1 cup sour cream
1 teaspoon baking soda
4 cups all-purpose flour
1 cup white sugar
2 teaspoons baking powder
1/4 teaspoon cream of tartar
1 teaspoon salt
1 cup butter
1 egg
4 teaspoons cinnamon
sugar
cinnamon

Steps:

  • Preheat oven to 350 F degrees.
  • Spray two baking sheets with non-stick cooking spray.
  • Combine sour cream and baking soda in a small bowl.
  • Combine flour, sugar, baking powder, cream of tartar and salt in another bowl.
  • Cut in butter until mixture resembles fine breadcrumbs.
  • Combine egg with sour cream mixture, add cinnamon.
  • Gently stir into flour mixture until moistened.
  • IMPORTANT: knead dough briefly, no more than 10 times.
  • Divide dough into two, place on baking sheet and pat into 3/4 inch thickness.
  • Cut each round into 6 wedge-shaped pieces.
  • Move scones so they are not touching (at least 3 inches), dust with sugar and cinnamon.
  • Bake 15-20 minutes or until golden brown.

2 cups all-purpose flour (for best results, sift or spoon the flour into the measuring cup)
1/3 cup sugar (white)
1 tablespoon baking powder
2 teaspoons ground cinnamon
1/4 teaspoon sea salt
4 ounces butter (cold)
1 large egg (whisked)
1 teaspoon vanilla extract
1/4 to 1/2 cup milk (or buttermilk or half-and-half)

Steps:

  • Heat the oven to 400 F.
  • In a large mixing bowl, whisk together flour, sugar, baking powder, cinnamon, and salt.
  • Use a pastry cutter to cut in the butter. The mixture is done when it resembles coarse cornmeal.
  • Add the whisked egg and vanilla extract. Do not stir yet.
  • With minimal stirring, mix in just enough milk, buttermilk or half-and-half to make the dough stick together. It will be crumbly and there should still be a little bit of dry flour left in the mixing bowl.
  • Turn the dough out onto a heavily floured cutting board.
  • Knead the dough slightly. When it is done, it should be easy to handle and smooth.
  • Gently pat the dough into two (1-inch thick) discs.
  • Cut each disc into 6 pieces.
  • Transfer the scones to a buttered or parchment-lined baking sheet and bake in the heated oven for 15 to 20 minutes or until lightly golden. Optional: Turn pan halfway through baking.
  • Cool on the baking sheet.

This is a mildly sweet, soft scone that is great for breakfast. NOTE: I tried posting this note way earlier and then I read the review.. the humidity outside greatly affects the moisture of the dough! I've made this on hot rainy days and I end up having to add up to a cup of extra flour. So keep in mind the flour you add may vary greatly, add as needed.

2 1/4 cups flour
1/3 cup sugar
1/4 cup brown sugar
1 tablespoon baking powder
2 teaspoons cinnamon
1/4 teaspoon salt
1/2 cup butter (1 stick)
2/3 cup milk
1 egg, slightly beaten
1 teaspoon vanilla

Steps:

  • Preheat the oven to 400 degrees F.
  • Mix the flour, sugar, brown sugar, baking powder, cinnamon, and salt into a bowl.
  • Mix the butter in with your hands, squeezing it between your fingers. The mixture will be crumbly with some chunks of butter.
  • In a separate bowl, mix the milk, egg, and vanilla together. Then pour it into the butter mixture and mix until just incorporated.
  • Put a piece of parchment paper on the cookie sheet. Put the ball of dough in the center, flattening it into a disk approximately 8-9 inches in diameter and 1/2 inch deep. (It may help to put some flour on the cookie sheet to keep it from sticking).
  • Cut the disk into 8 slices. Separate the pieces on the cookie sheet because they will expand and run into each other.
  • Bake for 20-23 minutes.

2 1/2 cups flour
2 tablespoons powdered sugar
1 teaspoon baking powder
1 pinch salt
1 teaspoon cinnamon (plus an additional 1 tsp for optional cinnamon-sugar topping)
1 teaspoon granulated sugar (for optional cinnamon-sugar topping)
1 cup skim milk
2 tablespoons butter, softened (plus additional for greasing and optional topping)

Steps:

  • Pre-heat oven to 425.
  • Combine flour, powdered sugar, baking powder, salt, and 1 tsp cinnamon in a large bowl.
  • Pour milk into mixture, and stir together with a fork.
  • Add softened butter, and knead the butter gently into the dough with your hands until dough is soft (add more flour if it's too sticky).
  • Place dough on a floured surface, and flatten until it is a 1 1/2-inch disk. Use a glass to cut out rounds, and place them on a greased baking sheet. If you want, you can soften a bit more butter, brush it over the rounds, and sprinkle with a mixture of 1 tsp cinnamon and 1 tsp sugar.
  • Bake for about 10 minutes, until lightly golden. Serve with anything, especially blueberry jam.

2 cups unbleached flour
1 teaspoon salt
1 tablespoon baking powder
1/2 teaspoon baking soda
1 tablespoon cinnamon
1 1/2 tablespoons sugar
1 cup vanilla yogurt
2 tablespoons honey
1/4 cup butter (Room Temp.)
1/2 cup raisins

Steps:

  • Mix dry ingredients in mixing bowl (I use a fork).
  • cut in butter, and mix with fork until it resembles coarse crumbs.
  • Add raisins and make sure they are evenly dispersed.
  • Add honey and yogurt while mixing.
  • Dish out a spoonful into muffin tray and bake at approximately 425 F degrees for about 15-20 minutes or until golden brown on the top.
  • Note: I have made different versions of this recipe (adding dried currants as well as raisins).

1/3 cup sugar
2 cups white flour
1 tablespoon baking powder
1/4 teaspoon salt
1 1/4 teaspoons ground cinnamon
5 ounces cinnamon baking chips (hersheys)
1/2 cup butter
2/3 cup milk
1 egg, slightly beaten
1 teaspoon vanilla

Steps:

  • Mix all dry ingredients together.
  • In a food processor mix all dry ingredients and the butter. Pulse a few times until it looks crumbly. Or cut the butter in with a pastry knife.
  • In a separate bowl, mix the milk, egg and vanilla.
  • Add the milk mixture through the feed tub of your food processor, and mix for approximately 20 seconds.
  • Remove to a bowl and hand mix in the cinnamon chips.
  • Place in scone pan or pat them into 8 triangles.
  • Bake @ 400 degrees for 20 minutes.

This is a slightly modified version of Snickerdoodle Scones (Recipe 124807) with some low fat ingredients (but still with butter to keep the tenderness) and Splenda. These are very yummy!

1/2 teaspoon baking soda
2 cups whole wheat flour
1/2 cup Splenda granular
1 tablespoon sugar

1/2 cup butter, frozen
1/4 cup egg white
1/3 cup non-fat soymilk
2 teaspoons cinnamon

Steps:

  • Preheat oven to 350°F.
  • Line cookie sheet with parchment paper.
  • Combine sour cream and baking soda in small bowl and set aside.
  • Mix flour, Splenda, sugar, baking powder, cream of tartar and salt in a large bowl.
  • Be sure butter is frozen solid and grate it into flour mixture; stir to have mixture resembling fine breadcrumbs.
  • Mix egg white, soy milk, and sour cream mixture. Add cinnamon and combine well.
