This delicious side dish recipe is perfect for Thanksgiving or any special occasion. It features a luscious mix of sweet potatoes, white cheddar cheese, red apples, whipping cream, and fresh thyme.

3 pound sweet potatoes (about 7 medium)
0.25 cup butter
1 teaspoon kosher salt or salt
3 ounce aged white cheddar cheese, shredded
0.25 cup bourbon or orange juice
0.25 cup whipping cream
0.25 cup packed dark brown sugar
1 large red onion, cut into thin wedges
2 medium red apples, cored and cut into wedges
2 teaspoon snipped fresh thyme
0.25 teaspoon ground black pepper

Steps:

  • Preheat oven to 425 degrees F. Scrub potatoes and prick with fork; place on foil-lined baking sheet. Bake 40 minutes or until tender. Reduce oven temperature to 325 degrees F.
  • When potatoes are cool enough to handle, scrape pulp from skin. Transfer to bowl. Mash with 2 tablespoons of the butter and 3/4 teaspoon of the salt. Stir in cheese, bourbon, cream, and 2 tablespoons of the brown sugar. Transfer to buttered 1-1/2-quart casserole. Cover; bake 30 minutes or until heated through.
  • Meanwhile, in microwave-safe 2-quart casserole combine remaining butter, brown sugar, and salt. Add onion. Microcook on 100% power (high), for 3 to 4 minutes or until onion is crisp-tender. Add apples. Cover and microcook 2 minutes more or until apple is tender. Stir in thyme and pepper. Serve with sweet potatoes. Serves 8.

3 1/2 pounds red potatoes, washed well and quartered
Kosher salt
1 stick butter, cut into pieces
3 shallots, minced
1 cup whole milk
Freshly ground pepper
1/4 cup sour cream
2 cups shredded extra-sharp white Cheddar (7 ounces)

Steps:

  • Add the potatoes to a large pot and cover with cold water. Add a large pinch of salt. Bring to a boil, reduce to a simmer, and cook until tender, about 25 minutes. Drain well in a colander.
  • Add the butter, shallot and milk to the same pot the potatoes were cooked in and heat until the butter is melted and hot; season well with salt and pepper. Remove from the heat.
  • Add the potatoes to the hot milk and butter mixture. Add the sour cream. Using a potato masher, mash the potatoes until semi-smooth. Add the cheese and stir until the cheese is incorporated. Adjust the seasoning as necessary.

3 pounds red or white potatoes, peeled and cut into large dice
Kosher salt
2 bay leaves
3/4 cup heavy cream
1/2 cup sour cream
7 tablespoons salted butter
1/2 teaspoon dried thyme
1/4 teaspoon ground nutmeg
Freshly cracked black pepper
Two 15-ounce cans sweet potato puree, such as Farmer's Market Organic brand
1/4 cup fresh flat-leaf parsley, chopped

Steps:

  • Place the potatoes in a large stockpot and cover with water. Generously season the water with salt. Add the bay leaves and place over high heat. Cover, bring to a boil, lower the heat and simmer until the potatoes are tender enough to smash with a fork, 25 to 35 minutes. Drain the potatoes and discard the bay leaves. Return the potatoes to the pot and add the heavy cream, sour cream and 4 tablespoons of the butter. Smash with a potato masher until smooth. Add the thyme, nutmeg and 1/2 teaspoon each salt and pepper. Stir to combine.
  • Place the sweet potato puree in a pot over medium-high heat. Cover and heat until warmed through, about 4 minutes.
  • When ready to serve, mound a third of the white potatoes in the center of a serving bowl. Next, mound a third of the sweet potatoes on top of the white potatoes. Repeat this process, alternating between the vegetables, to make white and orange circles. Swirl together to create a marbled effect showing both colors.
  • In a small pot, melt the remaining 3 tablespoons butter. Combine the butter and parsley. Pour over the potatoes and serve immediately.

Steps:

  • Preheat oven to 375°F Place white and sweet potatoes in separate bowls.

3 pounds medium russet potatoes, peeled and quartered
3/4 pound Vermont aged white Cheddar, grated
1/2 teaspoon baking powder
1 teaspoon kosher salt
Black pepper, to taste
Small pinch cayenne
Pinch of grated nutmeg
6 tablespoons unsalted butter, melted
3/4 cup heavy cream, heated
2 eggs, lightly beaten

Steps:

  • Boil potatoes in well-salted water until tender, about 15 minutes. Drain well in a colander and place in the bowl of a stand mixer with a wire whisk attachment. Beat at medium speed for 2 to 3 minutes to allow steam to escape.
  • Turn off mixer and add cheese, baking powder, salt, pepper, cayenne and nutmeg. Beat again for a minute or so.
