- In a large heavy saucepan, combine the sugar, cocoa, flour, coffee and salt. Gradually add milk and eggs; stir until smooth. Cook and stir over medium-low heat until mixture is thick enough to coat a metal spoon and reaches 160°, about 15 minutes. Refrigerate until chilled. Stir in the remaining in the remaining ingredients. Fill ice cream freezer cylinder two-thirds full; freeze according to manufacturer's instructions. Refrigerate remaining mixture until ready to freeze. Remove from the freezer 10 minutes before serving.

- In a heavy bottomed saucepan over low heat, bring the cream just to a boil then add the brown sugar and stir just until it dissolves. Stir in the salt and vanilla extract and blend until well incorporated. Let cool for 15 minutes; it will thicken as it cools.

- Put the sugar, corn syrup, and water in a medium saucepan. Cook over medium-high heat, brushing down the sides of the pan as needed with water, until the sugar dissolves. Continue to cook, swirling the pan but not stirring, until the sugar is amber in color, about 8 minutes. Pull pan from the heat and carefully add the cream and butter. Take care; it may spatter. Whisk until smooth.
- Stir the chocolate, vanilla, and salt into the hot caramel until smooth. Serve sauce warm.
- Store in a sealed container in the refrigerator for up to 1 week. Reheat slowly, in a microwave at 30-second intervals, stirring, until warm and saucy. Be careful not to overheat or butter can separate from the caramel sauce.
MOCHA COOKIES WITH KAHLUA ICING
I found this great recipe printed on the back of a bag of chocolate chips. My husband and I are HUGE mocha fans, so this tasty cookie is exactly what I was looking for. Not to mention the touch of Kahlua in the icing. Yummy!

- Preheat oven to 350 degrees.
- Cream together butter and sugars, then beat in eggs, espresso powder and cinnamon.
- Mix in flour, baking soda and salt until just combined.
- Stir in chocolate chips.
- Place heaping tablespoon size balls of dough on ungreased baking sheets and bake for about 12-14 minutes or until slightly soft in the center.
- Let cool on baking sheets for about 5 minutes, then transfer to wire racks to cool.
- When completely cool, frost with Kahlua Icing.
- For Kahlua Icing: Beat together 1/4 cups softened butter, 2 1/2 cups powdered sugar and 2 1/2 tablespoons Kahlua until smooth.

This is the fudge sauce from my ice cream pie recipe (#7549). It is so rich and wonderful I decided it deserved being posted by itself. I could drink it, it's that good! Makes a great sauce for dipping bananas, brownies or for pouring over ice cream (of course!) Store any left-overs (ha!) in the fridge and reheat in the microwave for about 20 seconds.

- For the cake: Preheat the oven to 350 degrees F.
- Combine the cake flour, granulated sugar, 1/4 cup of cocoa powder, baking powder, salt and cinnamon into a 1.5- to 2-quart round or oval baking dish. Whisk until combined.
- In a liquid measuring cup, whisk to combine the milk, vegetable oil and vanilla extract. Pour into the baking dish and whisk with the dry ingredients until fully incorporated.
- For the whiskey hot fudge: In a medium bowl, whisk together the light brown sugar, cocoa powder and chocolate chips. Evenly sprinkle the mixture over the cake batter.
- In a heatproof liquid measuring cup, stir to combine the whiskey and boiling water, then slowly pour it over the cocoa mixture. Do not stir.
- Bake until the center is almost set, with a pudding-like texture, 32 to 37 minutes.
- For serving: Let the cake cool for 15 minutes, then dust with cocoa powder and serve with your favorite ice cream.
