Forget mashed potatoes as a side dish and reinvent meatloaf with this spud-stuffed version. The potatoes are ready in no time, thanks to your microwave, and could easily become a weeknight go-to recipe all on their own.

1 pound russet potatoes (about 2 medium), scrubbed clean
1/2 stick (4 tablespoons) unsalted butter, cut into pieces, at room temperature
1/3 cup sour cream
2 teaspoons finely chopped fresh chives
Kosher salt
1/2 cup breadcrumbs
2 tablespoons extra-virgin olive oil
1/2 medium onion, diced
2 cloves garlic, minced
2 teaspoons dried oregano
Kosher salt and freshly ground black pepper
2 1/2 pounds meatloaf mix (or a combination of ground beef and pork)
1/3 cup grated Parmesan
2 teaspoons Worcestershire sauce
2 large eggs, lightly beaten
1/2 cup ketchup
1 teaspoon dark brown sugar
1 teaspoon apple cider vinegar
1 pound frozen peas
2 tablespoons unsalted butter
Kosher salt and freshly ground black pepper
Unsalted butter, at room temperature, for serving
Coarsely ground black pepper, for serving

Steps:

  • Preheat the oven to 350 degrees F. Line a baking sheet with foil.
  • For the mashed potatoes: Poke each potato with a fork several times and microwave until soft, about 15 minutes (or use your microwave?s potato setting). Cool until you are able to handle them with a towel, about 2 minutes. Halve the potatoes and scoop out the flesh with a spoon and discard the skin. Mash the potatoes and butter in a medium bowl until smooth then fold in the sour cream, chives and 1 teaspoon salt until well combined. Set aside.
  • For the meatloaf: Toast the bread crumbs in a dry skillet over medium heat until browned and fragrant, about 1 minute. Transfer to a large mixing bowl and set aside. Add the oil, onions, garlic, oregano, 1/2 teaspoon salt and 1/2 teaspoon pepper to the skillet and cook, stirring, until onions are tender, about 8 minutes. Let cool slightly. Add the onion mixture to the bread crumbs along with the meatloaf mix, Parmesan and Worcestershire sauce. Toss and mix gently. Add the eggs and mix it completely into the meat mixture.
  • Transfer 1/2 of the meatloaf mixture to the prepared baking sheet and gently press into a 12- by-3-inch rectangle. Gently create a well down the middle of the meatloaf mixture with a 1/2-inch wall on all four sides. Spoon the mashed potato mixture into the well. Working with a quarter of the remaining meatloaf mixture, gently flatten the mixture with the palms of your hands. Lay the meatloaf mixture over 1/2 of the mashed potatoes. Repeat with the remaining meatloaf mixture ensuring the potatoes are completely enclosed.
  • For the glaze: Whisk together the ketchup, brown sugar and vinegar in a small bowl. Spoon the glaze evenly over the entire loaf.
  • Bake until an instant read thermometer registers 160 degrees F in the center of the loaf, about 45 minutes.
  • While the meatloaf is cooking, cook the peas according to package directions. Toss with the butter and season with salt and pepper. Keep warm.
  • Slice and serve the meatloaf with butter, black pepper and the peas.

1 1/2 pounds (8 to 10) Yukon Gold or other waxy potatoes, well scrubbed
3 slices (1 ounce each) white sandwich bread, torn into very small pieces
1 1/4 cups milk
1 1/2 pounds ground beef chuck
1 small onion, grated
2 garlic cloves, minced
1/2 cup flat-leaf parsley, finely chopped
1 large egg, lightly beaten
1 teaspoon dried thyme
1 teaspoon dried oregano
2 cups store-bought marinara sauce
Coarse salt and ground pepper
4 tablespoons (1/2 stick) butter

Steps:

