Amazingly delicious cupcakes. Perfect for anyone with wheat allergies or just looking for a small but rich dessert. They are very moist and stick to your fingers.

1 ½ cups semisweet chocolate chips
6 tablespoons butter
6 eggs, separated
½ cup white sugar

Steps:

  • Preheat oven to 275 degrees F (135 degrees C). Line 2 muffin tins with liners.
  • Combine chocolate chips and butter in a saucepan over medium-low heat. Stir until melted and smooth, about 3 minutes. Remove from heat. Let cool slightly, about 5 minutes. Whisk in egg yolks.
  • Beat egg whites in a large bowl with an electric mixer until soft peaks form. Gradually add sugar with mixer running, beating until peaks are stiff and glossy.
  • Stir some of the egg whites into the chocolate mixture to lighten it. Pour chocolate mixture into the bowl of egg whites and fold until batter is well-mixed.
  • Scoop batter into prepared muffin tin, filling each cup 3/4 of the way full.
  • Bake in the preheated oven until cupcakes are just set in the center, about 25 minutes. Place muffin tin on a wire rack to cool, about 5 minutes. Remove cupcakes from the tin and let cool completely, about 15 minutes.

For you chocolate lovers, this is the best chocolate rush in a mini cupcake that I have ever eaten. The cupcake is so rich and moist that you will be happy to eat just one or two. Every once in awhile it is ok to indulge in your favorite decadent dessert. Of course, mine is the magical force of chocolate. Those times I just satisfy my sweet tooth and then I get back on track with healthy eating the next day. If you like chocolate, you have to try this easy recipe!

4 ounces dark chocolate, finely chopped
1/2 cup unsalted butter
2/3 cup granulated sugar
2 teaspoons vanilla extract
1 1/2 teaspoons instant espresso coffee powder
3 large eggs
1/2 cup unsweetened cocoa powder
2 tablespoons confectioners' sugar

Steps:

  • Heat oven to 375 degrees F. Coat 2 (12 cup mini muffin tins) with cooking spray.
  • Combine chocolate and butter in a microwave safe glass bowl and microwave for 1 minute on high. Stir until melted.
  • Whisk in sugar, vanilla extract, espresso powder, and eggs until well combined.
  • Sift cocoa over top and whisk until smooth.
  • Divide batter among prepared pans and bake until cakes have risen. Bake 10 minutes.
  • Cool in pans on rack 10 minutes.
  • Carefully remove cakes and cool on rack.
  • Dust with confectioners' sugar. Enjoy!

Bigger than cupcakes but not full size, these flourless chocolate cakes are baked in ramekins. So good, you just need a dusting of powdered sugar on top.

2 pkg. (4 oz. each) BAKER'S Semi-Sweet Chocolate, chopped
1/2 cup butter
4 eggs
1/4 cup granulated sugar
3 Tbsp. almond-flavored liqueur
1/2 tsp. vanilla
2 Tbsp. powdered sugar

Steps:

  • Heat oven to 325ºF.
  • Spray 6 (5 oz.) ramekins with cooking spray. Place ramekins in 13x9-inch baking dish; set aside. Microwave chocolate and butter in large microwaveable bowl on HIGH 2 to 3 min. or until butter is melted; stir until chocolate is completely melted and mixture is well blended.
  • Meanwhile, beat eggs, granulated sugar, almond-flavored liqueur and vanilla in large bowl with mixer until mixture becomes frothy and almost doubled in volume.
  • Fold 1/3 of the egg mixture into chocolate mixture with spatula. Repeat process 2 more times, until all of the egg mixture has been folded into the chocolate mixture. Divide batter evenly between prepared ramekins. Add enough water to baking dish to come halfway up the sides of each ramekin.
  • Bake 25 to 30 min. or until cakes have risen slightly, and edges are just beginning to set. Remove ramekins from baking dish and set aside to cool, about 10 min. Dust each ramekin with powdered sugar. Serve warm or at room temperature.

225g salted butter , cubed, plus more for the tin
300g dark chocolate , roughly chopped
1 tbsp coffee powder
6 large eggs , whites and yolks separated
100g soft light brown sugar
200g caster sugar
2 tsp vanilla paste
30g cocoa powder
berries , to serve (optional)

Steps:

  • Heat the oven to 160C/140C fan/gas 3. Butter a 23cm springform cake tin and line the base with baking parchment.
  • Melt the butter and chocolate in a medium heatproof bowl in the microwave or over a pan of gently simmering water. Mix the coffee powder with 2 tbsp hot water until dissolved. Stir the coffee into the chocolate and set aside to cool slightly.
  • Whisk the egg whites in a large bowl for 2 mins with an electric whisk until soft peaks form. In another large bowl, whisk both the sugars, the vanilla and egg yolks for 5-8 mins, or until pale and fluffy. Sift the cocoa powder into the egg yolk mixture and mix gently to combine.
  • Stir the cooled chocolate into the egg yolk mixture, then gently fold through the egg whites until smooth. Transfer to the tin and bake for 1hr-1hr 20 mins, or until a skewer inserted into the middle of the cake comes out clean. Allow to cool, remove from the tin and serve with fresh berries, if you like.
