- Preheat oven to 325 degrees F (165 degrees C). Grease baking sheets or line with parchment paper.
- Sift flour, matcha, baking soda, and salt together in a bowl. Beat brown sugar, butter, and white sugar together in a large bowl using an electric mixer until blended; beat in vanilla extract, egg, and egg yolk until light and creamy.
- Mix flour mixture into creamed butter mixture until dough is just blended; fold in chocolate chips using a wooden spoon. Drop cookie dough, 1 heaping tablespoon per cookie, onto the prepared baking sheet 2 to 3 inches apart.
- Bake in the preheated oven until edges are lightly browned, 8 to 10 minutes. Cool cookies on the baking sheet for 2 to 3 minutes before transferring to a wire rack to cool completely.

- Preheat oven to 375 degrees farenheit.
- Combine the soy milk, lemon juice, and vanilla in a bowl and whisk together. Set aside for 5 minutes to thicken.
- In a separate mixing bowl, combine the flour and baking soda. Then, sift in the matcha powder.
- Melt the canola oil and agave nectar.
- Pour in the soy milk mixture and stir together. Slowly add in the dry ingredients and combine.
- Stir in a half a cup of chocolate chips.
- Spoon the batter to a muffin pan with liners, about 2/3 full. Sprinkle with remaining chocolate chips. Bake for 20 minutes.

Steps:
- First, mix the butter, white sugar and brown sugar together in a stand mixer on medium. Gradually increase the speed until evenly mixed.
- Add the flour, baking powder, baking soda, salt and matcha powder.
- Mix in the egg and vanilla extract, gradually lower your mixer speed setting until everything is evenly incorporated and you get a dough like texture.
- Add white chocolate chips and mix in evenly.
- Portion the dough out onto a baking tray. We love our cookies bite sized, so we weighed out about 0.35 oz (10g) of dough per cookie and shaped them into a ball.
- Preheat the oven to 320F (160C) and bake for 10 minutes.
- Allow to cool for 5-10 minutes and enjoy!