  • Place racks in upper and lower thirds of oven; preheat oven to 375 degrees. With a fork, pierce potatoes in several places. Place on a rimmed baking sheet; bake on lower rack until tender, 45 to 55 minutes.
  • Meanwhile, in a small bowl, combine bread and 1/4 cup milk. In a large bowl, combine beef, onion, garlic, parsley, egg, thyme, oregano, 3/4 cup marinara sauce, 2 teaspoons coarse salt, 1/4 teaspoon pepper, and bread mixture. With a fork or your hands, mix very gently until just combined.
  • Transfer mixture to a rimmed baking sheet, and gently shape into a 9-by-5-inch loaf, about 2 1/2 inches thick. Bake on upper rack 30 minutes; then spread 1/4 cup marinara sauce over meatloaf, and continue to bake until an instant-read thermometer inserted in center registers 160 degrees. 25 to 30 minutes more. Let meatloaf rest on baking sheet, loosely covered with aluminum foil, 10 minutes.
  • While meatloaf rests, in a medium saucepan, bring butter and remaining 1 cup milk just to a boil. Add cooked potatoes and mash with a potato masher. Season with salt and pepper.
  • Remove meatloaf from baking sheet. Slice; serve with mashed potatoes and remaining cup marinara sauce (heated, if desired).

1 pound lean or extra lean ground beef
1 large egg
1 teaspoon onion powder
1 teaspoon garlic powder
1 teaspoon ground cumin
3 to 4 teaspoons smoked paprika
2 teaspoons salt
¼ cup puréed prunes (baby food, see notes)
12 small nugget potatoes
3 tablespoons butter
Small handful of chives, chopped or cut with scissors (about ¼ cup)
3 teaspoons salt, divided
½ cup pasata (puréed tomatoes)
1 tablespoon sugar or agave
1 tablespoon mustard
3 tablespoons white vinegar, divided
4 cups arugula, loosley packed
1 tablespoon olive oil
1 field cucumber
⅓ cup crumbled feta
Garnish (optional): cracked pepper, fresh parsley, lemon wedges

Steps:

  • Preheat broiler and move rack to top third of oven. Place a sheet pan in the oven.
  • In a medium bowl add the egg, onion powder, garlic powder, cumin, smoked paprika, salt, prunes and ground beef. Use hands to mix until just combined. Scoop mixture onto a piece of parchment and divide in half, then half again. Flatten the mince into four rectangles, 1 inch in thickness. Carefully remove sheet pan from oven, slide parchment with the meat loaf onto the pan and place In the oven. (Don't worry if oven is not fully preheated yet.) Set timer for ten minutes.
  • Potatoes: While meat is cooking, give the potatoes a quick wash, scrubbing off any small patches of dirt. Place them in a shallow, microwave safe bowl (like a small lasagna pan or glass pie plate). Cover with plastic wrap and microwave on high for 8 minutes. When done, add butter, 2 teaspoons of salt and chives. Mash with skins and then either scoop onto board or return to oven to keep warm until serving.
  • Sauce for meatloaf: whisk tomato sauce, 2 tablespoons of vinegar, sugar and mustard. At the ten minute mark, spoon over meat loaf and cook an additional 3 to 5 minutes, checking for doneness with a meat thermometer (the temperature should be 160℉).
  • Salad: In a small bowl toss arugula with olive oil, 1 teaspoon of salt and 1 tablespoon of vinegar. Using a mandoline, slice cucumber ¼ inch thick. Place arugula on board, top with cucumber and sprinkle with feta.
  • To assemble: Plate arugula on board and top with cucumbers. Scoop mashed potatoes onto remainder of board. slide meat on top of potatoes finish with freshly cracked pepper, parsley and lemon wedges.

Steps:

  • For the meatloaf: Preheat the oven to 350 degrees F. Grease a muffin pan with nonstick cooking spray.
  • Combine the cracker crumbs, oats and milk to soften in a medium bowl. Combine the ground chuck, ground pork, onions, milk, parsley, celery, ketchup, green peppers, Worcestershire sauce, salt, pepper, paprika, mustard, marjoram, thyme, seasoned salt and eggs in a large bowl. Add the oats mixture and mix well, but do not over-mix.
  • Portion the meat mixture into eight 8-ounce cupcakes and place into the prepared muffin pan. Smooth the tops of each portion. Bake until the internal temperature reaches 165 degrees F, about 30 minutes. Unmold and set on paper towels to absorb any additional liquid. (The meatloaf can also be cooked in a loaf pan.)
  • For the mashed potatoes: Peel the potatoes and cut into 1-inch pieces. Place in a pot covered with cold salted water and bring to a boil. Cook until the potatoes are fork tender, 15 to 20 minutes. Drain well. Place the potatoes, milk, sour cream and butter in a mixing bowl and mash until smooth. Season with salt and pepper.
  • For immediate enjoyment, using ice cream scoop, scoop the potatoes on top of a meatloaf cupcake. Serve with your favorite gravy.

