MEDITERRANEAN BAKED WHITE FISH



Mediterranean Baked White Fish image

Loaded with bright Mediterranean flavors, this baked white fish takes is seasoned with oregano and garlic and topped with a mixture of tomatoes, olives, and red onions. Ready in about 25 minutes! Be sure to check out my fish tips and the video for how to make this recipe below!

Number Of Ingredients 10

1 ½ lb white fish fillet such as cod or halibut, ((1 to 1 ½ in thickness))
Kosher salt and ground black pepper
Extra virgin olive oil
Juice of ½ lemon (more for later)
8 ounces cherry tomatoes, (halved)
3 ounces pitted olives, (halved (I used a combination of kalamata olives and green olives) )
3 tablespoons minced red onion
4 to 5 garlic cloves, (minced)
1 tablespoon fresh thyme leaves
2 teaspoons dried oregano

Steps:

  • Heat the oven to 425 degrees F.
  • Pat the fish dry and season with salt and pepper on both sides. Brush a 9 ½ x 13-inch baking dish with a little extra virgin olive oil and put the fish in it. Squeeze ½ lemon juice all over the top of the fish.
  • In a medium mixing bowl, combine the tomatoes, olives, onions, garlic and spices. Add a very small pinch of salt and ground pepper. Add a generous drizzle (about 3 tablespoons extra virgin olive oil) toss to combine.
  • Pour the tomato and olive mixture over the fish.
  • Bake in the heated oven for 15 to 20 minutes (this will depend on the thickness of your fish).
  • Remove from the heat and serve.

1 cup thinly sliced leeks (white portion only)
2 garlic cloves, minced
2 teaspoons olive oil
12 large fresh basil leaves
1-1/2 pounds orange roughy fillets
1 teaspoon salt
2 plum tomatoes, sliced
1 can (2-1/4 ounces) sliced ripe olives, drained
1 medium lemon
1/8 teaspoon pepper
4 fresh rosemary sprigs

Steps:

  • In a nonstick skillet, saute leeks and garlic in oil until tender; set aside. Coat a 13-in. x 9-in. baking dish with cooking spray. Arrange basil in a single layer in dish; top with fish fillets. Sprinkle with salt. Top with leek mixture., Arrange tomatoes and olives over fish. Thinly slice half of the lemon; place over the top. Squeeze juice from remaining lemon over all. 1 can water-packed quartered artichoke hearts
80 pitted and halved Kalamata olives mL
30 olive oil mL
5 finely grated lemon zest mL
15 fresh lemon juice mL

450 fresh haddock, g
4 sprigs fresh thyme

Steps:

  • Preheat oven to 220°C (425°F).
  • Stir together zucchinis, tomatoes, artichoke hearts, olives, and half of oil in a bowl.
  • Spread mixture in a 2-litre glass baking dish measuring 18 x 28 cm (7 x 11 in.). Reserve.
  • In a large bowl, combine remaining oil with lemon zest and juice, salt, and pepper.
  • Add fish and turn to coat well.
  • Arrange fish on vegetables in baking dish.
  • Top with thyme sprigs.
  • Bake for 12 to 15 minutes, or until fish is cooked and zucchini slices are tender-crisp.

1/4 cup white wine
1 teaspoon oregano

Steps:

  • In a small sauce pan, combine onions, garlic, tomatoes, wine, oregano, salt, and pepper.
  • Bring to a boil. Lower heat and simmer for 20 minutes or until onions are tender.
  • Place fish fillets in a baking dish. Pour tomato mixture on top of fish.
  • Bake at 350 degrees f for 10 minutes per inch of thickness, until fish flakes easily. Sprinkle olives and feta cheese on top and serve.

We eat a lot of fish and chicken when DH is on the road and I am always looking for something different. I love various Med. tastes and put this together one night. It turned out really good. We had it with romaine salad and bread.

2 lbs firm white fish fillets, cod etc
4 teaspoons olive oil
1 medium onion, chopped fine
2 teaspoons anise seed, ground fine
3 large garlic cloves, minced
28 ounces diced tomatoes with juice, liquid reserved
1/4 cup kalamata olive, chopped
1 teaspoon dill weed
1 teaspoon basil
2 teaspoons lemon pepper (not the kind with salt)
1/2 cup white wine, if desired (optional)

Steps:

  • Preheat oven to 425°F.
  • Heat the oil in a large skillet, add the onion and anise, saute until softened. Stir in the garlic, tomatoes, olives, herbs, lemon pepper and white wine.
  • Bring to a boil, reduce heat and simmer until tomatoes are tender and sauce has thickened, about 30 minutes. Add some of the reserved juice if necessary.
  • Oil a 13 x 9 inch casserole. Put about half of the vegetable sauce in the pan and spread it around. Place the fillets in a single layer in the pan and distribute the rest of the sauce over the fish.
  • Bake until the fish is opaque and flaky, about 20 minutes.
  • Plate the fillets and add the sauce and pan juices to the fish.
