Steps:
- Combine water and milk in a saucepan and bring to a boil.
- Add cinnamon, cardamom pods, sugar and coffee into boiling liquid in saucepan.
- Stir a few times and boil over medium heat 3 to 4 minutes.
- Make sure it does not boil over.
- Strain coffee through cheesecloth into another pan.
- Place coffee over heat and bring to a boil.
- Pour coffee between two pans until thick and creamy.
- Serve in cups immediately.

- Stir in the spices, cover, and simmer over low heat for 5 minutes.
- Stir in the pre-brewed coffee.
- Meanwhile, in a saucepan, heat milk until almost boiling.
- Strain the coffee through a fine mesh strainer covered with cheesecloth into the milk.
- Add sweetener, stir, and serve in mugs.

- In a saucepan, bring the water to a boil, and stir in the cumin seeds, star anise pod, and cinnamon stick; reduce heat to a simmer, and cook for 3 minutes, stirring occasionally. Stir in the instant coffee, and allow the drink to simmer gently for 2 more minutes. Pour the drink into mugs, straining out the spices, and stir 1 teaspoon of nonfat dry milk powder and 1 teaspoon of white sugar into each mug.

MOROCCAN SPICED COFFEE
Tea often comes to mind when people think of Morocco, but the Moroccans also love coffee. This version is very milky and sweet, with only a mild coffee taste but some interesting spices you might not have thought to put with coffee. They use a tall, fairly narrow, coffee pot and Mohammed, who taught me how to make this, stressed the importance of letting the milk heat until it froths and rises up in the pot. Surprisingly, it did not burn as I had expected, knowing how easily milk can scald, although I would keep an eye on your milk just to make sure. Also, the Moroccans drink this very sweet, saying lots of sugar brings out the spices. Add sugar to your taste.

- Put everything except the sugar in a coffee pot and heat over a gas flame.
- Keep on the heat for 3-4 minutes until the milk froths and rises up in the pot.
- Take off the heat and add sugar to your taste, remembering that sugar brings out the flavour of the spices.

CINNAMON SPICED COFFEE
This is a delicious cinnamon spiced coffee. Other ingredients added are... dark brown sugar and vanilla extract. Optional garnishings are...Cool Whip and ground cinnamon. Cooking time in making this coffee may vary. It all depends upon one's coffee maker. Mine is an older model, so it takes 15 minutes for me to brew this coffee.

- Place coffee and cinnamon in filter in brewing basket.
- Carefully stir the coffee grounds and cinnamon.
- Insert brewing basket to coffee maker.
- To the coffee pot, add the brown sugar and vanilla extract.
- To the coffee maker, add the cold water, then place in coffee maker.
- Turn on your coffee maker.
- When coffee is done brewing, stir coffee in coffee pot; to dissolve the brown sugar.
- Serve coffee in cup or mug with a dollop of Cool Whip, and a sprinkle of cinnamon (if desired).
- This makes: 6 and 3/4 cups of coffee.
- Note: The first few times I made this coffee, I used Gevalia Hazelnut, and the second time I used Folgers French Vanilla (for variety). I did make this in an 8 cup coffee maker, which does end up making 9-(3/4 cups of coffee each).
- Also, the first time I made this coffee, I only used 1/4 cup of the ground coffee, as I didn't want very strong coffee, and this still tasted great. I also only added 2 teaspoons of the vanilla extract. I found adding the extract helps to make this coffee taste a bit smoother, and even better.
- By the way, some people may think the teaspoon of the cinnamon is a bit much, but not if you add milk to your coffee. I did make this once only adding 3/4 tsp of the cinnamon, but I've found I much prefer this recipe using one measuring teaspoonful.
KONA SPICED COFFEE
