HEALTHY SOFT MOLASSES COOKIES

This is a combo of several recipes that I made up to get a recipe a bit healthier, super soft, and vegan.

3/4 cup margarine or 3/4 cup shortening, softened
1 cup brown sugar or 1 cup raw sugar
1/2 cup molasses
2 cups whole wheat pastry flour
1/4 cup soy flour
1/3 cup soymilk
1 tablespoon ground flax seeds
2 teaspoons baking soda
1 teaspoon ground ginger
1 teaspoon ground cinnamon
1/2 teaspoon ground cloves
1/2 teaspoon allspice
1/2 teaspoon nutmeg
1 tablespoon fresh ginger, chopped
1/2 teaspoon salt
2 tablespoons white sugar

Steps:

  • Preheat oven to 350°F.
  • Prepare egg substitute:.
  • Combine ground flax seed and soy milk.
  • Microwave about 1 minute.
  • Remove from microwave and stir until mixture thickens to egg consistency.
  • Cookies:.
  • Cream together shortening and brown sugar.
  • Stir in egg substitute and molasses.
  • stir in dry ingredients and mix well.
  • Cover and chill till firm (2 hours).
  • Roll dough into small balls and coat with white sugar.
  • Place on lightly greased cookie sheet.
  • Bake for 9-10 minutes (soy flour makes cookies brown faster).
  • Leave on sheet until set.

1/2 cup unbleached flour
7 tablespoons whole wheat flour, plus more for rolling
1/2 teaspoon salt
1/2 teaspoon vegan sugar or 1/2 teaspoon granulated cane syrup
1/2 teaspoon baking powder
3 tablespoons canola oil
3 tablespoons soymilk
1/2 teaspoon lemon juice
3 -4 tablespoons water
2 cups canned pumpkin
1 cup low-fat soymilk or 1 cup rice milk
3/4 cup granulated cane syrup
1/4 cup cornstarch
1/2 tablespoon dark molasses (to taste)
1 teaspoon vanilla extract
1 teaspoon ground cinnamon
1/2 teaspoon salt
1/2 teaspoon ground ginger
1/4 teaspoon nutmeg, freshly grated
1/4 teaspoon ground allspice

Steps:

  • To make the crust, in a medium bowl, combine flours, salt, sugar and baking powder.
  • In a small bowl, mix oil and soy milk mixture.
  • Pour liquid mixture into dry ingredients and mix with a fork until dough holds together in a ball.
  • If it is too dry, add some water, a little at a time, until dough is moist enough to roll.
  • (If time allows, cover with plastic wrap and refrigerate for one hour.) Roll out dough on lightly floured surfaced with a floured rolling pin, forming an 11-inch circle.
  • Line a 9-inch pie pan with the dough.
  • Flute or crimp the edges with your fingers or a fork.
  • Cover with plastic and refrigerate until ready to use.
  • Pre-heat oven to 425°F.
  • To prepare the filling, in a large bowl, mix all remaining ingredients until smooth and blunted.
  • Pour into prepared crust and smooth top.
  • Bake 10 minutes, then reduce oven temperature to 350F and bake until filling is set, about 50 minutes.
  • NOTE: For best results, filling must set overnight in the refrigerator, so make it the day before you want to serve it.

SOY MOLASSES SALMON

1/3 cup soy sauce
1/4 cup molasses
1 tablespoon sesame or olive oil
2 teaspoons minced garlic
1 teaspoon ginger powder
1 teaspoon fish sauce
1 teaspoon rice wine vinegar
1 teaspoon honey
2 tablespoons canola oil
Four 6-ounce skin-on salmon fillets
Kosher salt and freshly ground black pepper
Black and white sesame seeds, for serving

Steps:

  • Combine the soy sauce, molasses, sesame oil, garlic, ginger powder, fish sauce, rice wine vinegar and honey in a saucepan on medium-high heat. Bring to a slight boil, whisking or stirring constantly. Cook for 4 to 5 minutes. Set aside.
  • Heat a large skillet over medium-high heat and add the canola oil. Add the salmon skin-side down and cook until the skin is brown and crispy, 2 to 3 minutes. Sprinkle the salmon with salt and pepper and drizzle with a little of the sauce, then flip and cook until the salmon is about medium, another minute or two. Depending on the thickness of salmon, you may need more or less time.
  • Allow the salmon to rest for 3 to 5 minutes. Drizzle with more sauce before serving and sprinkle with sesame seeds.

1 cup natural bran
1/2 cup oat bran
1 cup whole wheat flour
1/3 cup sugar
1 tablespoon baking powder
1 teaspoon baking soda
1 teaspoon salt
1/2 cup raisins
1 cup boiling water
1/2 cup walnut pieces (optional)
1/4 cup ground flax seeds (optional)
1 tablespoon egg substitute
1/4 cup soymilk
1/4 cup applesauce
1/4 cup molasses
1 cup soymilk

Steps:

  • Put the raisins in the boiling water to soak. Set aside.
  • Mix together the bran, flour sugar, baking powder, baking soda, salt and walnuts and flax seeds (if using) in a large bowl.
  • Mix the egg replacer with the 1/4 cup of soy milk. Using a food processor (especially a mini one) at this point is handy but not necessary. Add the apple sauce and molasses and mix well.
  • Using a sieve, strain the raisins and reserve the water.
  • Coat the raisins with some flour.
  • Pour all the wet ingredients (soy milk, applesauce/molasses mixture and raisin water &c.) into the dry ingredients and mix.
  • Add the raisins.
  • Mix the batter together and let stand while the oven heats up.
  • Line 12 muffin tins with paper muffin cups or spray with non-stick spray.
  • Heat the oven to 400 F and bake for 15-20. The muffins are ready when a toothpick comes out dry.
