MARGARITA BURGER RECIPE BY TASTY
We took everything you love about a margarita and turned it into a burger. The spicy black bean patty is made with cilantro, jalapeño, and fresh scallions. Paired with homemade tequila-pickled vegetables provide a tangy crunch, while creamy guacamole and queso panela help cool things off. We brush store-bought burger buns with egg wash, sprinkle with coarse sea salt, and toast in the oven for a finishing touch.

Steps:
- Make the tequila pickles: In a large, high-walled skillet, heat the olive oil over medium heat. Add the carrots, jalapeño, onion, and garlic and sauté, stirring constantly, until the vegetables start to become tender but do not change color, about 3 minutes. Transfer the vegetables to a 16-ounce airtight, heat-proof container.
- Return the pan to medium heat and add the tequila, white vinegar, bay leaf, black peppercorn, oregano, sugar, and salt. Bring to a boil and cook until reduced by ⅓, about 2 minutes. Pour the mixture over the vegetables and let sit for 10 minutes. Add the ice to the container and stir until completely melted. Cover and refrigerate until ready to use. The pickles can be made up to 1 week ahead.
- Make the guacamole: In a large bowl, combine the lime juice, garlic, and Fresno chile. Let sit at room temperature for 10 minutes. Add the avocados and salt and use a fork to mash together. Cover with plastic wrap, pressing directly against the surface of the guacamole. Refrigerate until ready to use.
- Make the black bean burgers: Preheat the oven to 375°F (190°C).
- Add the black beans to a large bowl and use a potato masher to break down the beans until semi-smooth, with some beans left whole for texture. Add the panko bread crumbs, cilantro, scallions, jalapeño, salt, cumin, paprika, and eggs. Stir with a wooden spoon to combine. Shape the mixture into 4 patties. Place the patties on a plate and refrigerate for 30 minutes.
- Meanwhile, place the intact burger buns on a baking sheet. Brush the top of each bun with the beaten egg, then top with the sea salt. Transfer to the oven and bake until the egg wash turns golden brown, about 5 minutes.
- Heat a large skillet over medium-high heat. Add the olive oil, then place the black bean patties in the pan in a single layer, working in batches if needed to avoid overcrowding. Cook until the patties begin to turn golden brown, about 3 minutes per side.
- Assemble the burgers: Open the buns and spoon guacamole onto each bottom bun, spreading to cover completely. Place 2 slices of queso panela over the guacamole and top with a burger patty, followed by tequila pickles. Place the top bun on top. Serve with classic margaritas.

- Roll 2 of the limes on a cutting board to help release the juice. Cut the limes in half and juice them using a citrus press, straining the seeds out if necessary. This should yield approximately 1 ounce of fresh lime juice.
- Add the cubed ice to a tall shaker.
- Add the tequila, lime juice, simple syrup, Ocean Spray 100% Juice Cranberry, and Triple sec and shake vigorously for 30 seconds.
- Place the kosher salt in a small dish. Cut the remaining lime into quarter wedges.
- Using one wedge, run the lime around the edge of 2 rocks glasses. Dip the glasses in the salt to make a salted rim.
- Fill the glasses with fresh ice and strain the contents of the shaker over the fresh ice into the glasses.
- Serve with the remaining lime wedges and enjoy!

- Make the pickled red onions: In a small pot, combine the water, apple cider vinegar, salt, sugar, peppercorns, and coriander seeds, and bring to a boil over medium-high heat, stirring until the sugar dissolves.
- Turn off the heat and add the sliced onion, making sure they are fully submerged. Let cool to room temperature for 30 minutes before serving.
- Make the Thousand Island Dressing: In a medium bowl, whisk together the mayonnaise, ketchup, pickles, garlic, and vinegar.
- In a large bowl, season the ground beef generously with salt and pepper. Use your hands to mix until evenly combined.
- Divide the beef into 4 8-ounce portions and form into patties. Place on a cutting board. Use your thumb to press a divot into the center of each burger.
- Heat the grapeseed oil in a cast iron or stainless steel skillet over medium-high heat until nearly smoking. Add the burger patties and cook for 3-4 minutes, without disturbing, until browned.
- Use a spatula to flip the burgers over and place a slice of cheddar on each one. Cook for another 3-4 minutes, until the burgers are cooked through and cheese has melted.

MARGARITA TART
Simple tart made with margarita mix containing no tequila. The tart dough is based on one from Cooks Illustrated.

Steps:
- For the tart shell:.
- In a food processor, process the flour, salt (1/4 teaspoon extra is used because of the nature of the filling, for any other sweet tart application, this would be 1/2 teaspoon), and sugar. Add the shortening and butter and process the mixture until there are no visible butter chunks left, approximately 8-10 long pulses.
- In a small bowl, whisk together the egg yolk and water. Set aside.
- Place the flour mixture into a large bowl and add the egg yolk mixture. Mix together with a spatula until it comes together. Place dough in plastic wrap and refrigerate for 1/2 hour.
- Roll out tart dough between two pieces of plastic wrap or press evenly into a 9 inch tart pan or ring. Make sure the sides are not too thin and that the bottom meets the sides at a 90 degree angle (so there is not a lot of dough in the corners where the bottom meets the sides). Roll the rolling pin over the top of the tart pan to clean any dough off of the rim.
- Place the tart shell in the freezer for at least 1/2 hour.
- Preheat oven to 375°F.
- Remove the tart shell from the freezer and press two sheets of aluminum foil across the tart pan. Press the foil into the pan so that it is form fitting and no dough rim is exposed. Dock the foil and dough with a fork only a few times. Place pie weights, dry beans or rice into the tart pan.
- Place the tart pan on a baking sheet and bake the tart shell for 10 minutes, rotate pan and bake for 10 more minutes. Remove tart shell from oven, remove the pie weights and foil and place the tart shell back in the oven for 10 more minutes.
- For the tart filling:.
- While the dough is in the oven, in a large bowl, whisk the 4 egg yolks, sweetened condensed milk, and margarita mix.
- Pour the mixture into the hot tart shell and return to the oven. Turn the heat down to 350°F.
- Bake for 15 minutes. Remove and cool.
- Serve chilled.
