- In a bowl, dissolve gelatin in water. Stir in all remaining ingredients. Process in small batches in a blender until coarsely chopped. Pour into a 13x9-in. dish or a 3-qt. serving bowl. Chill until set, about 2-3 hours.

CRANBERRY SALAD MOLD

I was delighted when she would ask me to help grind the cranberries in her old food grinder...I could go on turning its crank forever. How I loved hearing the cranberries pop as they passed through!"

- Finely grind the cranberries in a food chopper. Add sugar and mix thoroughly. Let stand 15 minutes, stirring occasionally. (If using frozen berries, let them stand until the mixture is at room temperature.) Place the gelatin and orange juice in the top of a double boiler; stir over hot water until gelatin is dissolved. Add to cranberries along with apples and nuts; place in a 7-cup mold that has been rinsed in cold water. Chill until set. Unmold onto leaf lettuce. Garnish with mayonnaise.

- Sprinkle unflavored gelatin over 1 tablespoon cold water; let stand 1 minute. Add boiling water and raspberry gelatin; stir until gelatin is dissolved, about 2 minutes. Stir in remaining cold water. Refrigerate until thickened, about 45 minutes., Pulse 2-1/3 cups cranberries, apples and orange in a food processor until chopped. Transfer to a small bowl; stir in sugar. Stir fruit mixture into thickened gelatin. Fold in walnuts, celery and remaining whole cranberries., Coat a 10-in. fluted tube pan, an 8-cup ring mold or two 4-cup molds with cooking spray; pour in gelatin mixture. Cover and refrigerate overnight or until firm. Unmold onto a platter.

- Dissolve gelatin in simmering water in large heatproof bowl.
- Stir in orange rind.
- Pour reserved pineapple juice into 2-cup measure.
- Add lemon juice and enough cold water to total 2 cups.
- Stir into gelatin mixture.
- Refrigerate 1 to 1 1/2 hours or until consistency of unbeaten egg whites.
- Fold in cranberries, celery, walnuts and pineapple.
- Pour into lightly oiled 1-quart fluted ring mold or crown mold.
- Chill at least 25 hours or until very firm.
- When ready to serve, loosen edge of mold with thin knife.
- Dip mold quickly in hot water to loosen salad, then invert onto serving plate.
- Cut in slim wedges to serve.

- Coat 1-1/2 quart mold with cooking spray.
- In bowl pour boiling water over cranberry gelatin mix; stir until dissolved. Add seltzer. Transfer 1 cup mixture to separate bowl; reserve. Cover remaining mixture; refrigerate.
- Sprinkle unflavored gelatin over 2 T. cold water; let stand 1 minute. Microwave on High until dissolved; stir into reserved 1 cup cranberry gelatin. Whisk in sour cream. Pour in mold.
- Refrigerate until just set, 2 hours. Uncover refrigerated plain cranberry gelatin mixture. Stir in cranberry sauce, celery and walnuts. Spoon into mold. Refrigerate until firm, 2 hours.
- Run knife around edge of mold to loosen; place serving platter over mold and invert to release. Garnish as desired.

- Spray a 4-cup gelatin mold or a 9-inch square pan with vegetable oil cooking spray.
- In a medium glass mixing bowl, combine the raspberry gelatin and unflavored gelatin. Add 1 cup boiling water and stir with a metal spoon continuously for 2 minutes, until the gelatin is completely dissolved.
- Stir in 1/2 cup cold water. Add the pineapple and juice, cranberry sauce, and walnuts. Stir with a metal spoon until all ingredients are completely incorporated.
- Pour the mixture into the prepared mold, cover with plastic wrap and refrigerate until firm.
- About 1 hour before serving, invert the mold onto a serving platter and allow to sit at room temperature; the salad will release itself and come clean from the mold.
- Combine cream cheese, powdered sugar, whipped cream and walnuts in bowl. Spoon into the center of the mold.

- Mix together jello, cranberry sauce, and pineapple juice until smooth; refrigerate until half set. Stir in mandarin oranges, pineapple, and pecans.
