MEATBALL PARM IN A BLANKET

Steps:
- Preheat the oven to 425 degrees F. Line a baking sheet with parchment paper.
- Unroll the dough onto a clean, lightly floured work surface. Slice the dough into 3 equal strips widthwise. Spread a thin layer of pizza sauce, about 2 tablespoons, onto each dough strip, making sure to leave a border without sauce. Sprinkle about 1/4 cup of the cheese onto each strip. Line up the meatballs side by side along the length of each dough strip. You should get about 10 meatballs per strip.
- Roll the dough up to cover the meatballs, forming a log. Slice the log in between each meatball, then pinch the dough together on one end of each sliced piece to seal. Put the pieces on the baking sheet pinched-side down (exposed meatball side up). Top each with about a teaspoon of sauce and a sprinkle of cheese.
- Bake until the dough is golden brown, 12 to 15 minutes. Let cool a few minutes before serving. Serve with warm pizza or marinara sauce on the side for dipping.
MEATBALL-STUFFED BISCUITS

- For the meatballs: Combine the breadcrumbs and milk in a large bowl and let sit for 5 minutes. Add the pork, Parmesan, salt, fennel seeds, garlic, onion, paprika, crushed red pepper, egg, parsley and a few turns of black pepper and mix to combine. It's easiest to do this with your hands. Form into 16 balls, each about 1 1/2 inches in diameter.
- Heat a thin layer of oil in a skillet over medium-high heat and cook the meatballs in batches, turning occasionally, until browned on all sides, about 8 minutes. Set aside to cool slightly.
- For the biscuits: Preheat the oven to 375 degrees F.
- Flatten each biscuit with your palm, add a half piece of mozzarella and top with a meatball. Pinch the edges of the dough around each meatball to seal. Place seam-side down in a 9-inch square baking dish. Bake until lightly browned, about 30 minutes.
- Meanwhile, heat the butter and oil in a small saucepan over medium-low heat. Add the garlic and crushed red pepper and cook for 2 minutes.
- When the biscuits have baked for 30 minutes, brush them with the butter mixture, sprinkle with the parsley, Parmesan and some flaky salt and continue to bake until golden and cooked through, 5 to 10 more minutes. Let cool slightly and serve with warm marinara for dipping.

- Preheat oven to 400°F (200°C).
- Add the oil to a pan on medium-high heat and cook the onions and garlic until deeply caramelized.
- Mix in tomato sauce, tomato paste, red pepper flakes, dried basil and oregano. Bring to a simmer for 5 minutes.
- Add pre-cooked meatballs and coat them with sauce. Remove sauce from heat.
- Roll out three rectangles of puff pastry. One should be 16-inches (41 cm) long, one 22-inches (56 cm) long and the third, 28-inches (71 cm) long. All three should be about 6-inches (15 cm) wide.
- Sprinkle the shredded mozzarella cheese in a line across the bottom of each strip, then place meatballs on top in a line about 1-inch (2 cm) apart from each other.
- Roll pastry over the meatballs. Then take the smallest roll and wrap it around a small oven safe bowl placed on top of a baking sheet. Make sure the ends of the pastry meet and pat together to connect.
- Take a knife and press down the puff pastry between each meatball creating a small opening on either side of the puff pastry. Make a small cut between each meatball just below the top of the puff pastry so that the roll is still connected.
- Repeat this step again with the medium roll and largest roll, wrapping them around each other.
- Add marinara sauce to the oven safe bowl.
- Brush egg wash over the entire ring and sprinkle the shredded parmesan cheese on top. Cover sauce with foil.
- Bake for 25 minutes.
- Serve warm.

PHYLLO WRAPPED MEATBALLS
I received this recipe from a great friend. It's quick, easy, and always a hit a parties. The size and wrapping make these perfect to pick up and eat while you mingle with the crowd. They are kid-friendly too, my 3-year-olds and 5-year old just love them.

- Method.
- In a big bowl, combine ground beef, blue cheese, dried tomatoes, sauteed onion, seasoning blend, salt and pepper. Mix thoroughly with hands. Form into about 1-inch diameter balls. Fry all the balls in a pan with 1 teaspoons olive oil until thoroughly cooked through. Drain. Cut phyllo dough sheets into 2-inch squares. Place one meatball on each square and fold up corners, then twist the top for a decorative look. Do this for each meatball. Brush each appetizer with melted butter. Place all the phyllo appetizers on a cookie sheet and bake about 15 minutes (or until golden brown) in a 350 degree oven.
- To prepare dipping sauce: Mix packet of French onion soup mix with sour cream and stir thoroughly.

- Let dough stand at room temperature until softened, 25-30 minutes., Cut each roll in half. Wrap each portion around a meatball, enclosing meatball completely; pinch dough firmly to seal. Place on greased baking sheets, seam side down. Cover with kitchen towel; let rise in a warm place until almost doubled, 1-1/2 to 2 hours., Preheat oven to 350°. MEATBALLS WRAPPED IN DOUGH!
This is a delicious recipe. You can use your own recipe or use frozen Italian meatballs. Addictive so make extras the kids will be back for meatball snacks.

- 1. You can use store bought meatballs or you can make your own. All the former ingredients are to taste. You can use just lean ground beef and no pork it is up to you.
- 2. mix all the meat and mix well add the eggs, bread crumbs milk garlic and oregano
- 3. cut the string cheese into 1/2 inch cubes and mix into the meat mixture.
- 4. roll the meatballs and broil for 5 to 7 minutes. take out of oven and let them cool. on your cutting board take and open the rolls preheat your oven according to the package of rolls. put a meatball on top of a roll and mold around the meatball until covered put the seam side down. Do this to all meatballs and sprinkle with garlic to taste. Bake according to directions on the can and serve with you favorite Italian meal.
- 5. I add melted butter with garlic and when they are done using a pastry brush I brush the finished rolls with melted butter and sprinkle with your favorite cheese. Yummy!

Steps:
- Thaw meatballs. On an ungreased baking sheet, separate crescent rolls iinto 8 pieces. Cut each piece in half to form 2 narrow triangles.
- Place a meatball onto each crescent triangle; pull up corners of roll, wrapping the meatball.
- Bake at 375 degrees for 11-13 minutes.
- If desired, sprinkle cheese on wraps while still warm.
- Serve with pasta sauce for dipping.
