits (Mamaw called them this because she made them "big as a cat's head") or canned country-style (Do not try this with one of those flaky-type canned biscuits - it just isn't the same.) and a chunk of butter about the size of the tip of your thumb. Let it kinda melt, then eat away. This is just like any other gravy, other than the addition of the butter at the table. I eat this with milk or coffee as the beverage, as nothing else tastes good. This is Redneck comfort food at its finest! **Times and yield are approximate. Please z-mail me with what you come up with.**

Provided by Redneck Epicurean

Categories     Sauces

Time 35m

Yield 1 1/2 cups, 6 serving(s)

Number Of Ingredients 5

1 cup granulated sugar or 1 cup Splenda sugar substitute
1 tablespoon butter
1 1/2 cups milk
2 tablespoons flour
3 tablespoons unsweetened cocoa powder (we prefer Hershey's)

Steps:

  • Mix all the dry ingredients in a heavy saucepan with a whisk. Using a whisk blends everything better than a spoon. Stir in the milk.
  • Cook over medium heat stirring constantly. Remove the pot when the mixture is thick like pudding.
  • Add the butter. Stir in until completely melted. Serve over biscuits with a teaspoon of butter dolloped on top.

MOM'S BAKED FRIED CHICKEN AND GRAVY

Mom's Baked Fried Chicken and Gravy image

Provided by Pam Ross

Yield Serves 4

Number Of Ingredients 16

For the chicken
1 whole chicken, cut into parts
milk
1 stick (1/4 pound) butter
1 cup flour
1 tablespoon seasoned salt
2 teaspoons paprika
3/4 teaspoon pepper
1/2 teaspoon salt
For the gravy
2 tablespoons chopped scallion
1/2 cup chopped fresh mushrooms
3 tablespoons butter and drippings from baking dish, combined with scraped up crispy bits from chicken
2 tablespoons of the leftover flour seasoned for chicken preparation
1 cup milk
1 chicken bouillon cube (optional)

Steps:

  • Make chicken:
  • Soak chicken in milk to cover for 20 to 30 minutes. Spray a baking dish (one that will accommodate all the chicken pieces comfortably in one layer) with nonstick vegetable-oil spray.
  • Preheat oven to 400°F. Put the butter in the baking dish and heat it in the oven until the butter melts. Mix flour and seasonings together in paper sack or plastic baggie (1-gallon size). Shake each piece of chicken in seasoned flour. Place chicken pieces, skin-side down, in baking dish. Bake for 20 minutes. Turn chicken over and bake an additional 20 minutes or until cooked through and crispy. Remove chicken and set aside in a warm place.
  • Make gravy:
  • Sauté the scallions and mushrooms in the drippings over medium high heat, until soft. Mix the seasoned flour with milk first until you see no lumps. Whisk milk mixture into the sautéing onions and mushrooms. Taste and add bouillon cube, if desired (You may want to use additional milk if you do). Boil until thickened to preferred consistency. Put into a gravy dish and serve alongside the baked chicken.

4 tablespoons all-purpose flour
1 pinch salt
2 tablespoons cocoa (I use Hershey)
3 cups milk, but you can use what u like (better with whole)
1/4 cup butter
1 teaspoon vanilla extract (optional)

Steps:

  • In a saucepan combine the sugar, flour, salt and cocoa and cook over medium heat. You will be adding the milk before the dry ingredients start to really cook! :) Gradually add the milk. • I am not sure on pricise cook time!