2 rolls red fruit leather
2 rolls green fruit leather
1/2 cup dried pineapple

1 1/2 tablespoons cocoa powder
10 ounces marshmallows
2 cups vanilla ice cream or 2 cups yogurt
1 cup butterscotch topping or 1 cup caramel topping

Steps:

  • Coat a bread pan 5 by 9 inches with cooking spray and set it aside.
  • In a food processor, briefly pulse 6 cups of cocoa-flavored crisp rice cereal.
  • Tear or cut 2 rolls each of red and green fruit leather into small pieces.
  • Chop 1/2 cup of dried pineapple into small chunks.
  • Melt 2 tablespoons of butter in a large saucepan over low heat.
  • Add 1 1/2 tablespoons of unsweetened cocoa powder and stir until mixed.
  • Add a 10-ounce package of regular-size marshmallows and stir until they're completely melted.
  • Add the cereal, fruit leather, and pineapple pieces to the marshmallow mixture.
  • Stir quickly with a rubber spatula coated with cooking spray until well mixed.
  • If the mixture gets too sticky to stir, place it in a large bowl, coat your hands with butter, and mix it with your hands.
  • Press the mixture evenly into the prepared pan.

1 pound baking potatoes, peeled and sliced 1/2 inch thick

Steps:

  • Preheat oven to 450 degrees. In a food processor, chop carrots, celery, onion, and panko with egg white until smooth, about 1 minute. Transfer to a large bowl; mix in beef, 1 teaspoon salt, and 1/8 teaspoon pepper.
  • On a foil-lined baking sheet, form meat mixture into a 6-inch-long loaf; brush with half the barbecue sauce. Bake until an instant-read thermometer inserted in loaf registers 160 degrees, 25 to 30 minutes, brushing halfway through with remaining sauce.

  • Preheat oven to 450°F. Combine zucchini, peppers, and onions in medium bowl. Add oil and 1 tablespoon rosemary; toss to coat. Spread evenly on rimmed baking sheet; sprinkle with salt and pepper. Roast until vegetables are tender, about 25 minutes. Remove from oven; cool.
  • Preheat oven to 375°F. Mix ground beef, mozzarella, panko, basil, marjoram, 1 1/2 teaspoons salt, 1/2 teaspoon pepper, dried crushed pepper, 1 tablespoon rosemary, and 1 cup roasted vegetables in large bowl. Whisk 1/2 cup ketchup, eggs, and wine in medium bowl. Add to beef mixture; stir with wooden spoon until well incorporated; spoon into 9x5x3-inch loaf pan, forming rounded top.
  • Spoon 1/2 cup ketchup over top of loaf. Bake meatloaf until cooked through, juices run clear, and top is browned, about 1 hour 10 minutes. Remove pan from oven; let meatloaf rest 20 minutes.
  • Rewarm remaining vegetable mixture in large nonstick skillet. Turn meatloaf out; cut into 1-inch-thick slices. Top with warm roasted vegetable mixture; serve with mashed potatoes.
  • *Flaky panko crumbs are the best substitute for fresh breadcrumbs in almost anything, including meatloaf. Look for them in the Asian foods section of the supermarket and at Asian markets.

  • Prepare the glaze by mixing ketchup, brown sugar, onion powder, mustard powder, and paprika in a bowl. Reserve half in a separate bowl to glaze once cooked.

