APPLE-SPICE ANGEL FOOD CAKE
I dressed up an angel food cake mix with some nuts, spice and applesauce to make an easy and light dessert. I serve it with a dollop of whipped topping mixed with a half cup of sour cream. -Joan Buehnerkemper, Teutopolis, Illinois

Steps:
- In a large bowl, combine cake mix and water. Beat on low speed for 30 seconds. Beat on medium speed for 1 minute. Fold in the applesauce, pecans and pie spice., Gently spoon into an ungreased 10-in. tube pan. Cut through batter with a knife to remove air pockets. Bake on the lowest oven rack at 350° for 35-45 minutes or until lightly browned and entire top appears dry. Immediately invert pan; cool completely, about 1 hour., Run a knife around side and center tube of pan. Remove cake to a serving plate. Garnish with whipped topping and/or apple slices if desired.

EASY APPLE FRUIT CAKE
This cake has all the flavours of Christmas, but won't take ages to make - you can decorate it any way you like. Ideal for a wedding cake too

Steps:
- Heat oven to 180C/fan 160C/gas 4. Butter and line the bottom of a deep, round 20cm cake tin with greaseproof paper. Beat the first seven ingredients together in a large bowl (electric hand- beaters are best for this), until pale and thick. Using a large metal spoon, gently fold in the fruit until evenly combined.
- Spoon the batter into the tin and bake for 50 mins-1 hr or until the cake is dark golden, springy to the touch and has shrunk away from the tin slightly. A skewer inserted into the centre will come out clean when it's ready. Cool completely before decorating. Will keep, wrapped in an airtight container or iced, for up to a week, or can be frozen un-iced for up to a month - defrost fully before decorating.

Lee, one of the women at my church, is a great cook. She is also borderline diabetic (Type 2). She still eats sugar, but since our pastor and I are diabetic, she makes this cake and brings it for us occasionally.

- Preheat the oven to 325 degrees. Generously spray a Bundt or tube pan.
- Dump all ingredients into a large mixing bowl (don't you just love one bowl recipes?) folding in the apples nuts, and coconut last.
- Pour batter into pan and bake approximately 1 1/2 hours.
- Cool on a wire rack. When serving dust VERY LIGHTLY with powdered sugar (this should be for looks, not the sweet taste).

- 1. PEEL APPLES AND CHOP IN BITE SIZE PIECES
- 2. IN A LARGE BOWL, BEAT THE EGGS, WATER, APPLE SAUCE AND CINNAMON. ADD THE CAKE MIX AND MIX WELL. ADD THE APPLES.
- 3. GREASE 2 LOAF PANS. BAKE AT 350 DEGREES FOR 40 MINUTES. IF YOU ARE USING A 13 X 9 PAN, THEN YOU NEED TO BAKE FOR 55 MINUTES. INSERT TOOTH PICK TO CHECK TO SEE IF CAKE IS DONE.
APPLESAUCE CAKE FOR DIABETICS
Diabetics don't have to give up desserts! This is low in sugar. If you don't want the sugar in the Craisins, rinse them a little in cold water and drain. This removes some of the sweetener on them. Or use raisins instead. Dry buttermilk powder can be found in the baking section of the store. It is great to have on hand for baking. This was adapted from a recipe in "Desserts for Diabetics", by Mabel Cavaiani. NOTE: This is a low-rise cake, like a snack-cake or brownie.

- Pre-heat oven to 375°F.
- Coat a 9"x5" loaf pan with notfat cooking spray.
- Place All-Bran, Egg Beaters, oil, Splenda, water, brown sugar and applesauce in a mixer bowl. Stir to blend and let sit 30 minutes. (Don't skip this step!).
- Stir remaining ingredients (except nuts and Craisins) together in a medium bowl to blend. Add to bran mixture and mix on medium speed to blend well. Add nuts and Craisins.
- Spread batter evenly in pan and bake about 45 minutes, or until wooden pick inserted in center comes out clean. (Do not overbake breads or cakes made with Splenda or they will dry out too fast!).
- Cool in pan 10 minutes and then remove from pan to wire rack; cool to room temperature.
- Cut into 14 equal slices.

DIABETIC FRUIT CAKE
This is a very good cake, without sugar and eggs, suitable for diabetics or those watching their weight.

- Mix the mixed vine fruits in the cognac or whiskey.
- Melt the chopped dates in the 4 tbsps. water very slowly mixing all the time, over low heat. Mix with the vine fruits. Let the mixture stand in a cool place for 3 to 6 hours.
- Sift the flour, baking powder and the mixed spice, add the rinds and the chopped nuts.
- Mix the flour mixture with the fruit mixture well and put the cake mixture in a greased loaf tin measuring approximately 12cms. x 22cms.
- Bake in a preheated oven, gas mark 4 or 195 degrees celius for about 50 mins. Check with a skewer. If it comes out clean, then the cake will be ready.
- Let cool for about 1 hour.
