When we lived in Ontario and Nova Scotia, we'd go to East Side Mario's two to three times per month, mostly for the free salad and bread. I LOVE their dressing, and since we moved to Manitoba, I have been looking for a copycat of that dressing. This is pretty close. I found the basic recipe on another site, and modified it slightly

Steps:
- Combine all in a measuring cup, and mix with an immersion blender.
- Pour into a container and refrigerate.
- The longer it sits, the better it gets.
- Prep time is cooking time.
- To make this truly authentic, make the salad with iceberg lettuce, rounds of red onion, hot pickled peppers (we don't like them, but the salad comes with two), croutons and oodles of grated parm cheese- the fresh stuff, not out of a can.

EDDIE JACKSON'S MASON JAR SALAD AND SALAD DRESSING

- For Eddie's salad dressing: Put the parsley, olive oil, vinegar, honey, basil, oregano, tarragon, garlic and some salt and pepper in a food processor and puree until smooth.
- For the mason jar salad: Start by placing 1 to 2 tablespoons of the salad dressing (or any amount you desire) in the bottom of a 16-ounce mason jar. Next, build the salad by placing the proteins--the chicken and garbanzo beans--in the jar first. After that, layer the remaining ingredients in the jar (try color coordinating for presentation): the red onion, zucchini, carrot, cucumber, bell pepper, pumpkin seeds and feta. Finish by packing the lettuce and kale on top. Seal and refrigerate.
- To serve, flip over on a bowl or plate, mix everything together and dig in.
SOUTHERN BUTTERMILK SALAD DRESSING
This recipe comes from a spring holiday dinner party that Mark Bittman and Sam Sifton prepared in Charleston, S.C. They used this dressing on a blend of kale, mustard greens and collards for a springtime salad.

- Spoon the mustard into a bowl and slowly whisk in the oil with a small whisk. Gradually add the vinegar and 1 tsp of water to make a creamy looking dressing. Season with the sugar and a generous pinch of salt. Will keep in a sealed jar for up to a month, but must be whisked again before serving.

CARMEN JACKSON'S SALAD DRESSING
I have fond memories of this. Even though I'm 63 I can still taste it. Mama would grab the glass bottle of ketchup, add cider vinegar, oil, smashed cloves of garlic stuck on a toothpick, add salt and pepper and shake. She never measured and it was alway perfect. She would halve an avocado and fill the cavity with it. She also put it over canned peaches and pears with cottage cheese. I am approximating the measurements. Hope you give it a try. T.J.

- Lacking a 50 year old Heinz glass ketchup bottle put all the ingredients in a jar, skewer the garlic cloves on a toothpick and shake.
- Adust vinegar and oil to your taste.
