This Turnip and Apple Casserole is a delicious mixture of apples, turnips, brown sugar and butter. It's also been lightened to make it Weight Watchers friendly. It makes a fabulous side dish for holiday dinners. I serve it at Thanksgiving, Easter and Christmas!

Steps:
- Preheat oven 350 degrees F and spray a medium sized casserole dish with non-stick cooking spray.
- Peel, dice and place turnips in large pot, then cook. Drain.
- Mash turnips with maple syrup, apple sauce and butter extract.
- Peel. core and slice apples.
- Toss with brown sugar and cinnamon.
- Layer in prepared casserole dish, alternating between turnip and apple mixture, staring with turnips,
- Begin and end with turnips.

MISS EDNA'S TURNIP CASSEROLE
This was sent to me from the Clipping-Cooking e-mail list. I haven't tried it yet, but it is on my list for next week. Good for lowcarb eating. There are many different things that can be added to this, depending on your tastes. Even some kind of cooked meat to make a main dish casserole. Feel free to experiment.

Steps:
- Preheat oven to 350º F.
- Butter a 1 1/2-quart casserole dish.
- Place turnips in a large saucepan with water to cover, bacon grease and Splenda.
- Bring to a boil, reduce heat to moderate, simmer till tender, about 20 minutes; remove from heat.
- Stir in a dash of Tabasco and crisp, crumbled bacon.
- Meanwhile, combine broth and heavy cream in a medium-size saucepan, bring to a low boil over moderate heat.
- Cook till slightly thickened, about 20 minutes.
- With a slotted spoon, transfer turnips to prepared casserole and pour cream mixture over top.
- Season with salt and pepper and bake 'til golden brown, about 30 minutes.
- Serve hot.

- Preheat the oven to 375 degrees F (190 degrees C).
- Place turnips into a large pot and cover with salted water; bring to a boil. Reduce heat to medium-low and simmer until tender, about 20 minutes. Drain and return to the pot. Mash turnips; add butter and eggs.
- Combine flour, sugar, baking powder, salt, pepper, and nutmeg in a bowl and stir into turnips. Transfer mixture to a baking dish.
- Combine bread crumbs and melted butter and sprinkle on top of turnip mixture.

CLASSIC TURNIP AND APPLE CASSEROLE
I first had this recipe at my husband's aunt's home back in 1979; got the recipe from her and have been making it to serve with turkey dinner ever since. I love the apples and turnip together! If you want to make it ahead of time, you can; just make it up to the layering stage then cover tightly and refrigerate. Put topping on, though, just before it goes into the oven.

- Preheat oven to 350F; butter a casserole dish (or spray with Pam) and set aside.
- Peel and dice turnip (this can be a tough job, as turnips are very dense) and place in a large pot.
- Cover with cold, lightly salted water and bring to a boil.
- Boil until turnip is tender (this takes longer than potatoes, usually), then drain and return to the pot.
- Mash turnip with the 1 tbsp butter and cream; stir in 1/4 cup brown sugar and the cinnamon; set aside.
- Peel apples, core, and slice.
- In prepared casserole dish, layer 1/3 of the turnip, then half the sliced apples, then 1/3 of the turnip, then the remaining apples, then the remaining turnip; smooth top.
- At this point, you could cover the dish tightly and refrigerate for several hours; don't put topping on until you're ready to pop this into the oven.
- When ready to bake, combine topping ingredients in a small bowl until they are crumbly; sprinkle over top of turnip.
- Bake in preheated oven for one hour; serve.

- Place turnips in a saucepan. Cover with water and simmer gently over medium heat until tender, about 20 minutes. Meanwhile, pour the cream and chicken broth into a small saucepan. Bring to a boil and simmer over medium heat until it thickens slightly, about 5 minutes.
- Brush a baking dish with the melted butter. Using a slotted spoon, transfer the turnips to the dish. Add the cream mixture. Season with salt and pepper and top with bread crumbs. Bake until golden brown, about 15 to 20 minutes. Serve immediately.

- 1. Preheat oven to 350. Combine turnips, butter, eggs, salt, sugar and *1 cup bread crumbs.
- 2. Spoon into oiled casserole dish then top with *remaining 1/4 cup of bread crumbs.

- Bring a pot of water to a boil and add turnips. Reduce heat to low, and simmer turnips until tender, about 15 minutes. Drain.
