0.25 cup sugar
0.25 cup lightly packed fresh mint leaves
3 cup cold water
1.5 cup white rum
1 12 ounce can frozen raspberry juice blend concentrate, thawed
0.5 cup lime juice
1.5 cup carbonated water, chilled
Ice cubes
Fresh raspberries, lime slices, and/or fresh mint (optional)

Steps:

  • In a punch bowl combine sugar and the 1/4 cup mint. Using the back of a wooden spoon, lightly crush mint by pressing it against the side of the bowl. Add the cold water, the rum, juice concentrate, and lime juice, stirring until sugar is dissolved. If desired, cover punch bowl and chill for up to 24 hours.
  • Slowly pour carbonated water down the side of the bowl; stir gently. Add ice cubes. If desired, add raspberries, lime slices, and/or fresh mint sprigs.

  • Add seltzer to combined sugar and drink mix in 2-1/2-qt. glass or plastic pitcher; stir until mix is dissolved.
  • Pour into ice-filled glasses. Squeeze lime wedge into prepared drink in each glass. Garnish with mint.
  • Serve immediately.

I believe it is the fresh ingredients and the use of sugar, instead of simple syrup, muddled together that makes this cocktail refreshing and delicious. It takes a little bit of work but the results are well worth it. Serve over ice.

I just served this at our NYE 2007 party.. I can't even lie and say it was a success for all - only the women drank this.. but the punch bowl was pretty much licked dry :) I found this recipe on a bartending website...Enjoy! Serves "12"... For ice: Use a bundt pan and add mint leaves and fresh cranberries - fill with 1/4 cup water. Freeze once frozen add more cranberries and mint fill pan with water and use for pretty ice set-up in your bowl (not necessary - just presentation).

1/2 cup lime juice
4 cups sparkling water
1/2 cup sugar
1/2 cup water
1/2 cup of fresh mint

Steps:

  • Start by boiling the water and sugar.
  • Stir constantly until dissolved.
  • Take off heat.
  • Add washed and clean mint.
  • Leave mint in for 15 minutes.
  • Strain mint and refrigerate liquid.
  • Hour before party.

6 limes, plus 1 lime sliced, to serve
4 tbsp granulated sugar
4-5 mint sprigs
ice
350ml white rum
600ml sparking water

Steps:

  • Chop each lime into six pieces and drop them into a two-litre jug. Add the sugar and squish the lime wedges with a muddler, or the end of a rolling pin. Keep crushing to get out all the juices.
  • Pick the leaves off a mint spring and lay them on one of your hands. Clap the other hand on top to bruise the leaves ever so gently, then drop them into the jug. Repeat with the rest of the mint spring.
  • Fill up the jug about three-quarters full with ice, then add the rum. Stir with a long-handled spoon to mix all the ingredients together gently and top up with the sparkling water. Stir once more, then serve poured into tall glasses with a few extra ice cubes and lime slices.Try these 3 twistsStrawberry mojitoMuddle 9-10 strawberries, 2 chopped limes and 2 tbsp granulated sugar in a large jug.
