MIKE'S DRY RUB
Steps:
- Mix all seasonings together in a large bowl. After mixing, put the ingredients in containers fixed with lids with large holes (due to the size of the steak seasoning or garlic pepper) for applying to the steaks. Lay all your steaks out on freezer paper. Use a fork to tenderize each steak (double tenderize any tough spots). Apply 1 tablespoon seasoning to each steak and let sit for 5 minutes. Apply 1 teaspoon each of soy sauce, Worcestershire and olive oil to each steak. Rub this into meat, making sure liquid and dry seasonings cover steak thoroughly! Let sit 1 hour. Then repeat on other side. After turning meat and seasoning, start your charcoal fire. Let the charcoal burn down until the ash is white (approximately 45 minutes to l hour). Preheat grill to 350 degrees F. Cook steaks 8 minutes on each side.
MOP SAUCE
Steps:
- Throw everything together in a saucepan and bring to a boil. Cool, pour into a plastic container, cover, and refrigerate for later use.
MIKE'S MOP SAUCE
We 'mop' most meats when we grill here in Texas. It keeps the meat moist and juicy! This is great for chicken or brisket. You will need to double this for a brisket. They sell little mops with the kitchen supplies and they look just like a kitchen string mop. If you don't have one you could probably use a basting brush. Oh, and make sure that you use an old sauce pan because if your hubby is like mine, you may not see it again! lol Or it may come back with the handle destroyed by the fire! Updated 9-2008

Steps:
- Place all ingredients except for the butter in an old sauce pan, or at least one that is oven safe.
- Cook until it comes to a boil. Turn heat down to a simmer and add butter. Keep it on low heat until meat is done.
- When butter melts taste it and adjust seasoning if desired.
- Mop meat liberally and often with this while your are smoking or grilling.