  • Generously brush half of the reserved glaze on top of the meatloaf cups generously.
  • Bake for 25 minutes, reapplying the glaze halfway through. Once they are done cooking, brush with the remaining glaze that has Not been used on the raw meatloaves.

Delicious Meatloaf with Buttermilk Mashed Potatoes image

A delicious Sunday meal for everyone who loves a good meat and potato meal.

For the meatloaf:
3 TBSP. olive oil
1 medium onion, minced
3 green onions, minced
1 medium celery rib, finely chopped (optional)
2 large eggs, lightly beaten
¼ cup milk
2 cups fresh bread crumbs (about 4 slices of bread)
2 TBSP. prepared horseradish
1 tsp. dry mustard
¼ cup ketchup
2 lbs. ground beef (chuck)
2 tsp. salt
½ tsp. freshly ground pepper
½ cup ketchup for topping
For the mashed potatoes:
3 pounds boiling potatoes, such as Yukon Gold
½ cup whole milk
4 oz. butter (1 stick)
¾ to 1 cup buttermilk, well-shaken
2 tsp. salt
½ teaspoon freshly ground black pepper

Steps:

  • To make the meatloaf: Preheat the oven to 375°F with a rack in the middle of the oven.
  • Heat a medium-sized skillet over medium heat. When the skillet is hot, add the olive oil and then the onions and the celery. Sauté the vegetables for about 8-10 minutes, or, until they are soft, stirring every so often. Remove from the heat to cool.
  • In a large bowl, combine the eggs, the milk and the bread crumbs. Add the horseradish, the dry mustard, the ¼ cup of ketchup, and the cooled vegetables. Stir well to combine. Next add the ground chuck, salt and pepper and mix everything together until all of the ingredients are evenly distributed.
  • Shape the meat mixture into a free-standing loaf and place it on a 13"x 9" rimmed baking pan, lined with parchment paper. Spread the ½ cup of ketchup evenly over the meatloaf and place it in the oven. Bake the meatloaf for an hour or until a meat thermometer inserted into the center of the meatloaf reads 160°F and the meatloaf is cooked through. Remove it from the oven and let it sit for 10 minutes.
  • Use a wide, metal spatula to lift the meatloaf gently out of the pan to a serving plate. Cut it into thick slices and serve.
  • To make the mashed potatoes: In a large pot, bring plenty of water to a boil. Add 1 tablespoon of salt. While the water boils, peel the potatoes and cut them into 1½-inch cubes. Add them to the boiling water and bring the water back to a boil. Lower the heat and simmer uncovered for 10 to 15 minutes, until the potatoes fall apart easily when pierced with a fork.
  • While the potatoes boil, heat the whole milk and the butter in a small saucepan, making sure it doesn't boil. Set aside until the potatoes are done.
  • As soon as the potatoes are tender, drain them in a colander. Place a food mill over a heatproof bowl. Pass the potatoes through the food mill, turning the handle back and forth. Alternatively, you can use a potato masher (these two methods of mashing potatoes produce the fluffiest mashed potatoes.
  • As soon as the potatoes are mashed, stir in the hot milk-and-butter mixture with a rubber spatula. Add enough buttermilk to make the potatoes creamy. Add the salt and the pepper, taste and adjust the seasoning. Serve hot.

2 eggs
1 cup 2% milk
1-3/4 cups soft bread crumbs
1/4 cup chopped onion
1 teaspoon salt
1/2 teaspoon rubbed sage
1/4 teaspoon pepper
1-1/2 pounds ground beef
1 envelope (7.6 ounces) butter and herb instant mashed potatoes
1 teaspoon prepared mustard
1/2 cup shredded cheddar cheese

Steps:

  • In a large bowl, combine the first seven ingredients. Crumble beef over mixture and mix well. Press onto the bottom and up the sides of an ungreased deep-dish 9-in. pie plate. , Bake at 350° for 35-40 minutes or until meat is no longer pink. Meanwhile, prepare mashed potatoes according to package directions; stir in mustard. , Drain meat loaf; spread potatoes over top. Sprinkle with cheese. Bake 3-5 minutes longer or until cheese is melted. Let stand for 5 minutes before cutting.
