MASHED POTATOES
As a meat and potatoes kind of guy, mashed potatoes is my favorite side dish. I've been making this for years, and it's the main thing I'm asked to make for family gatherings. These mashed potatoes are better than any I've ever found anywhere

Steps:
- Peel, cut up and boil potatoes until tender.
- Drain water and put potatoes in a mixing bowl.
- Add margarine, sour cream and milk.
- Use an electric mixer and mix until desired consistency.
- The KEY here is to add salt and pepper to taste.
- You might add anywhere from a teaspoon to several tablespoons of salt, just depending on how much you like salt.
- Pepper is the same way, although use it more sparingly.
- Just remember to add a little at a time, until you get it where you like it.
- Once that is done, I usually put a couple of pats of margarine on top of the finished potatoes to let it melt.
- Then sprinkle parsley over it.
- This will make the best mashed potatoes I've ever found anywhere.

CREAMY MASHED POTATOES
Steps:
- Peel the potatoes and cut into uniform 1/2-inch pieces. Place into a 4-quart saucepan and cover with cold water by at least 1-inch. Cover, set over high heat and bring to a boil. Once boiling, remove the lid, decrease the heat to maintain a simmer and cook until the potatoes can easily be crushed with a pair of tongs, approximately 15 to 20 minutes. Drain in a colander.
- Put the cream, butter, salt and pepper into the now empty 4-quart saucepan and place back over the heat until the butter has melted. Remove from the heat and set a food mill fitted with the smallest die, on top of the pot. Add 1 cup of potatoes at a time to the mill. Once all of the potatoes have passed through the mill, stir to combine. Taste and adjust the seasoning, if necessary. Serve immediately.

- Bring a pot of salted water to a boil. Add potatoes and cook until tender but still firm, about 15 minutes; drain.
- In a small saucepan heat butter and milk over low heat until butter is melted. Using a potato masher or electric beater, slowly blend milk mixture into potatoes until smooth and creamy. Season with salt and pepper to taste.

WORLD'S BEST MASHED POTATOES
I attended a Boy Scout pot luck with my son several years ago and was introduced to these heavenly potatoes. The Scout leader was kind enough to share. It is a recipe that is hard to mess up but yet is delightful enough to serve at a formal dinner party. We seldom have leftovers and when we do my family fights over who gets to eat them. It is an easy recipe to decrease or increase depending on the needs of your family.

Steps:
- Place peeled and cubed potatoes into a medium size saucepan.
- Cover with water,place on stove and cook on medium heat until fork tender, approximately 10 to 15 minutes depending on the size of cubes and type of potato.
- Remove from heat and drain any remaining water.
- Place potatoes into mixing bowl.
- Add butter and start to whip potatoes with mixer set on 7 or 8.
- Add sour cream slowly and whip until smooth and creamy.
- (The amount of sour cream may vary depending on the type of potato used, Yukon gold uses all, some other softer potatoes do not need all of the sour cream.) Pour potatoes into a cassole dish sprayed with cooking spray.
- Top with as much cheese as desired.
- Bake at 350 for approximately 20 minutes or until cheese bubbles and edges start to brown.
- Remove from oven and let sit for five minutes.
- If you are serving a meat that has a gravy, then leave off the cheese but still bake the potatoes until bubbly.

- In a large stockpot, boil potatoes with salt until tender--about 15 minutes.
- Drain water and add remaining ingredients.
- Mash until smooth (I like to leave at least a few lumps, call me weird).
- Serve with gravy or butter.
- Note: You can easily turn this recipe into garlic mashed potatoes by adding 3 cloves roasted garlic when you mash.
- For another tasty variation, try adding shredded cheddar and cooked broccoli pieces.

- Place the potatoes into a large pot, and cover with salted water. Bring to a boil, reduce heat to medium-low, cover, and simmer until tender, 20 to 25 minutes. Drain, and return the potatoes to the pot. Turn heat to high, and allow the potatoes to dry for about 30 seconds. Turn off the heat.
- Mash the potatoes with a potato masher twice around the pot, then add the butter and milk. Continue to mash until smooth and fluffy. Whisk in the salt and black pepper until evenly distributed, about 15 seconds.

MASHED POTATOES

- In a large saucepan, combine the potatoes, 1 teaspoon salt, and enough cold water to cover. Bring to a boil over high heat. Do not cover. Lower the heat to maintain a simmer and cook until fork tender, about 45 minutes.
- Drain the potatoes and return them to the pan. Swirl the pan over medium heat until the skins are dry, about 1 minute. Halve the potatoes crosswise. Put the halves in a ricer cut-side down and press the potato through the ricer into a bowl. The flesh should easily pass through the holes and the skins remain in the ricer. Discard the skin, and repeat with the remaining potatoes. (Alternatively, peel the cooked potatoes and put through a food mill or mash with a hand-held potato masher.)
- Heat the butter and milk in the saucepan over medium-high heat until hot but not boiling. Add the nutmeg, if desired, stir into the potatoes. Season with salt and pepper, to taste. Serve immediately.

MASHED POTATOES
Steps:
- Add the potatoes to a large pot of cold water. Season with salt and bring to a boil. Simmer until tender, about 15 minutes.
- Heat the olive oil in a large pot. Add the onions and saute until tender and just golden. Add the milk to heat and season with salt and pepper.
- Drain the potatoes well in a colander. Add them back to the pot you cooked them in and mash until smooth. Fold in the hot milk and onions, extra-virgin olive oil and chopped parsley.

- Put potatoes in a large saucepan; add cold water to cover and 1/2 teaspoon salt.
- Bring to boil and continue to cook over medium heat until potatoes are tender when pierced with a knife, 15 to 20 minutes.
- Be careful not to overcook potatoes you plan to mash, because the starch cells will break down and create a sticky mash.
- Cook them just until a thin-bladed knife meets a bit of resistance.
- It is also important to drain the potatoes well after cooking to prevent gumminess.
- Drain potatoes well and return pan to low heat to dry thoroughly.
- Using a ricer, rice potatoes into pan.
- With a wooden spoon blend in butter, then warm milk or half-and-half.
- Season with 1/4 teaspoon salt and a big pinch of black pepper, or to taste.
- Serve immediately.
MOE'S FABULOUS MASHED POTATOES
These are, hands down, the best mashed potatoes I have ever had -- and so very easy to make. You can also use soy milk and non-dairy butter for vegans. I make a side batch vegan-style for my brother and his friends, and they say it tastes great.
