MEXICAN MEATLOAF

2 tablespoons olive oil
1/2 cup finely chopped onion
1 medium carrot, finely chopped
1 rib finely chopped celery
1 garlic clove, minced
1 pound ground beef
6 ounces soft Mexican chorizo, removed from casing and crumbled
1 poblano chile, roasted, peeled, and diced
3/4 teaspoon salt
1/4 teaspoon freshly ground black pepper
1/4 teaspoon cayenne pepper
1/2 teaspoon ground cumin
2 eggs, well beaten
1/4 cup ketchup
1/4 cup sour cream or Mexican sour cream
1/2 cup dried bread crumbs
2 medium tomatoes, cored
1/4 medium white onion
2 garlic cloves, unpeeled
1 to 3 serrano chiles
1/4 cup brown sugar
1 canned chipotle chile in adobo sauce, minced
1 tablespoon yellow mustard
Kosher salt

Steps:

  • Preheat the oven to 375 degrees F.
  • In a heavy skillet, add the oil and heat over medium-high heat. Add the onion, carrot, celery, and garlic. Cook, stirring often until vegetables are soft, about 8 minutes. Set aside until cool enough to handle.
  • In a large bowl combine the sauteed vegetables, ground beef, chorizo, and diced poblano chile.
  • In a medium bowl, combine the salt, pepper, cayenne, cumin, and eggs. Add the ketchup and sour cream. Mix well with a fork and pour it on top of the mixed meats. Sprinkle with bread crumbs and mix thoroughly with clean hands.
  • Put the mixture into a 9 by 13-inch loaf-pan. Bake until an instant-read thermometer inserted into the center of the meatloaf registers 160 degrees F, about 40 to 45 minutes. Remove from the oven and carefully pour off any accumulated pan juices.
  • Meanwhile, heat a heavy skillet over high heat. Add the whole tomatoes, onion, garlic cloves, and serrano chiles. Cook, turning frequently, until lightly charred on all sides. Peel the garlic cloves. Add all the charred ingredients to a blender. Pulse until chunky, then pour into a small skillet. Stir in the sugar, chipotle chile and mustard. Bring the mixture to a boil over medium heat. Cook until slightly thickened, about 4 to 5 minutes. Season with salt, to taste.
  • Slice the meatloaf and arrange on a platter. Spoon the salsa-glaze over the meatloaf and serve.

1/2 cup finely chopped onion
1 medium carrot, finely chopped
1 rib celery, finely chopped
1 clove garlic, minced
1 pound ground beef
6 ounces soft Mexican chorizo, removed from casing and crumbled
Two 4-ounce cans diced roasted green chiles
3/4 teaspoon kosher salt
1/2 teaspoon ground cumin
1/4 teaspoon freshly ground black pepper
1/4 teaspoon cayenne pepper
2 large eggs, well beaten
1/4 cup ketchup
1/4 cup sour cream or Mexican sour cream
1/2 cup dried breadcrumbs
2 tablespoons chopped fresh cilantro, for garnish, optional
2 tablespoons olive oil
2 cloves garlic, minced
1/4 medium white onion, minced
1 cup tomato puree
1/4 cup brown sugar
1 tablespoon yellow mustard
One 4-ounce can diced roasted green chiles
1 canned chipotle chile in adobo sauce, minced
Kosher salt

Steps:

  • For the meatloaf: Preheat the oven to 375 degrees F.
  • In a heavy skillet, add the oil and heat over medium-high heat. Add the onion, carrot, celery and garlic and cook, stirring often, until the vegetables are soft, about 8 minutes. Set aside until cool enough to handle.
  • In a large bowl, combine the sauteed vegetables, ground beef, chorizo and green chiles.
  • In a medium bowl, combine the salt, cumin, black pepper, cayenne and eggs. Add the ketchup and sour cream. Mix well with a fork, then pour it on top of the meat mixture. Sprinkle with the breadcrumbs and mix thoroughly with clean hands.
  • Put the mixture into a loaf pan. Bake until an instant-read thermometer inserted into the center of the meatloaf registers 160 degrees F, 40 to 45 minutes. Remove from the oven and carefully pour off any accumulated pan juices.
  • For the salsa-glaze: Heat the oil in a heavy skillet over medium heat. Add the garlic and onion and saute until softened, 3 to 4 minutes. Stir in the tomato puree, sugar, mustard, green chiles and chipotle chile. Bring the mixture to a simmer over medium-low heat. Cook until slightly thickened, 5 to 6 minutes. Season with salt to taste.
  • Slice the meatloaf and arrange on a platter. Spoon the salsa-glaze over the meatloaf, garnish with fresh cilantro if desired and serve.

