MOM-MOM'S PEPPER STEAK
This is a terrific family dinner. Tender pieces of steak are sauteed with juicy peppers in a great sauce. Serve with white rice or buttered mashed potatoes, and Italian bread for dipping. This is a really easy dinner. I hope your family will enjoy this as much as mine does.

Steps:
- Heat the vegetable oil in a large skillet over medium heat, and cook and stir the green and red peppers until tender, about 10 minutes. Remove the peppers from the pan and set aside.
- Place the steak strips into the skillet with the grated onion, and cook and stir for about 10 minutes, until the steak is evenly browned and no longer pink inside. Return the cooked peppers to the skillet, and stir in tomatoes, water, and sugar. Sprinkle with salt and pepper to taste.
- Simmer over low heat for 45 minutes to 1 hour, stirring occasionally, until the steak is tender and the sauce has thickened.

Steps:
- Season steak with paprika and rest at room temperature while preparing remaining ingredients. Sautee crushed garlic and steak over medium heat until steak is just browned. Careful not to burn the garlic. Add sliced onions and bell peppers. Continue to cook until vegetables are wilted. Add diced tomatoes and beef broth. Cover, and simmer for about 45 minutes. Combine water, cornstarch, and soy sauce. Stir into steak and cook until thickened. Serve over freshly cooked rice.
PEPPER STEAK
Steps:
- Brown all meat in sesame seed oil. Do this in batches of 1/3 at a time.
- Add the mushrooms, beef broth (feel free to use water if you don't have beef broth), beef bouillon , soy sauce, garlic powder, and pepper sauce. Then cook for 7 minutes on medium heat.
- Add all of your bell peppers. I used green, yellow, red, and yellow. I wanted to showcase the different bell peppers in the dish. Feel free to just use green if you want. Also put the beef back into the pot.
- Next combine the 1/4 cup of beef broth and 2 tablespoons of flour to make the paste. Feel free to use water if you don't have beef broth.
- The final step after you add the flour mixture to it, is to let this cook until the mixture is thickened. Then enjoy the Pepper Steak over rice or noodles.
MOM'S PEPPER STEAK
My mom used to make this a lot when I was a kid. My mother was really good at taking any meat and making it tender. Choose whatever cut of beef you want but definately adjust the cooking time. We enjoy it at least once a month in my household. Sometimes I put a pat of butter on my rice before ladeling the pepper steak on top. Yum!

- Cut beef, onion, peppers, and celery into strips, about the size of a matchstick and 1/4 inch wide.
- Melt butter in a stockpot over medium high heat. Brown the beef.
- Add the rest of the ingredients to the stockpot. Season liberally with salt and pepper.
- Bring to a boil. Reduce to a simmer and cover. Cook for 1 hour or more until meat is tender.
- Add water as necessary if liquids evaporate too quickly.
- Serve over white rice.
MOM'S SWISS STEAK

- Preheat oven to 350 degrees.
- Cut round steak into serving pieces (approx 10- remember each piece will become slightly "larger" after being flattened out by pounding). One at a time, lay each piece of meat between plastic wrap. Pound with flat side of meat mallet until flattened and thinned down and tenderized. Repeat process for each piece of meat. Salt and Pepper each piece of meat, then dredge/fully cover each piece (all sides) in flour (put flour on a dinner plate to do this).
- Heat oil on medium high heat. Once hot, brown meat (turning once) until browned on both sides. (You may need to cook the meat in batches, depending on quantity and size of skillet). When done, reserve 1/4 cup of the oil and drippings in skillet ; discard the rest of oil.
- Place browned meat pieces in a single layer in casserole dish. Top each piece of meat with a slice of onion. Add another layer of meat, then onion, until all pieces are in dish.
- Make a really thin gravy by adding 4 cups water to 1/4 cup of oil/pan drippings remaining in skillet. Mix 1 cup water with 3 HEAPING Tablespoons flour. Mix well, then add to skillet and whisk to combine. Season this thin gravy to taste with additional salt and pepper. Bring "gravy" to a boil. It will slightly thicken. Remove "gravy" from heat, and carefully pour it over meat.
- Cover dish with lid or tightly cover with aluminum foil. Bake at 350 degrees for 1 1/2 hours.
- Remove from oven when done. Serve meat, topped with onions and gravy... and enjoy!

- Slice beef across the grain into very thin, 1 inch long strips.
- Saute beef in butter until tender.

Forget take-out, Pepper Steak is a snap to prepare. Just chop, chop, chop and stir-fry with a yummy sauce. Before you know it, you will have a healthy, delicious meal.

- Slice steak in thin strips on an angle.
- Slice and chop peppers, celery and onion. Cut tomatoes into wedges.
- Stir soy sauce, bouillon, and water and add to cornstarch. Mix till smooth.
- Add a small amount of oil to a wok or dutch oven.
- When hot add steak and brown well. Add peppers, celery and onion, stirring and turning till tender crisp.
- Add liquid and stir till it thickens.
- Add tomatoes, only heating through.
- Serve over steamed brown rice.
MOM'S PEPPER STEAK
My Mom made this on weeknights she sometimes used a fresh Hatch green chili for heat or fresh Pablano pepper for sweetness, it's quick easy and sooo yummy! Great with a tossed salad and french bread. I lower salt by using reduced sodium broth or bouillon and season steaks with Mrs. Dash any flavor.

- 1. Cut steak into strips or portioned serving size, season and flour lightly
- 2. Saute chopped onion and bell pepper in olive oil until tender and fragrant over medium heat
- 3. Move vegies to edge of pan, drizzle more olive oil in pan, brown steak on both sides add 2 tablspoons flour and brown lightly
- 4. Add 1 cup of wine or other liquid let reduce by 1/2, lower heat, add 2 cups beef broth or bouillon and enough water for steaks to sit in but not be covered completely. Cover, simmer on low heat for 20-30 mins. until steak is tender, add picante continue to simmer until hot. Serve over Buttered Rice or Mashed Potatoes!!
