MOLASSES BARS
These are my Grandma Marion's Molasses Bars, also known as hermit bars. Chewy, delicious sweet bars for the molasses lovers!

Steps:
- Kick the tires and light the fires to 375 °F.
- Cream the sugars and the margarine together. Add in your two eggs and beat in completely.
- Add in the molasses to the margarine/sugar mix and mix in thoroughly.
- Whisk together the dry ingredients.
- Combine the wet and dry and mix well.Then add in your raisins.
- Divide the dough into two pieces, and from each half form three long rolls on a cookie sheet.
- Build them up as high as you can and they fit across a baking sheet, width-wise. When you build them up, you get a thicker, chewier bar.
- Bake them in the oven at 375 for 13-15 minutes, and do not over/under bake. This from my grandma's instructions. So they need to be baked until the edges are cooked and the middle slightly still underdone.
- Slice them across into about 8-10 squares when they are fully cooled, needless to say, this recipe makes a large amount, you can end up with 40-60 of the little bars!

- Preheat oven to 375°F.
- Cream together butter and sugar until light and fluffy.
- Beat in eggs one at a time.
- Stir in vanilla.
- Mix together flour, baking powder, and baking soda; and gradually add to the creamed mixture.
- Fold in the dates and nuts.
- Spread the batter evenly in a greased 13x9 baking pan and bake at 375°F for 25 minutes or until golden.
- Cool in pan.
- Cut into approximately 24 bars.

- Beat egg, add sugar, molasses, shortening and vanilla. Stir in sifted dry ingredients, nuts and dates. Pour into 9-inch square pan lined with waxed paper, greased and lightly floured. Baked at 350F for 40 minutes. Cut into 32 bars when cool, then roll in confectioners' sugar.

MOLASSES OATMEAL BARS

Steps:
- Preheat oven to 350°F.
- Spray 8 inch square baking pan with nonstick spray and set aside.
- With a whisk or electric mixer, beat together brown sugar, spices, molasses, oil and egg.
- In a separate bowl, combine flour, oats and baking powder.
- Add to molasses mixture; stir until blended.
- Spread in baking pan.
- Bake for 18-20 minutes or until a toothpick inserted in centre comes out dry.
- Cool on wire rack.
- Cut into squares.

WHOLE WHEAT DATE BARS
Light in texture but chock full of dates and nuts. Low in sugar and fat. The dates I used were very moist and mushy. If you are using mushy dates make sure you beat the eggs with the dates well. I also used a pinch of baking soda to beat them up. This cake took 40 minutes to bake. Bake until the tops are slightly firm and springy. I ran out of honey and in its place I used golden syrup.

- Preheat oven to 325°F.
- Add dates, nuts, and vanilla.
- Combine flour and baking powder and stir into date mixture until evenly blended.
- Pour into a well oiled 8 or 9 inch square pan. Bake for 20 to 25 minutes until lightly browned on top. Cool in the pan. Cut into squares or bars to serve. Makes 16 (2-inch) squares, or 32 bars, 2 x 1 inches.
- NOTE: To double, use 3 eggs, double remaining ingredients, and bake in a 9 x 13 inch pan.

SPICED PECAN DATE SHORTBREAD BARS
Cardamom, allspice, clove and nutmeg are the culprits in these flavorful bars, along with molasses and orange zest.

Steps:
- Heat oven to 350 degrees.
- Make the shortbread crust: Pulse flour, butter, confectioners' sugar and salt in a food processor until mixture looks like wet sand. (Alternatively, work the mixture with fingertips or a pastry cutter.)
- Press shortbread mixture into the bottom of a 9-by-9-inch square cake pan in an even layer. Bake crust for 20 minutes, until very lightly browned. Remove from oven and cool.
- Meanwhile, make the filling: In a medium saucepan, whisk together melted butter, eggs, molasses, golden syrup, cardamom, allspice, clove, nutmeg, salt, orange zest, rum and vanilla extract. Cook, stirring, over medium heat until mixture thickens slightly, about 5 minutes. Stir in dates.
- Pour filling over prebaked crust, then sprinkle pecans over filling. Bake for 30 minutes, or until filling is no longer jiggly and seems set.
- Remove from oven and cool on a rack for 15 minutes. Run a knife around the edge of pan to loosen cake, then invert pan over a cutting board to remove. Invert again and cool completely before cutting into bars approximately 1 1/2 by 3 inches.

- In a saucepan, combine dates, sugar and water. Cook, stirring frequently, until very thick. Stir in walnuts, if desired; cool. , Sift the flour, salt and baking soda together in a large bowl; add oats and brown sugar. Cut in butter until mixture is crumbly. Sprinkle water over mixture; stir lightly. Pat half into a greased 13x9-in. baking pan. Spread with date mixture; cover with remaining oat mixture and pat lightly. , Bake at 350° for 35-40 minutes or until lightly browned. Cool on a wire rack. Cut into bars.

- Preheat the oven to 350 degrees F (175 degrees C). Grease and flour a 9x13 inch pan.
- In a large bowl, cream together the shortening and sugar. Blend in the egg, molasses and hot coffee. Sift together the flour, baking powder, baking soda and cinnamon; stir into the molasses mixture until well blended. Mix in the raisins. Pat the mixture evenly into the prepared pan.
- Bake for about 25 minutes in the preheated oven, or until firm. To make icing, combine butter, confectioners' sugar and cold coffee in a medium bowl; beat until smooth. Frost bars while warm, but allow them to cool before cutting.

This is a recipe my mother made in the 1950's. I have tried many other date bar recipes but none compare to this one.

Steps:
- Combine the flour, soda, salt, oats, oleo, and sugar into a crumb-like mixture; spread 1/2 of mixture in a greased 13x9 pan.
- Combine the filling ingredients together, except the vanilla.
- Cook this mixture until thick.
- Cool. Now add the vanilla.
- Spread on crumb crust, put the other 1/2 of the oat mixture on top of the date mixture.
- Bake at 350°F for 45 minutes.
