CROCK POT CHEESY BEEF GOULASH
My family goes crazy over this Cheesy Crock Pot Goulash. We eat every single bit down to the last piece of pasta, and the leftovers are even better!

Steps:
- Brown and crumble ground beef
- Drain excess grease and set aside
- In a medium bowl, mix together cream cheese, sour cream, ricotta cheese, minced garlic and parsley
- In the bottom of a 6 quart (or larger) slow cooker, add half a jar of spaghetti sauce
- Evenly layer half the box of the Cavatappi pasta on top of sauce
- Pour remaining jar of spaghetti sauce over noodles
- Pour on half a jar of water
- Layer half the cooked ground beef mixture over top
- Dollop the entire cream cheese mixture evenly as possible over the beef layer, don't stir the mixture
- Evenly layer the rest of the Cavatappi pasta on top of the cream cheese layer
- Top with remaining jar spaghetti sauce
- Pour another half jar of water on top of spaghetti sauce
- Finally, layer the rest of the cooked ground beef on top
- Cover and cook on low for about 4 hours or high for 2 hours
- Stir mixture carefully but well
- Layer 2 cups shredded mozzarella cheese on top
- Cover for an additional 15-20 minutes
- Carefully remove Crock Pot from metal base and broil in oven for 5-7 minutes until cheese is browned to liking and cheese is melted

- Brown ground beef in a large stockpot. Drain off excess grease if desired.
- Add minced garlic and cook for 1-2 minutes. (Add chopped onion as well if desired)
- Add water, beef broth, tomato sauce, petite diced tomatoes, & spices. Bring to a boil
- Reduce heat to medium/low. Cover and let simmer for 15 minutes for the flavors to mix.
- Add elbow pasta and cook 7-12 minutes longer until pasta is at desired tenderness.
- Fish out the bay leaves if possible
- Add cheese in batches and allow to melt.

MOM'S CHEAP AND EASY GOULASH
My Mom used to make this for us all of the time. This is a quick, inexpensive and delicious one pot meal. She always served it with homemade garlic rolls, but I love to serve it with Recipe #256914.

- Cook macaroni- reserving the cheese packet for later.
- Brown ground beef with onion, garlic powder, Italian seasoning, salt and red pepper flakes. Cook until the ground beef is completely cooked through and the onions are soft.
- Drain the macaroni and add tomato sauce, butter and reserved cheese packet. Mix until well combined. Add the ground beef mixture, again, mix until well combined. Serve hot!

GOULASH
Not to be confused with the Hungarian dish of paprika-spiced stewed meat and vegetables, this American version of goulash, also referred to as "slumgullion," is made with ground beef and pasta. The beef is cooked down with plenty of aromatics and spices and combined with tomatoes, pasta, and cheese to create the perfect comfort meal. We added paprika to the dish in a nod to its Hungarian counterpart.

- Heat the olive oil in a Dutch oven or heavy-bottomed pot over medium heat. Add the onion and cook, stirring occasionally, until softened, about 5 minutes. Add the garlic and cook, stirring, until fragrant, about 1 minute.
- Add the beef and cook, stirring and breaking up the meat with a wooden spoon, until browned and no longer pink, about 8 minutes. Add 1 teaspoon salt, a few grinds of pepper, the paprika, and Italian seasoning to the beef and stir to combine. Cook, stirring, until the paprika begins to toast and become fragrant, about 1 minute. Stir the tomato paste into the beef mixture to coat, then cook until the paste thickens and deepens in color, about 2 minutes.
- Add the diced tomatoes, tomato sauce, Worcestershire and beef broth to the beef mixture and stir, scraping up any browned bits from the bottom of the pot, to combine. Bring the mixture to a boil over medium heat. Reduce the heat to medium low and add the cavatappi. Cook, stirring occasionally, until the pasta is al dente, 8 to 10 minutes.
- Remove the pot from the heat. Gently stir in the parsley and Cheddar until combined and the cheese starts to melt. Divide the goulash among 6 bowls and top with more shredded Cheddar and chopped parsley.
MOM'S CHEESY GOULASH
Steps:
- In a large skillet add ground beef and onions. Cook over medium heat until beef is thoroughly cooked and onions are tender. Drain off grease.
- Add cheese sauce packet, tomato soup and the diced tomatoes (do not drain). Stir and cook until bubbly. Then add 1 cup shredded Kraft Cheddar Cheese and salt and pepper taste. Cook through and stir until cheese is melted in.
- In a separate 1 1/2 quart saucepan boil the Kraft macaroni noodles until they are done. Drain off excess water and add cooked noodles to the meat mixture.

I make this a lot. Ours is a different variation and simpler. I put peas in mine; the boys leave them out, lol. My sister said I was not remembering that Mom used corn instead of peas. I checked and, yes, the heifer was right, grrr, lol, so you can put corn in too.

- Add Worcestershire sauce, salt and pepper.
- Cook macaroni in boiling water until tender; drain.

- Cook the macaroni according to package directions.
- In a large skillet, over medium heat, brown ground beef with onion, till there is no pink left in the beef and then add garlic for a few minutes to cook, then drain beef mixture.
