Crispy fish & chips with mushy peas image

Make this take-away classic in your kitchen, healthier than your local chippy and just as tasty

400g baking potato
2 tsp olive oil
2 slices white bread
2 white fish fillets, such as haddock, hoki, pollock
1 tbsp plain flour , seasoned
1 egg , beaten
140g frozen pea with mint
2 tbsp crème fraîche

Steps:

  • Heat oven to 200C/fan 180C/gas 4. Peel and chop the potatoes into thick chips, then toss with the olive oil and some salt. Arrange on a large non-stick baking tray and roast for 20 mins, turning halfway.
  • Lightly toast the bread, then pulse briefly in a food processor for coarse breadcrumbs. Dust the fish in flour, shaking off the excess, then dip into the egg, then breadcrumbs to coat thoroughly. Roast the fish with the chips for a further 20 mins, until both are golden.
  • Just before the fish and chips are ready, boil the peas for 3-4 mins, then drain and mash. Stir in the crème fraiche and season.

1/2 teaspoon salt
2 tablespoons butter
2 tablespoons milk

Steps:

  • In a medium saucepan, bring frozen peas, 1/4 cup water, and salt to a boil; reduce heat, and simmer, covered, over low heat until peas are tender and the liquid has evaporated, about 5 to 7 minutes. Remove from heat.
  • Transfer 1 1/2 cups cooked peas to a food processor, and add butter and milk. Puree until smooth. Fold pureed mixture into the remaining cooked peas, and serve.

  • Bring a shallow pot of lightly salted water to a boil over medium-high heat. Add frozen peas, and cook for 3 minutes, or until tender.
  • Drain peas, and transfer to a blender or large food processor. Add cream, butter, salt and pepper to peas, and process until blended, but still thick with small pieces of peas. Adjust seasonings to taste, and serve immediately.

Mushy peas are the perfect accompaniment for fish and chips! This classic British dish is made from dried marrowfat peas.

8 ounces dried Marrowfat peas
2 tablespoon baking soda (if not included in package of peas)
2 tablespoons butter
1-2 tablespoons chopped fresh mint (optional)
Salt/pepper-to taste

Steps:

  • Place the peas in a large bowl or pan, add the baking soda and cover with 2 cups of boiling water. Stir well to dissolve the baking soda and allow the peas to soak 12-hours or overnight.
  • Drain the peas and rinse under cold water. Repeat for a second rinse.
  • Place the rinsed peas in a saucepan and cover with cold water. Over medium-high heat bring the peas to a boil, then reduce the heat to low and simmer for 25-30 minutes until soft, tender and mushy. (See Note #2)
  • Stir the peas or mash to desired texture, then stir in the butter and mint if using.
  • Add salt and pepper to taste.

1 tablespoon unsalted butter, at room temperature, for greasing the baking dish
1 tablespoon unsalted butter, at room temperature

4 pounds russet potatoes, peeled, cut into 1-inch pieces
1 1/2 cups grated mozzarella
1 cup whole milk, at room temperature
3/4 cup freshly grated Parmesan
1/2 cup (1 stick) unsalted butter, melted
Freshly ground black pepper
2 tablespoons unsalted butter, at room temperature
2 cups frozen peas, thawed
1/2 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
1/2 cup freshly grated Parmesan
2 tablespoons plain dry breadcrumbs
Extra-virgin olive oil, for drizzling

Steps:

  • Preheat the oven to 400 degrees F. Butter a 13- by 9- by 2-inch baking dish. Set aside.
  • For the potatoes: In a large saucepan, combine the butter, salt and potatoes. Add enough cold water to cover the potatoes by 1 inch. Bring to a boil over medium-high heat. Boil until the potatoes are very tender, about 15 minutes. Drain the potatoes and return them to the same pot. Using a potato masher, mash the potatoes until smooth. Mix in the mozzarella, milk, Parmesan and butter. Season with salt and pepper. Transfer the potatoes to the prepared baking dish.
  • For the peas: In a medium skillet, melt the butter over medium heat. Add the thawed peas and cook until heated through. Add the salt and pepper.
  • Using a large spoon, make a 4-inch well in the center of the potatoes and fill with the cooked peas.
  • For the topping: Stir the cheese and breadcrumbs in a small bowl to blend. Sprinkle the breadcrumb mixture over the mashed potatoes (can be prepared up to this point 6 hours ahead of time; cover and chill).
  • Drizzle the top with olive oil and bake until the topping is golden brown, about 20 minutes.

4 garlic cloves, mashed
250ml (1 cup) soy vegetable cooking cream (I used Alpro Cuisine Soya)
4 Tbsps olive oil
fresh dill, chopped (add as much as you like, I tend to add a lot of fresh herbs to my meals, but this is just a personal preference)
some fresh thyme, to taste
1 tsp garlic powder
1 tsp onion powder
100g (½ cup) crispy fried onions
salt and pepper, to taste

Steps:

  • Heat the oil in a large pan. Add the mashed garlic and green peas. Mix well. Add 1/4 glass of water and let it cook with the lid on for 10 minutes. Add the herbs, seasonings, and soy vegetable cooking cream. Mix well. Cook for 5 more minutes or until soft (it may take a bit longer if you don't let the frozen peas thaw beforehand; Also the brand of frozen peas I use is pre-blanched, very young, and fine peas, which means shorter cooking time, so adapt accordingly.) Once cooked, turn off the heat. Add the crispy fried onions and mix.

3/8 teaspoon salt

Steps:

  • Bring chicken stock to a boil.
  • Add all other ingredients.
  • Cover and cook over a medium heat for 12-15 minutes or until the peas are soft.
  • Mash pea mixture or puree them in a blender.
  • Return the puree to a pot and simmer to rewarm.

1 (16 ounce) package frozen peas
1 bunch fresh mint leaves
1 bunch green onions, chopped
2 tablespoons butter
2 tablespoons brown sugar
salt and pepper to taste

Steps:

  • Heat the olive oil in a skillet, and cook and stir the frozen peas, mint leaves, and green onions until the peas are hot and tender but still bright green, 7 to 10 minutes. Pour the peas into a bowl, and mash until the peas are thoroughly crushed but still slightly chunky. Stir in the butter, brown sugar, and salt and pepper, and mix until the sugar has dissolved. Mushy peas are the traditional accompaniment to authentic British fish and chips. In the UK they would be traditionally made using marrowfat peas, but this version uses much more readily available dried split green peas.

2 cups dried split green peas
1 tablespoon baking soda
Salt
2 tablespoons unsalted butter, at room temperature
Fish and chips, for serving

Steps:

  • Put the split green peas in a large pot with the baking soda and enough water to cover the peas four times over. Cover and allow to rehydrate in the fridge overnight.
  • Drain the peas in a colander and rinse with cold water to remove any lingering baking soda.
  • Return the peas to the pan and cover with cold water by 1/2-inch. Add some salt, bring to a boil and then reduce the heat to a simmer. During the simmering, discard any pea foam that forms on top using a slotted spoon. The peas are done cooking once they just lose their bite, 30 to 40 minutes. Overcooking results in soup, which isn't what we're going for.
  • Remove from the heat, add the butter and stir to fully incorporate. Taste and add more salt if required.
  • Serve immediately with fish and chips, or cool and store for up to 3 days.
