CHOCOLATE CHIP MERINGUE COOKIES
This was adapted from another meringue recipe that I got online. What can I say...it's all about the chocolate. I like these two ways...undercooked and chewy/crispy and dried hard and more crisp-ety. These make excellent gifts when dried all the way because they are supposed to keep a long time.

Steps:
- Preheat oven to 225 degrees.
- In a medium bowl, beat egg whites, salt, cream of tartar, vanilla and cocoa powder until soft peaks form.
- Gradually add sugar and continue to beat until meringue is stiff and glossy (about 90 seconds more after all sugar has been added). Please note that it is important to beat the whites long enough. The cookies will spread and be thinner rather than lofty (as shown in the pic) if poured on the sheet prematurely. You don't want the whites to break (start to get crumbly and break a part) .that will result in failed meringues but you are going to beat these a long time -- sometimes it takes me 5 minutes or more! A stand mixer sure is a plus here. What we are doing is incorporating air into the egg whites. That is what makes these cookies lofty, big and light in texture!
- Gently fold in the chocolate chips.
- On a parchment-lined baking sheet, drop meringue by the 1/4 cup (I like to use an ice cream scoop with a release).
- For chewy cookies with a slightly crispy outer crust: Bake until dry and slightly crispy on outside about 1 hour. Let cool on baking sheets and then remove to an airtight container with sheets of parchment paper in between layers.
- For crispy more traditional meringues, cook until dry and crispy through about 1 1/2 hours. Let cool on baking sheets. Let cool on baking sheets and then remove to an airtight container with sheets of parchment paper in between layers.

CHOCOLATE CHIP MERINGUES (USING POWDERED EGG WHITES)
This recipe is different from many other meringue recipes because it calls for powdered egg whites rather than fresh. The nuts are optional. Adapted from "Wilton Celebrate."

Steps:
- Preheat oven to 275 F.
- Beat powdered egg whites with sugar, water and flavoring on high speed of an electric mixer for 4-5 minutes or until stiff peaks form.
- Gently hand stir in chocolate chips and nuts (if using).
- Drop Tbsps of batter onto parchment-lined cookie sheets and bake for 55-60 minutes or until lightly browned and dry.
- Do not overbake.
- These only keep a few days in a wax paper lined cookie tin, so don't make too far in advance.

CHOCOLATE CHIP MERINGUE BARS
I found this recipe in a little soft cover recipe book called "Grandma's Best Desserts" put out by "Taste of Home". This recipe sounded good to me so I tried it last night and yes, I think it is really yummy. It is something a little different.

Steps:
- In a mixing bowl, cream shortening, 1/2 C brown sugar and 1/2 C sugar.
- Add egg yolks and mix well.
- Combine the water and vanilla.
- Combine flour, baking soda and salt; add to the creamed mixture alternately with with water/vanilla mixture.
- Mix well.
- Spread into a greased 15x10x1 inch baking pan.
- Sprinkle with chocolate chips.
- In a small glass or metal mixing bowl, beat egg whites until soft peaks form.
- Add the remaining brown sugar, 2 tablespoons at a time, beating well after each addition.
- Beat until stiff peaks form.
- Spread over chocolate chips.
- Top with peanuts.
- Bake at 350 degrees for 30-35 minutes.

- Preheat oven to 300°.
- Beat egg whites, cream of tartar, and salt at high speed of a mixer until soft peaks form.
- Add sugar, 1 tablespoon at a time, beating until stiff peaks form.
- Sift cocoa over egg white mixture.
- Fold in minichips.
- Cover a baking sheet with parchment paper.
- Secure to baking sheet with masking tape.
- Drop batter by level tablespoonfuls onto prepared baking sheet.
- Bake at 300° for 40 minutes or until crisp.
- Cool on pan on a wire rack.
- Repeat procedure with remaining batter, reusing parchment paper.
- Serve and enjoy.
- Store in an airtight container.

MY MOM'S BEST CHOCOLATE CHIP COOKIES
It took my mom some time to perfect this chocolate chip cookie recipe. She was determined to not have any hard or burned cookies. She tried all kinds of tips that she had been given from friends and co-workers. Such as making the cookie dough the night before and letting it sit in the fridge over night before baking, etc. One day she finally figured out what worked for her. Essentially it is the Nestle Toll House recipe with two minor tweaks that make this cookie soft, chewy and all around good. Even the next day it is still SOFT and not hard as some cookies tend to get. The small changes that are made make for a thicker better cookie, give it a try.

- Preheat the oven to 375.
- In a large mixing bowl combine the dry ingredients and set aside.
- Cream together the butter, both sugars, and the vanilla extract in a kitchen aid free standing mixer if you have one. Once nice and creamy add one egg at a time until well combined before adding the next egg. Don't add the chocolate chips just yet, we'll save those for last.
- Now slowly add the flour mixture to your creamy ingredients. You want to have everything evenly mixed.
- When you have everything mixed well add those chocolate chips and mix once more, this step goes quickly if you have a free standing mixer.
- Grease two 14 X 17 cookie sheets.
- I didn't use a measuring tablespoon but rather one from our dinner ware set, but it's approximate to a tablespoon, I used that to scoop and plop onto the cookie sheet. No need to roll the dough or do anything fancy, just plop down 4 rows of 3 evenly spaced making sure that the cookies are not too close to the edges as they might spill over, better to get a little stuck together than to have them spilling in your oven.
- Bake for 10 minutes. You may want to set the timer for 5 minutes and check for doneness but no more than 10 minutes. We found that 10 minutes was PERFECT.
- Remove from oven and place on the counter to cool for about 2 to 3 minutes max before transferring to a plate. While the cookies in the oven are baking you can load up the second cookie sheet to have it ready. You should have a small container, I use a tortilla container that we got ages ago from tupperware to put the cooled off cookies in until I am done baking. Then I take all of those minus the ones on the plate and put them in gallon size zip lock bags to keep the air out and help prevent them from getting hard. Enjoy with a cold glass of milk.

MOM'S CHOCOLATE CHIP MERINGUES
Steps:
- Preheat oven to 350 degrees F (175 degrees C). Generously grease a cookie sheet or line with parchment paper.
- Blend egg whites and salt with an electric mixer until peaks begin to form. With the mixer still running, gradually add sugar, 1 tablespoon at a time, until all is incorporated, then add the cream of tartar.
- Gently fold in chocolate chips using a wooden spoon or rubber spatula. Using a teaspoon, drop batter onto prepared cookie sheet. Place in the oven, and turn off heat. Leave in the oven at least 4 hours, or overnight for even better results.