I'm adopting this recipe from the JAP site. I'll be fine-tuning it today for dinner tonight (2/22/11). Seasoned with cornmeal, chipotle, and olives, this is a spicy, southwestern rendition of meatloaf.

1 lb lean ground beef
1 lb ground pork sausage, lean
2 1/4 oz can pitted black olives, drained and coarsely chopped
1/2 c yellow cornmeal
2 large eggs, lightly beaten
1/2 c pico de gallo, bottled or fresh
1 small onion, minced
2 large garlic cloves, minced
1-2 tsp mrs. dash southwest chipotle seasoning
1 tsp chili powder
1 tsp dried oregano
1 tsp salt
GLAZE
1/2 c pico de gallo, bottled or fresh
2 Tbsp hot pepper jelly

Steps:

  • 1. Preheat oven to 350° F. Grease a loaf pan and an 8 x 12-inch baking dish.
  • 2. Combine all ingredients well in a large bowl (hands work best for mixing). Do not over-mix or pack down, but do mix well.
  • 3. Gently pack mixture into the greased loaf pan. Invert the loaf pan into the baking dish, shaking out meatloaf. Remove loaf pan. Pat meatloaf into shape if necessary.
  • 4. Bake for 1 hour and 15 minutes, or just until cooked through. (Internal temp 160°) Brush with glaze a few times during baking, or wait until the last 15 minutes and top with the glaze, then finish baking. Allow to rest 5 minutes before slicing.
  • 5. GLAZE: Combine the 1/2 cup pico de gallo well with the hot pepper jelly. A wire whisk works best.

1 ½ pounds lean ground beef
1 cup crushed tortilla chips
¾ cup shredded pepper Jack cheese
1 small onion, chopped
1 (1 ounce) packet taco seasoning mix
2 eggs, beaten
½ cup milk
¼ cup mild red taco sauce, or more to taste

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Thoroughly combine beef, tortilla chips, pepper Jack cheese, onion, and taco seasoning in a bowl.
  • Whisk eggs, milk, and taco sauce together in a separate bowl. Add to meat mixture and stir until well combined.
  • Press mixture into a 9x5-inch loaf pan and top with a strip of taco sauce down the center.
  • Bake in the preheated oven until cooked through and browned on top, 45 to 60 minutes.

I came up with this recipe after combining several mexican meatloaf recipes. My family loved this meatloaf.

1 lb ground beef
1 lb ground turkey
1 small onion, diced
1 egg
1/2 cup plain breadcrumbs
1 cup mild taco sauce
1 ounce taco seasoning (1 packet)
1/2 teaspoon ground cumin
2 minced garlic cloves
1/2 teaspoon ground black pepper
8 ounces shredded mexican style cheese
15 ounces chili beans, drained
1/2 cup mild salsa (more if needed)

Steps:

  • Mix meat, seasoning and cheese together, then add beans and mix gently. Top with salsa.
  • Bake 1 hour and 30 minutes. Let rest 10 minutes before slicing.

1 (4 ounce) can diced green chilies, drained

1 -2 teaspoon chili powder (to your preference)
1 teaspoon salt
picante sauce
1 cup shredded monterey jack cheese or 1 cup sharp cheddar cheese
sour cream
fresh cilantro stem

Steps:

  • Combine first 9 ingredients and place in lightly greased loaf pan.
  • Bake at 375 for 40 minutes or until done.
  • During last 10 minutes of baking, spoon desired amount of picante sauce over loaf and sprinkle with cheese.
  • Garnish with sour cream and cilantro, if desired.
